Kershaw Chardonnay Deconstructed Lake District Cartref CY96 is made from 100 percent Chardonnay.

Sourced from the western part of Elgin, known as the Lake District, this clone produces wines that are nervous, aromatic, elegant and sharp with slightly lower alcohol and finely balanced, the fruit profile being subtle with hints of citrus/orange peel and peach blossom and with time, some nutty elements. The Cartref soils, a mixture of decomposed granite, pebbles and quartz, adds delicacy and heightens the fruit intensity.

The inspiration for my Deconstructed Chardonnay stems from my belief that the Elgin region boasts credentials that make it world-class. To bolster these regional credentials, I have set out to prove that Elgin has both a signature grape, as well as specific ‘terroirs' (meso-climates) that reflect intra-regional distinctions. To fully comprehend this, it is necessary to dig deeper into the DNA that make up our region. To elucidate this, I have decided to make these 3 Chardonnay wines, each selected from a specific vineyard and an individual clone. Importantly, this is an ongoing story that will unfold over the coming years.

Super-concentrated and mineral. Release always trails the regular Sancerre Blanc by a year so it has extra time in both tank and bottle.

An understated charm on the nose, revealing elegant aromas of yellow fruits like apricot and mirabelle plum, along with hints of anise and marzipan. A touch of green pepper adds a light and airy quality. On the palate, it offers a crisp and delightful experience, with flavors of plum and orange wedge, culminating in a chalky, saline finish.

VINEYARDS: The vineyards are planted in Terroir of Kimmeridgian marls (calcareous clay with encrustation of oyster and mussel fossils) from the Jurassic time. Trellised vines are averaged around 30 years old and have a planting density of 8000 vines/ha. Tillage takes place in the rows until the bud burst, the rest of the year to natural grass covers. The Côte des Monts Damnés is located in Chavignol. Steep hillsides (declivity up to 70%), facing south, with an altitude that ranges from 650 to 980 feet.

VINTAGE: The grapes matured in cooler temperatures than in recent years, so the 2021 vintage is in line with other vintages that conform to the temperate climate of the Centre-Loire wine region.

VINIFICATION AND MATURATION: The grapes were handpicked and had a light cold static settling to eliminate the coarsest lees. Fermentation and aging took place in stainless steel tanks (88%) and 10 years old wooden vats (12%). After, the wine was aged on fine fermentation lees for 9 months.

Lingua Franca Bunker Hill is made from 100 percent Chardonnay.

Review:

Estate bottled, the 2022 Chardonnay Bunker Hill is the counterpart to the Chardonnay Estate. It pours a bright pale yellow with a tinge of green and has a lovely incense of delicate toast lifting from the glass, followed by notes of white flowers, fresh green pear, and pleasing reduction. This wine comes from a site where the grapes get thicker skins from the wind, leading to firmer structure, and on the palate, this wine is medium to full-bodied, with a pithy, chalky texture. Drink 2024-2034.

Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet. 

Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.

Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.

Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. The finished wine was aged 22 months in 90% new Vicard French oak barrels (Randy's cooper of choice at Dunn Vineyards as well).

Long Shadows Pedestal Merlot 2016 is made from 75% Merlot, 21% Cabernet Sauvignon, and the rest Petit Verdot.

Michel Rolland, Pomerol vintner and consultant to many of the world's top wineries, teamed with Washington State wine visionary Allen Shoup to produce this limited release wine.

With its intense color and inviting aromas of dark berries, licorice, baking spice and a hint of smoke, the Pedestal is a bold wine that leaves a lasting impression. Dark fruit flavors integrated with sweetness from the barrel and richness from the tannins come together seamlessly, lingering across a structured mid-palate and lengthy finish.

Winemaking: Hand-harvested grapes were double-sorted to remove green material that might impart harsh tannins, then most of the lots were cold soaked to build richness and flavor before undergoing whole-berry fermentation in 55L upright French wood tanks. This, combined with gentle pump-overs throughout fermentation, enhanced the wine’s color, texture and mouthfeel. The finished wine was aged 22 months in 85% new French oak barrels.

"The 2016 Pedestal Merlot has a precise nose of dusty plum, red flowers and soft oak tones with an elegant aroma of pencil lead fluttering about. The medium to full-bodied palate is clean and correct, with plush dark red fruit, dusty tannins, purple flowers and soft oak spices of vanilla, cardamom and nutmeg. Grand Cru Clos des Hospices is located in Grand Cru Les Clos and produces outstanding wines, opulent and generous.  

Vinification Methods: Grand Cru Clos des Hospices dans Les Clos parcel is handpicked, like all our 1ers Crus and Grands Crus. We generally start picking in Grands Crus parcels first because the grapes ripen earlier thanks to their ideal exposure. We vinified Grand Cru Clos des Hospices dans Les Clos in stainless steel tanks for both alcoholic fermentation, activated with natural yeast for 15-18 days at low temperature (18°C) and malolactic fermentation, thanks to natural bacteria at 20°C for a few months.

Aging Methods: From vintage 2013, Louis decided that our monopole Grand Cru Clos des Hospices dans Les Clos will age only in tank, on fine lees, with minimum intervention, to let it express all its minerality and purity. Just before bottling, the cuvee will go through a light filtration and bottling. Generally, the bottling takes place 18-20 months after harvest.

Tasting notes: Grand Cru Clos des Hospices is located within Les Clos and it produces exceptional wines, displaying great generosity. Its nose is full and expressive, with a nice minerality that we find again in the mouth, confirmed by an elegant length in the finish.
