Orin Swift Abstract Red is made from  Grenache, Petite Sirah and Syrah.

The 2022 Abstract pours a dark purple core with a neon, ruby rim. The nose is quintessential Abstract but with a broodier twist-notes of ripe black plum, cacao, black pepper, cedar, dried porcini, forest floor musk and sweet oak. The entry is coating and flooding with hints of blueberry preserves, tarragon, balsamic glaze and anise. Bright and lifting through the palate, the finish offers an umami note akin to eggplant yakitori.

MATURATION Aged eight months in French Oak, 31% New ALC/VOL 15.3%

A barrel fermented, old vines Verdejo made in a style different from what we typically see in this white varietal. It has a remarkable complexity, resulting in the smoothness and depth of a high-end white. Very suitable for cellaring.

Golden yellow color with greenish reflections. Complex, toasty aromas of nuts & dried fruit. Large, creamy, spicy, balanced and voluminous.

Rice with fish, cooked seafood, grilled seafood, baked white fish.

"The eponymous 2020 Ossian was produced with Verdejo grapes from old, organically farmed vines around the village of Nieva (Segovia), a zone where phylloxera didn't reach. They consider 2020 their finest vintage to date, with a big change from 2018 and when they have achieved a much better understanding of their vineyards. It has notes of pit fruit and sweet spices, with good weight on the palate, moderate alcohol (13.5%) and ripeness and good freshness and balance. This Cabernet Franc is black cherry red in color with aromas of blueberry jam and white pepper spiciness. With wonderful ripeness we were able to make one of our best Cabernet Francs. The wine is very lush across the palate with a silky softness and sweet impression of ripe blueberry fruit. Tannins are very moderate with a nice light texture in the mid palate. This is an easy drinking Cabernet Franc, rich and complete and very enjoyable.

Paradigm Cabernet Franc is made from 85% Cabernet Franc & 15% Cabernet Sauvignon

Paradigm Cabernet Sauvignon is made from 90% Cabernet Sauvignon, 8% Merlot, 1% Petit Verdot, 1% Cabernet Franc

Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

The 2015 vintage produced delicious concentrated wines in smaller quantity than normal. This black raspberry colored Cabernet has lovely open aromatics of black cherry, berry, and plum layered with a perfect balance of new and used French Oak.

Patricia Raquin Bourgogne Rouge Fut de Chene is made of 100 percent Chardonnay. 

The animals shown on the label are dogs, from the breed called Borzoi, or "Russian Wolfhound", which means "fast" in Russian. Patricia and Alain Corcia are the proud owners of 2 Borzois and they designed the label to represent the dogs as the guardians of the vaulted ageing cellar inside their house.

The wine is produced from 100% Pinot Noir grapes grown on gravel and silt soils, aged in French oak barrels. Medium to full bodied, earthy, fruity and mineral. Structure and tannin on the finish. The wine pairs well with any hearty red meats and cheeses.

Patricia Raquin Santenay 1er Cru Beaurepaire is made from 100 percent Chardonnay.

Tasting Notes

Rich and complex, black cherry, confectionary strawberry and dusty rose waft up from the glass. An expressive palate follows with juicy black cherry and pomegranate alongside notes of tropical mango and coconut in a slightly gamey, smoky finish.

This balanced wine has one of my favorite aromas of all time—the caramel and brioche-like cookie scents of a Stroopwafel cookie. These divine scents are joined by red cherries and chalkboard dust. Piper-Heidsieck Rare Brut Champagne  is made from 70% Chardonnay, 30% Pinot Noir.

The effervescence of Rare Millésime 2013 is tinged with an intensely bright, light golden color. The nose, at first subtle and clean, emerges in two stages combining tonicity and elegance. It all begins with the delicacy of white flowers, a hint of black tea and touches of citrus, kiwi and kumquat. Then, notes of lime blossom, green tea and fern give way to aromas of white fruits such as greengage plums. Touches of chestnut honey, sweet spices, vanilla and marzipan round off the wine's rich bouquet. The two facets of Rare Millésime 2013 are confirmed in the mouth: smooth and vibrant, indulgent and dynamic. After hints of meringue, whipped cream and marzipan, kumquat, blood orange and kiwi then provide a refreshing tonicity. On the finish, the comforting texture of Rare Millésime 2013 appears as an aromatic and smoky indulgence punctuated by a freshness and a subtle bitterness. Rare Champagne's iconic signature of tropic minerality is expressed differently in Rare Millésime 2013, extended by a plump and prolonged aftertaste.

Originally a part of the legendary Piper-Heidsieck Champagne house, Rare is moving their Champagne Millésime to a new brand and want it to stand alone. (Think Delamotte and Salon.) The 13th vintage for this cuvée, the 2013 Champagne Millésime is a blend is 70% Chardonnay with the rest Pinot Noir, with the majority of the blend coming from the Montagne de Reims Grand Cru and Premier Cru. A bright yellow hue, its aromatics are exquisite and well-balanced, with fresh notes of key lime, candied apple, fresh croissant dough, fresh pineapple, and honeysuckle. Medium to full-bodied, it fills the palate with a rounded and supple texture and a pillowy mousse. It’s long on the palate and has a silky personality as well as a long, pristine finish. It has fantastic balance of decadence and freshness, and I could drink this all day. It’s going to have a long drinking window. Drink 2024-2044 and beyond. Disgorged December 2022.

 Like a stallion out of the gate, this shows an initial explosion of power, in the form of mouthwatering flavors and fine texture, before quickly settling into an elegant gait. The racy acidity is seamlessly knit, buoying the lacy mousse and flavors of cassis, toasted brioche and tangerine, with accents of candied ginger, hazelnut and fleur de sel lingering on the long, creamy finish.

The 2022 Post & Beam Cabernet Sauvignon displays seductive aromas of briar patch and plum sauce on the nose before leading onto a palate that is well-structured yet elegant.
