Quintessa is made from 91% Cabernet Sauvignon, 4% Cabernet Franc, 3% Carménère, 1% Merlot, 1% Petit Verdot.
The 2021 unfolds with Quintessa's signature balance of complex fruit, precise structure, and vital freshness amplified by an especially beautiful growing season. Floral notes— violet and lilac—lift an intensely aromatic bouquet of cassis and black cherry accented with anise, bay laurel, and forest floor. This is amazing on the nose with dried strawberries, sandalwood, mahogany and tea leaf. Iron and rust underneath the fruit. Dried flowers, nutmeg and rose petals. Full-bodied yet agile and energetic with layers of fine dusty tannins. Entrancing finish. Give this four or five years in the bottle, but it’s hard not to drink.

The color is an attractive bright, ruby red with a purple rim, typical of a young Pinotage. The flavors of this unique South African cultivar are complex and exciting with ripe plum and fruitcake all beautifully integrated and then finished with subtle oak for a lingering aftertaste.
Lovely with rare beef, barbequed lamb and casseroles. This versatile lighter style of Pinotage is also a lovely combination with spicy chicken.
Justin Isosceles Proprietary Red Paso Robles is made from 86% cabernet sauvignon, 7% cabernet franc and 7% merlot.
Bright with a dark purple/black core and a lighter ruby purple rim showing slowforming, moderately stained tears on the glass. Attractively aromatic and complex with ripe black and red cherry, black currant, new book leather, cedar, tobacco, vanilla bean, licorice, and oak. Full-bodied on the palate with ripe complex cherry, cassis, and a subtle red berry fruit on entry, with vanilla and licorice baking spice leading into the midpalate, which shows complex savory notes of cedar, tobacco leaf, and leather. The very long, complex, and continually changing finish is a progression of sustained ripe cherry fruit accented by baking spice and oak notes, with smooth chewy tannins and balanced acidity, adding depth and freshness.
In 1987, we made our first vintage of a wine styled after the famous First Growth producers of Bordeaux, created with the same uncompromising care as the Grands Vins of those venerable chateaux. Patricia Raquin Chablis Vieilles Vignes is made from 100 percent Chardonnay.
Tasting Notes: Golden color with slight green hints. Very fresh nose with some white flower notes. Very light oak flavors on the finish with vanilla notes.
VINIFICATION: Alcohol fermentation in thermoregulated temperature (22°C) in stainless tank with fine lies remontage.
Very light filtration - vinification only with natural yeast (no yeast added). Aging in 500 liters barrels for 5 months.

HARVEST: Harvest by hand.
