Trouillard Elexium Rose Brut NV rosé cuvée is made with 100% Pinot Noir grapes and aged for 3 years on the lees. The color is a seductive salmon pink with fine bubbles. The Pinot Noir gives this fruity wine its rich bouquet of raspberries and fresh-baked bread. On the palate it is rich yet balanced with lashings of red-berry fruitiness and an ephemeral creaminess. An enormously popular and versatile rosé, this wine is perfect with roast game birds or fowl, smoked salmon and creamy cheeses.

Dense purple hues, with evocative aromas of black cherries, ripe plums, nectarines, boysenberry, wild bramble and exotic oak spice. The juicy and sweet-fruited palate entry, combined with crunchy tannins, lures one into a sense of overtness, yet the wine is sublimely elegant and poised. The complex layers of fruit is in perfect harmony with the oak, all bound together by a lively seam of acidity. The finish is pleasantly dry and savory, with lingering notes of Christmas cake and vanilla pod.

Wolfberger Auxerrois  is made from 100% Auxerrois

Auxerrois blanc is thought to have originated in Lorraine, rather than near Auxerre in the Yonne. Recent DNA fingerprinting suggests that it is a cross between Gouais blanc and Pinot noir, the same ancestry as Chardonnay. The name Auxerrois blanc has actually been used as a synonym for Chardonnay in the Moselle region in France, which explains why there is also a longer name (Auxerrois Blanc de Laquenexy) for the grape variety.

This pale yellow Auxerrois Pinot Blanc shows an intense nose of fresh white fruits, rhubarb and spring flowers. Easy to drink and fresh on the palate, this wine ends on a fruity and crunchiness tast.

Alcoholic fermentation at 16°C followed by a short fermentation at 18°C allowing to keep some crispiness to the wine. 
Then the wine was aged on the fine lees for 6-7 months. No Oak. 
No Malo-Lactic fermentation. 
Right before bottling, the wine was filtered using a tangentiel filtration system.

Quiche, grilled fish, rhubarb pie, mixed salad, and also fresh sheep milk cheese.

Wolfberger Cremant d Alsace Rose Brut is 100 % Pinot Noir. 

The wines from Alsace date back to 589 A.D., but Cremant d’Alsace has more recent beginnings, starting in 1900.  Dopff au Moulin (founded in 1574) was the first to produce Cremant d’Alsace in the Method Champenoise style.  Cremant d’Alsace received AOC status for sparkling wine in 1976.  Two types of Cremant are produced today, resulting in about 2.5 million+ cases of Cremant d’Alsace production annually:

• Cremant d’Alsace, Brut – represents the majority of Cremant d' Alsace production. Uses Pinot Blanc, Pinot Gris, Pinot Noir, Riesling, Auxerrois, and Chardonnay.

• Cremant d’Alsace, Brut Rosé – much rarer, as it is 100% Pinot Noir only.

Wolfberger's Cremant d'Alsace Rose Brut displays a lovely delicate salmon color with active, small bubbles. After 20 years of marketing Napa Valley and its wines, Karen Cakebread launched her own project in 2008 with two major goals in mind: to create beautifully structured wines that reflect the vineyards from which they come, and to be involved in every aspect of making the wines.Karen started ZIATA, named in honor of her mother, Mary Annunziata, in 2008 with three varietals: Cabernet Franc, Sauvignon Blanc and Pinot Noir, which she chose for their food-friendly qualities. She hired Anne Vawter, a protégée of Heidi Barrett, as winemaker and sourced grapes from sustainable sources, working closely with the grape growers through the growing season, knowing that efforts made in the vineyard would create better wine than those manipulated in the cellar. Jennifer Williams : I find winemaking to be both an art and a trade—you learn by doing and working the vineyards, ensuring the fruit is the best it can be long before it’s picked is at least half the work of the winemaker.

Alain Jaume Bellissime Cotes du Rhone Rose is made from 50% Grenache Noir, 25% Cinsault, 20% Syrah and 5% Mourvedre

Salmon-pink color, clear and brilliant. The nose is fruity and spicy, reminiscent of wild strawberry and fine Provencal spices. The palate is full, well-balanced and fruity, with a long, fresh finish. A beautiful and delicate rosé.

A part is drawn off the skins with short maceration and the other part is from direct press. Fermentation in stainless steel at cool temperature. Bottling 5 months after harvest.
