Hoopla Cabernet Sauvignon AVA California is made from 83% Cabernet Sauvignon, 8% Petite Sirah, 4% Merlot, 3% Petit Verdot, 2% Malbec . 

Our California Cabernet is a nod to Dante. Dedicating this wine, from the king of grapes, to our original boss just made sense to us. Like any king worth his salt, Dante was sure of his alpha status in the pack. Spencer didn’t even have to pat the passenger seat before he’d jump up and claim ‘shotgun!’ Lindsay was a good sport about sitting in the back. Like Dante, this Cabernet was born and raised here with true California pedigree. It is a luscious, juicy, fruit-centric wine, with a whimsical and punchy mouthfeel, layered with flavors of baking spices and clove. A pleasure to drink easily, anytime, with food or without!

This generous Cabernet Sauvignon has a deep, inky purple color and is very ripe with blackberry and blueberry fruit. The palate is very concentrated with deep plum and pomegranate flavors which include some panaforte spices. Though the wine is very concentrated, it is balanced with acidity and its oak profile while ample is integrated. Overall the wine finishes ripe with black cherry, cassis and spices, very supple and silky and long on the finish.

This wine pairs very well with a gourmet burger, eggplant Moussaka or a wild boar Ragu with Fettuccine and foraged mushrooms with shaved Reggiano Parmesan.

Morlet Family Vineyards Mon Chevalier Cabernet Sauvignon is made from 94% Cabernet Sauvignon 6% Cabernet Franc .

Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.

Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. Built to age for decades, this collectible wine opens up after a few years of cellaring and is particularly representative of this special vineyard from the hillside of Knights Valley. Mon Chevalier features the interaction of the loamy, well drained and rocky volcanic soil, the typical sunny mountain climate and the low-interventionistic Morlet winemaking approach.

Review: 

The 2017 'Mon Chevalier' is rich, deep and unctuous, with all the character that makes wines from this site so exciting. Graphite, inky blue/purplish fruit, spice and lavender infuse the 2017 with tremendous complexity. In the glass, the 2017 is savory, rich and expansive, not to mention hugely appealing.

Poggio San Polo Podernovi Brunello di Montalcino is made from Sangiovese. 

Intense ruby red in color with garnet hues, clear and glossy. The bouquet exhibits typical aromas of violets and small red berries. Subtle nuances of forest undergrowth, aromatic wood, a touch of vanilla and jammy mixed fruit then give way to subtle hints of coffee. This Brunello is intense, persistent, broad and heady. Full-bodied and warm on the palate, with a densely-woven texture and robust body, it has a persistent finish with well-rounded tannins. The particular features of the terroir at San Polo produce a Brunello with a capacity for lengthy aging, while patient cellaring enhances the wine during ageing in the bottle.

Review:

Lovely purity of fruit with ultra fine tannins and depth, finesse and complexity. Black cherries, cedar and some flowers. It’s full-bodied with very fine tannins that drive the finish. Give it a year or two to open more, but already so enticing. Drink or hold.

The San Polo 2015 Brunello di Montalcino Riserva (with 8,000 bottles produced) is a textured wine with hearty fruit and touches of smoked meat and spice. At its core, the wine offers dark fruit, blackberry and ripe plum. The rich fruitiness of the wine cedes to campfire ash, mahogany and furniture wax. These results are sultry and even a bit flashy, with distant background tones of teriyaki and plum sauce. The wine is fermented in cylindrical oak fermenters and aged in oak for three years. We'll see this bottle hitting the market sometime after February 2021.

The 2021 Quilceda Creek Cabernet Sauvignon is a wine for the ages. Potent aromas jump out of the glass, showing framboise candy, black tea, and a strong classic note of sandalwood. The nose is beyond alluring with toasted walnut and gorgeous purple rose petals that combine with boysenberry cordial, Turkish coffee and shades of dark licorice. The crazy complex aromatics bring you back to the glass for more enjoyment. Pillowy and opulent on the mouth, the seamless texture leads alongside outstanding weight and finesse. Rutherford Ranch Reserve Cabernet Sauvignon

The base for our Reserve Cabernet is from the world-renowned Rutherford appellation, which is home to our Abela and Franklin estate vineyards. Perfect climatic conditions and the region’s deep, loamy, well-drained soils produce dark, intensely flavored Cabernet Sauvignon grapes. This Reserve Cabernet Sauvignon is a beautiful complement to ribeye steak, rack of lamb or mushroom risotto.

A flint and gunpowder nose leads to bold graphite, blueberry and tobacco flavors in this full-bodied wine that is laced with a high level of fine-grained tannins. The 2020 Cabernet is a shining example of how delicious, elegant and beautiful our Cabernet can be. The aromas of ripe plum, black cherry and stone fruits entice the nose. The wine is beautifully structured with a soft, velvety feel on the palate. The soft, subtle tannins make it seem that you are drinking a more mature wine. The hint of spice integrated with dark stone fruits segue into a long, lingering and enticing mouthfeel. This vintage is not one to miss, it’s approachable now and destined to be off the charts in years to come

Lastly, the 2020 Cabernet Sauvignon Shibumi Knoll Vineyard is all varietal and spent 22 months in 75% new barrels. It's another beautifully balanced and impeccably made wine from this team that has tons to love, and in this case, it certainly represents a relative value as well. Cassis, darker chocolate, scorched earth, and graphite are just some of its aromatics, and it's concentrated and has full-bodied richness, fine tannins, and the pure, layered, impressive style of the vintage front and center.
