Siegel San Elias Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
Fresh and delicate cassis tones, a great structure. Draw the cork half an hour before serving and serve at room temperature.
Smooth and fruity on the palate, the wine goes well with pasta, salads.
Siegel San Elias Carmenere is made from 100 percent Carmenere.
The nose shows beautiful red and dark fruit aromas, earthy notes and violets with balanced acidity. Supple and round in the mouth, juicy tannins, good concentration.
The wine pairs well with full flavored cheeses and lamb.
Siegel San Elias Chardonnay is made from 100 percent Chardonnay.
This Chardonnay has a light yellow color with green highlights. The nose shows fresh and intense tropical fruit aromas of pineapple, citrus, herbs and a touch of honey. On the palate it is lush, smooth and well-balanced with good acidity and lovely tropical fruit flavors.
Siegel San Elias Sauvignon Blanc is made from 100 percent Sauvignon Blanc
Pale in color with a goosberry bouquet, apple and citrus fruits aromas, and fresh zesty flavor.
Excellent aperitif or with salads, fish and poultry.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!
Paradigm Cabernet Sauvignon is made from 96% Cabernet Sauvignon, 3% Merlot , 1% Petit Verdot

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.
Deep ruby red color.
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality.
The finish is long, clean and juicy and offers some white pepper spiciness typical of the best Crozes-Hermitage.
Soil type is red brittle granite and white soil.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed).
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.
