Beliere Bugey-Cerdon is made from 95% Gamay, 5% Poulsard (a local grape from Jura).
Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation.
This is also wonderful served with chocolate cake!

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Brize Clos Medecin Anjou Villages Rouge is made from 60% Cabernet Franc and 40% Cabernet Sauvignon.
This is the flagship of the Estate. Clos Medecin has been produced at the estate for 90 years. All the grapes for this wine come from a very special parcel. The wine offers red fruit aromas. It is fresh, round and ample in the mouth.
Cazaux Vacqueyras Cuvee des Templiers is a blend of 50% Syrah, 50% Grenache.
The Syrah vines are situated on the sandy, grey clay slopes of Vacqueyras near the estate. They are facing east west, so the sun warms the grapes early in the morning allowing a considerable synthesis of sugars. The sandy soil is poor giving a reduced yield. The resulting wine is very fruity with strong persistent aromas of red fruits, spices and violets brought by the Syrah. Intense black cherry, blackberry, blueberry and cherry flavors. Explosive fruit tannins give the sweet, creamy flavors structure and focus, bright and uplifting on the finish.
Enjoy this wine when young with grilled beef and bearnaise sauce, lamb and thyme. After 7-10 years excellent with game meats.

Vineyard Notes
The Poetry Vineyard, carved into a steep west-facing hillside, reaches from the highest elevations of the Stags Leap District appellation to the valley floor. This vineyard draws its uniqueness from shallow, volcanic soils atop fractured shale. Due to the stressful nature of the site, planted with high vine density and farmed to very low yields, the vines develop slowly and produce small flavorful berries. The vineyard is planted to legendary, proprietary heritage selections of Cabernet Sauvignon.
Production Notes
In the cool darkness of night, grapes were hand-picked into twenty-five-pound bins to minimize crushing. By early morning, the grapes were subjected to rigorous selection by our three-tiered sorting process, which includes our cutting-edge optical sorter and a slow, individual berry hand sort. Whole berries were gently delivered by gravity to tank by our unique crane system, which kept the berries intact. Cold soaks lasted from five to eight days, and fermentations were managed through a combination of pump overs and délestage. Extended maceration of up to six weeks ensured exceptional extraction and fine-tuning of tannin profiles.
Winemaker Notes
There is an effortlessness and ease to the 2021 Poetry that springs from the continuity and familiarity of its caretakers and the experience of the vines themselves as their roots dig deep into the shallow unforgiving terraces of rock and rhyolitic crevices. Wafts of warm summer mulberries, fractured rock, and violet perfume envelop the glass. Wild blackberry preserves form the flavor on the entry and combine with tantalizing, black truffle, sea salt, and steak au poivre juices. Clos des Cazaux Gigondas Le Souiras is 100% Grenache.
“Le Souiras” is the terroir located at the very South end of the Gigondas appellation. Here, in the midst of the Dentelles de Montmirail, an extraordinary calcareous massif, we planted grapevines on slopes surrounded by Mediterranean vegetation.
We are situated at an altitude of 250 meters, where the nights are cooler. The terroir is stony with a layer of grey and blue clay under the topsoil. The slopes face West and are protected from the strong summer sun by the Montmirail hill. Due to this ideal microclimate, our old Grenache grapevines contain all the complexity and balance of this sunny terroir.
Color : Dark intense ruby color.
Bouquet : Notes of little red fruits, white pepper, caramel and juniper.
Palate : The first impression is arresting and generally qualified as round, complex and dense.
The aromas of black cherry, mocha and white pepper are very intense. The palate is powerful, elegant and velvety.
The finish is long, with very silky tannins and a very slight bitterness that gives this exceptional Grenache an impression of freshness.

Clos du Val Estate Cabernet Sauvignon is made from 6% Cabernet Sauvignon, 7% Merlot, 5% Malbec and 1% each Cabernet Franc and Petit Verdot.
This fresh and vibrant Napa Valley Cabernet Sauvignon is brimming with aromas of blackberry, mulberry, cassis, and violet. On the palate, bright flavors of cranberry, red plum, cherry, and lavender are intertwined with supple tannins, balanced acidity, and a long, smooth finish.

Louis Roederer Cristal Vinotheque Edition Brut Millesime 1997 is made from Pinot noir (62%) and Chardonnay (38%).
Color
A bright and shimmering golden color, animated by an ultra-fine and swirling effervescence.
Nose
The bouquet is pure, precise and complex, mixing aromas of white flowers, almond, honey and nougat. Upon aeration, notes of red fruits and smoke are revealed, followed by warm and caramelized nuances reminiscent of macaroon, baked apples and tarte tatin.
Palate
Indulgent and velvety, the palate is rich while maintaining a great freshness thanks to a delicate effervescence. The flavors of candied Corsican citron stretch out on a finish marked by a chalky, powdery and iodized freshness, offering a dense texture and a serene length.

The vineyard

The wine
Cristal Vinothèque 1997 is made from three great vineyards known as "La Rivière", "La Montagne" and "La Côte".
The vintage
The spring of 1997, mild at first, was marked by an early bud break followed by severe frosts in April that damaged the vineyards of Verzenay and Verzy. After an early flowering in June, the rainy and cold weather until August favored the development of mildew and rot. Fortunately, the return of warm and sunny weather in August and September saved the vintage, with harvests taking place under radiant sunshine from September 15 to October 1.
Vinification and aging
Vinification is carried out in wood to the extent of 6%. Malolactic fermentation (16%). The cuvée was aged for 15 years on lees, 5 years on points and benefited from a rest of 4 years after disgorging. The dosage of this 1997 vintage champagne is 8 g/liter.

Intense nose of preserved lemons, salted yellow plums, walnuts, toast, salted caramel, roasted chestnuts and dried pineapple. Beautiful and complex, from 15 years, 5 years en pointe, before disgorgement in 2018. Delicious, salty toffee character. Soft, silky bubbles. Long and powerful. Thought-provoking. Unique. Will be launched in September 2022. Drink on release or hold.
