The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

Moving to the top releases, the 2016 Cabernet Sauvignon Mon Chevalier comes from Knights Valley and was brought up in puncheons. A gorgeous bouquet of sandalwood, violets, loamy earth, and incense as well as some iron-laced black and blue fruits flow to a rounded, supple, incredibly textured Cabernet that has sweet tannins, a stacked mid-palate, and a great finish. The 2017 'Mon Chevalier' is rich, deep and unctuous, with all the character that makes wines from this site so exciting. Graphite, inky blue/purplish fruit, spice and lavender infuse the 2017 with tremendous complexity. In the glass, the 2017 is savory, rich and expansive, not to mention hugely appealing.

Winemaking: Our Cabernet is fermeneted in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.

The 2018 growing season kicked off in late February and eased into a mild spring that gave us extended flowering and uniform clusters throughout the vineyard. Summer continued with an even trend, with consistent temperatures allowing fruit to have beautiful, extended hang time. With no heat spikes we were able to wait patiently for every cluster to achieve perfect phenolic maturity. A no rush approach to harvest allowed fruit to develop beautifully on the vine and the Cabernet came into the winery with mature tannins, great acidity and perfect ripeness. This vintage was “near picture-perfect,” and the resulting wines are generous yet structured and expand on the palate.

Pure Cabernet magic on the nose, with deep blackcurrants, smoked tobacco, lead pencil, and a kiss of spring flowers as well as a beautiful Pessac-Leognan-like scorched earth character, it hits the palate with full-bodied richness, silky tannins, no hard edges, and a great, great finish. It's one of those wines that builds incrementally on the palate and it's only after the second or third sip that you realize how special this wine is. We are pleased to bring you for the first time a stunning vineyard, planted high above the valley floor between Rutherford and Pritchard Hill by the Bettinellis, the Lowrey Vineyard. The Homestead piece faces the old 19th century home of the land’s first resident, one Mister Lowrey. Thorn Clarke Terra Barossa Shiraz is made from 100 percent Shiraz
Deep purple red. Aromas of ripe plums, cherries and earth with subtle notes of vanilla and cloves. The aromas follow through onto the palate with a fruit focus, subtle oak notes and soft, rounded tannins. The wine walks the line between medium and full bodied with a plush mouthfeel.
The grapes are crushed and de-stemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Cooling is used to ensure ferment temperatures remain in the 22-25 degree celcius range which will allow the fruit to display maximum fruit expression. Pressing then occurs approximately seven days after crushing and the wine is then put into predominately American oak to mature.
