Riesling is a white wine grape which originated in Germany’s Rhine region. The grape is a floral grape variety that gives off perfumed aromas. Riesling can be used to create anything from sparkling wines to sweet ice wines. The variety is one of the top wines in line with Chardonnay or Sauvignon Blanc. In the mid 2000s, Riesling was one of the most popular varieties grown in Germany and in France. There are also many vineyards grown over Europe, New Zealand, South Africa, and China. The Riesling grape variety dates back to the 15th century under the term Rieblinge, but the term Riesling was first adopted in 1552 in documents. The wine variety is said to be a crossing of wild vines from the Rhine region, and DNA evidence shows that Riesling is actually related to Gouais Blanc. The grape variety is tender and has to be harvest carefully so the grapes are not crushed or bruised. Riesling pairs easily with food because of its moderate amount of sugar and acidity. The wine pairs nicely with foods that are spicy or have strong flavors and also goes well with pork and white fish.

Matheus Piesporter Goldtropfchen Riesling Kabinett is made from 100 percent Riesling.
This Goldtröpfchen ranks as an unofficial "Grand Cru" delivering light floral and fresh Kabinett style wines.
Their later harvest wines, Spatlese and Auslese, tend toward apricot flavors, honeyed notes and superb intensity. All grapes are grown on Devonian slate.

Good friends and good wine make this funny world go ‘round, right? Without those friends letting us buy some of their precious Riesling, we couldn’t make this delicious wine. Even if we did have to beg. A little.
We are using some really great vineyard sites to make this wine, and they are as diverse as they are excellent. Preserving the inherent “riesling-ness” is as important here as making this sparkle, so we’ve been extra careful to be clean, true, and simple with this. Native yeast ferments and minimal handling with fastidious cleanliness make this an absolute natural wonder. A small dosage of organic sugar kicks off the bottle ferment to make it sparkle.
This smells like apples, pears, apricot, and the sea. Not kidding. The palate is fizzy, fun, and fresh with an appley bite and pear - almond lushness. All angles and elbows, the lees and sediment widen the palate with pleasing breadth.

Prager Smaragd Klaus Riesling is made from 100 percent Riesling.
Franz Prager, co-founder of the Vinea Wachau, had already earned a reputation for his wines when Toni Bodenstein married into the family. Bodenstein’s passion for biodiversity and old terraces, coupled with brilliant winemaking, places Prager in the highest echelon of Austrian producers.
Smaragd is a designation of ripeness for dry wines used exclusively by members of the Vinea Wachau. The wines must have minimum alcohol of 12.5%. The grapes are hand-harvested, typically in October and November, and are sent directly to press where they spontaneously ferment in stainless-steel tanks.
Klaus sits adjacent to Achleiten and is one of the Wachau’s most famous vineyards for Riesling. The vineyard is incredibly steep with a gradient of 77% at its steepest point. The southeast-facing terraced vineyard of dark migmatite-amphibolite and paragneiss produces a tightly wound and powerful wine. The parcel belonging to Toni Bodenstein was planted in 1952.

Austrian Riesling is often defined by elevated levels of dry extract thanks to a lengthy ripening period and freshness due to dramatic temperature swings between day and night. “Klaus is not a charming Riesling,” says Toni Bodenstein with a wink. Klaus is Prager’s most assertive and robust Riesling.
Food Pairing
Riesling’s high acidity makes it one of the most versatile wines at the table. Riesling can be used to cut the fattiness of foods such as pork or sausages and can tame some saltiness. Conversely, it can highlight foods such as fish or vegetables in the same way a squeeze of lemon or a vinaigrette might.

It’s full-bodied and deep, but so cool and delicate, packing in sleek layers of honeysuckle, apricots, lemons and grapefruit married to thyme and crushed rock. My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Our Sauvignon Blanc is grown in our estate Mary’s Vineyard in Calistoga, containing some of the oldest Sauvignon Blanc plantings in Napa Valley at more than 30 years old. The old vines offer concentration and complimentary young vines add vibrance, and a small amount of Semillon from the estate adds a roundness to the wine.
Every step of the winemaking process is designed to heighten the natural aromatics, flavor and vibrant acidity of Sauvignon Blanc: each lot of fruit is chilled, then whole-cluster pressed over two hours with 23 check-ins to isolate exactly the press of juice we want.
With its intense aromatics, vibrant fruit and bright acidity, this Sauvignon Blanc is refreshing and offers concentration, complexity and long finish that make it enjoyable on its own, interesting from first sip to last, as well as an ideal complement to food.
Suggested pairings: fresh oysters, lemon-herb roasted chicken and goat cheese salad.
