Bavencoff Bourgogne Blanc is made from 100 percent Chardonnay.

This Bourgogne Chardonnay is fresh and bright. The aromas are expressive with Honeysuckle, Broom and Mushroom. A nice balance between the acidity and the fruitiness, complementing the minerality. It will drink well during its youth but will gain some extra aromatic complexity after a few month in the cellar.

Very pleasant as an aperitif. Our Bourgogne Chardonnay also goes very well with cold meats, fish, grilled and marinated vegetables as well as goat cheese.

Wine was slightly filtered before bottling.
100% Malolactic fermentation done.
Aged 14 months. 80%of the wine was aged in Stainless steel tanks with 20% was aged in French Oak barriques (228 liter barrels).

Bavencoff Meursault Blanc is made from 100 percent Chardonnay.

Clear golden and green robe. Meursault shows a green golden color, leaning towards bronze as it ages. Limpid and brilliant, it exhibits silver highlights. The young wine is redolent of toasted almonds and hazelnuts in a floral and mineral (flint) setting. Butter, honey, and citrus fruits are also present. On the palate it is rich and ample with a nice balance between freshness and smooth nutty flavors. .

Aged in French oak barrels (50% new).

Noble and fine-textured fish or meat, blue cheeses and foie gras.

Bavencoff Montagny Blanc is made from 100 percent Chardonnay.

This Montagny presents a typical robe of a Burgundy Chardonnay: A pale yellow color with discreet green reflections. The color will change to golden yellow with age. On the nose, it develops delicate honey and vanilla aromas. On the palate, this wine is full-bodied, it offers a slightly oily texture typical of the great whites of Burgundy, rich and fresh flavors (vanilla, honey, golden apple, toast). The finish is long and mineral.

This wine goes perfectly with veal in sauce, scallops in butter and herbs, and most fish. Also to drink with hard mountain cheeses: Comté, Beaufort.

Beliere Bugey-Cerdon  is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation. 
This is also wonderful served with chocolate cake! 
8% ABV.

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Bella Union by Far Niente Napa Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 15% Merlot, 5% Malbec, 2% Cabernet Franc, 1% Petit Verdot.

The 2021 Bella Union Napa Valley Cabernet possesses beautiful and intriguing aromas of dark plum, black cherry, hints of clove and barrel spice. The palate is well-structured with velvety tannins complemented by generous layers of fruit flavors of blackberry, fig, and raspberry preserves that give way to a melting finish.

With small percentages of Merlot, Cabernet Franc, Malbec, and Petit Verdot, this exquisitely aromatic and textural Cabernet begins with a perfume of crushed violets and black cherry. Concentrated flavors of blackberry liqueur, vanilla, and sandalwood flow across chewy, velvet- lined tannins.

Belle Glos Las Alturas Vineyard Pinot Noir is made from 100 percent Pinot Noir. 

Deep garnet in color with an aromatic medley of black cherry, marionberry, ripe plum and a hint of anise. Dark fruit on the palate with flavors of wild berries, caramelized oak and cacao nibs complemented by subtle notes of vanilla, cedar and a hint of lavender and forest floor. Rich and unrestrained, this wine’s abundant fruit is beautifully balanced by firm acidity and layers of red and black fruit.

Review:

  Deep and dark aromas of black cherry, sandalwood and incense make for a heady nose on this bottling. The palate is big and bold, loaded with ripe black cherry and boysenberry flavors, as peppery, incense-like spices add complexity and the texture stays lusciously creamy.
