Michel Thomas Sancerre Blanc is 100% Sauvignon Blanc (40% Caillottes, 40% Grosses Terres, 20% Silex)

The wine displays an exotic nose with a touch of smoke and licorice. On the palate, peach and watermelon dominate with citrus zest and chalk notes.

Thorn Clarke Shotfire Quartage is made from  47% Cabernet Sauvignon, 31% Cabernet Franc, 14% Merlot, 8% Petit Verdot .

The Shotfire range honors a family pioneer who worked the Barossa goldfields in the late 1800's. He had the hazardous job of being a 'Shotfirer'; one who handled the explosives to be used in finding that rich vein of gold.

Shotfire Quartage is based on the five traditional red varieties found in the Bordeaux region of France (Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec). The Thorn-Clarke winemakers use at least four of the varieties to create the blend each year (occasionally, they can get over excited and use all five). The blend is a reminder to not only look to the future but also to keep an eye on the past and tradition.

Deep purple red. Aromas of ripe plums, cherries and earth with subtle notes of vanilla and cloves. The aromas follow through onto the palate with a fruit focus, subtle oak notes and soft, rounded tannins. The wine walks the line between medium and full bodied with a plush mouthfeel.

Vinification Notes

The grapes are crushed and de-stemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Cooling is used to ensure ferment temperatures remain in the 22-25 degree celcius range which will allow the fruit to display maximum fruit expression. Pressing then occurs approximately seven days after crushing and the  wine is then put into predominately American oak to mature.

Torbreck Runrig Shiraz - Viognier is made from 98% Shiraz, 2% Viognier.

RunRig often draws comparison with the beautifully fragrant and tautly structured wines from the steep slopes of the Northern Rhône Valley’s Appellation of Côte Rôtie. Shiraz from old dry grown Barossa vineyards is blended with Viognier, complementing the strengths and complexities of these individual parcels of fruit, whilst giving the resulting wine a further dimension.

The Highland clans used a ‘RunRig’ system to distribute land amongst their clansmen in a series of widely dispersed holdings. The emphasis was not on any one farm but rather the communal element of the whole. Shiraz from old dry grown vineyards is blended with Viognier, complementing the strengths and complexities of these individual parcels of fruit, whilst giving the resulting wine a further dimension.

Tasting the RunRig beside the Descendant is always a wise move, in order to gain some contextual understanding of how they are similar and, perhaps more importantly, how they differ. This 2020 RunRig was sourced from six different vineyards across Barossa (in Lyndoch, Rowland Flat, Moppa, Ebenezer, Light Pass and Greenock) and includes a 2% “dosage” (as winemaker Ian Hongell described it) of Viognier. Matured for 30 months in a combination of new French oak (50%) and second and third fill barrels, the wine rests on its lees for that time. The lower percentage of Viognier here is a seductive and effective thing, adding just enough slick and polish to make this the sybaritic wine that it is, but little enough to allow the grunt, grit and muscle of the Shiraz from all those glorious locations to shine through. Despite the very long time in oak, the wine is balanced and excellent, big in almost every possible way but with an undeniable sense of class and length of flavor. Executed with detail and precision, this wine is clearly defined in its expression of house style

This Moscato is reminiscent of honeysuckle and rose petal. The quality is equivalent to a top level Asti Spumante DOCG.  Sweet sparkling wine obtained from a careful selection of the Moscato grapes. It has a pale straw yellow color with fine foam and bubbles. Tropical fruit flavors, refreshing.

Excellent to match desserts, fruit and dried pastries.

Trouillard Blanc de Noir Extra Brut NV is made from 90% Pinot Noir and 10% Pinot Meunier.

Aged "sur lattes" for 2 years

Color: Golden, fine bubbles.
Nose: Deep, vinous with red berries notes
Mouth: Ample. Sugar dosage gives it wilderness. You will be seduced by its stout, its structure and its vinosity. You will be invaded by a sensation of freshness.

This sparkling wine is only vinified with white juice of black grapes hence its name "Blanc de Noirs", which litterally translate to "White from Black". The exact varietal breakdown is 90% Pinot Noir and 10% Pinot Meunier.
It is aged sur lattes, in the bottle, on the lees for 24 months minimum.
Its low sugar dosage makes it an extra dry.

Its full bodied and power features designate it to go with sweetbread, giblet, “bouchée à la reine” and whites meats
