Matthews Cabernet Sauvignon Columbia Valley is made from 76% Cabernet Sauvignon, 15%Merlot, 6% Cabernet Franc, 2% Petit Verdot, 1% Malbec.

The 2021 Columbia Valley Cabernet Sauvignon is deep ruby in the glass with purple hues. The rich bouquet of spiced black plum and cocoa nib are balanced with aromas of fresh earth and crushed flint. Intense and opulent flavors of ripe blackberry, cedar, mocha, and black currant coat the broad and balanced palate and the ripe tannin creates a perfect frame for the lush fruit expression. Cherry cordial and cola linger on the long, quenching finish.

A wonderfully balanced Cabernet with tremendous purity of fruit and a brilliant freshness. A blend of sites across the Columbia Valley focused on the Horse Heaven Hills, Red Mountain and Royal Slope. Smoky violet notes and crushed stone follow graphite minerality and dusty berries. The palate is delightfully distinguished. Cabernet and savoury herbs mingle with red berries, black brambles, and a brilliant mineral tone.

Coming out strong out of the gate, the 2021 ‘Columbia Valley’ Cabernet Sauvignon is nearly all varietal. Dark chocolate shavings, baking spices and anise come together on the nose. The palate is beautifully balanced with a seamless texture and great sense of weight, with heady roasted date and black currant flavors. Generous and rich, this is a gorgeous showing from 2021. This is a serious value to purchase by the case.

Morambro Creek Cabernet is 100 percent Cabernet

Winemaking at Morambro Creek is very traditional and labour intensive. Oak maturation takes place using 35% new French barrels. This blend was put together using select barrels from our family  estate that best demonstrate the intensity of our fruit balanced by integrated oak.

"From the small Padthaway region three hours' drive east of Adelaide, this is a full-bodied Cab that, despite the region's warm climate, avoids being bombastic. The nose feels Christmasy: baking spices laced with purple beets, dried mint and red berries. Mordoree Chateauneuf du Pape Rouge Dame Voyageuse is made from Grenache 90 % Mourvèdre 4% Syrah 4 % Counoise 1% Vaccarese 1% .

Mordoree Chateauneuf du Pape Rouge Dame Voyageuse is a more approachable version of the La Reine des Bois. It is meant to be enjoyable early compared to her sister Cuvée which is made for the long run.

"Moving to the 2019s from bottle, the Grenache-heavy 2019 Châteauneuf Du Pape La Dame Voyageuse offers a beautiful array of both red and black fruits as well as classic Provençal notes of lavender, peppery garrigue, and flowers. Rich, medium to full-bodied, and beautifully textured on the palate, this is another terrific vintage for this cuvée, which remains an incredible value in the market today. It will drink nicely for 10-12 years if stored correctly."

Deep ruby ​​red, opaque. Aromas of red fruits, mocha, touches of leather, black truffles and coffee. Fat, very concentrated and full flavored, with an infinitely long liquoriced and fruity finish.

Pairs well with red meats, sauce dishes, game animals (woodcock, wild boar) and semi mature cheeses.

"Lastly, and a tiny production cuvée based on 100% Grenache brought up in new barrels, the 2019 Châteauneuf Du Pape La Plume Du Peintre reveals a saturated, almost inky purple color as well as a mammoth-sized bouquet of black currants, bloody meats, lead pencil, tobacco, chocolate, and crushed stone, it nevertheless has notable purity, a full-bodied, layered, seamless texture, no hard edges, and a thrilling finish that offers more and more minerality. with time in the glass. You don't see wines like this often today, but this is a singular, heavenly Grenache that's going to need 4-5 years of bottle age and live for 30-40 years if stored correctly given its concentration, structure, and purity. Mordoree Chateauneuf-du-Pape La Reine des Bois is made from Grenache 75 %,  Mourvèdre 10%,  Syrah 10 % , Counoise 3% &  Vaccarese 2%.

This premium cuvee - whose name means "Queen of the Woods" - is from 65-year-old vines, planted on Villafranchian-era terrasses. Yield is 30 hl/ha.

Deep ruby red; opaque. Aromas of red fruits change to wooden touches of leather, black truffles and coffee. Fat, concentrated and full flavored with a very long liquoriced and fruity finish.

"The 2019 Châteauneuf Du Pape Cuvée De La Reine des Bois is a deeper, more masculine wine with gorgeous cassis and blackberry fruits as well as graphite, licorice, crushed stone, violets, and lavender nuances. Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.

Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. The 2017 'Mon Chevalier' is rich, deep and unctuous, with all the character that makes wines from this site so exciting. Graphite, inky blue/purplish fruit, spice and lavender infuse the 2017 with tremendous complexity. In the glass, the 2017 is savory, rich and expansive, not to mention hugely appealing.

Review: 

The 2018 Cabernet Sauvignon Mon Chevalier comes from the Knights Valley, just north of Napa Valley in the larger Sonoma County, and it always seems to me to have one foot in Napa and one foot in Sonoma. Boasting a similar ruby/purple color (as do all of the releases here), it’s slightly more reserved and stately (knightly, if you will), with building aromas and flavors of blackcurrants, toasted bread, dried violets, baking spices, and loamy earth. These carry to a pure, full-bodied, multi-dimensional Cabernet that’s flawlessly balanced, has ripe yet certainly present tannins, a notable sense of minerality, and a great, great finish. It’s just another incredible wine from Luc Morlet that can be drunk today with ample pleasure or cellared for 20-30 years if, for some reason, you feel the need to delay gratification.

Mt Monster Cabernet Sauvignon is 100 percent Cabernet

Winemaking: Our Cabernet is fermeneted in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.

Tasting notes: Deep purple in colour. Classic aromas of lifted blackcurrant, blackberry and mint on the nose. Flavours follow through of sweet berry-fruit accented by fresh muddled mint. Elegant, structured palate with big velvety tannins.

Murray Cabernet Sauvignon Red Mountain is made from 78% Cabernet Sauvignon, 10%, Merlot , 6% Malbec, 6%, Petit Verdot.

A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.
As much as possible, winemakers Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.

They age in the oak barrels until they are ready to bottle.Neutral Oak 52%, New Oak 48% (American 57%, Hungarian 15%, French 14%, European 14%).
After primary fermentation, all wines are pressed directly into 59 gallon oak barrels. Aging for 19 months.
