Corinne Perchaud Chablis (half-bottle) is 100 percent Chardonnay.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. There is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest. 2011 Vintage The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed vineyards. The dry and sunny weather of the second half of August brought the grape good maturity. The harvest began on September 2 under clement skies.

Corinne  Perchaud Chablis Premier Cru Fourneaux is made from 100 percent Chardonnay.

This is the south facing portion of the slope and very hot, heavy "Fourneaux" or "oven" effect.
The wine is expressive and vivacious with beautiful aromas.
Well-balanced, round and fruity wine with a fine minerality on the finish.

1er Cru Fourneaux is located on the Fleys village and faces the field. the plots are very steep and exposed full south on soil type Kimmeridgian consists of marl clay-limestone with shallow ground and a very stony ground. After a slight settling, the juice starts its fermentation in tank, then ¼ of juice is racked in barrels. Both wines perform their alcoholic fermentation and malolactic and their aging on the lees, separately. The two cuvées are blended six months after harvesting. Coquille St. Jacques (scallops) with leeks and cream.

This new-wave Rioja (see below for info) is a blend of Tempranillo, Graciano and Garnacha. It combines maturity and complexity with freshness and elegance. Theres a core of dark plummy fruit, with some cherry notes, spice and earthiness and lovely ripe tannins giving complexity and body.

This is perfect with grilled lamb chops and salsa verde

 Rioja has traditionally been defined by its ageing. Wines would be blended from across the region and quality would be defined by a wines age - vineyards and regionality were not considered important. Now, theres a new movement in Rioja where new wave producers are pushing to label the wines from their villages and regions highlighting the difference in the terroir and individual parcels.

Creaciones Exeo is part of this movement , stepping away from traditional methods, to produce fresher styles of wine with a lesser reliance an oak influence. The important thing here is hard work in the vineyard to produce great fruit.

Located in the area of Labastida, Rioja Alavesa (this village is labelled on the bottle, until very recently producers were not allowed to do this), Carlos works with 24 hectares of the highest altitude vineyards of the area. In the shelter of the Sierra Toloo, the vines benefit from Atlantic influences and the soils here are mainly chalk and limestone which all help to give elegance the wine.

Sequentis is a limited-edition Reserve Merlot that advances our devotion to Bordeaux varieties. The remarkable 2021 vintage opens with heady aromas of rose petal, plum, blackberry jam, cooked strawberry, ripe black cherry and baking spice. A medium-bodied mouthfeel floods the senses with extraordinary complexity, including layered flavors of pomegranate, raspberry, blackberry, coconut, tobacco and vanilla. Balanced acidity and fine tannins converge on a smooth, velvety finish.

Review:

The Daou hallmark of toasted pecan and walnut aromas show on the nose of this Merlot, which also offers ripe berry and toasted herb touches. The palate carries the savory, nutty tone as well, with dark cherry providing fruit and firm tannins holding strong. Drink now-2035.

DAOU Vineyards Soul of a Lion is made from 80% Cabernet Sauvignon, 13% Cabernet Franc, 7% Petit Verdot .

The 2020 vintage presents an alluring profusion of black cherry, mulberry and Oregon blackberry aromas with notes of leather, cigar box and dark chocolate. Hints of desert sage and crème de menthe accent the rich fruit. The palate is silky and voluptuous, delivering loads of currant, cassis, black raspberry and ripe cherry. Notes of fig and baking spice are underscored by earthy tones of dates and truffle. Mature, ripe tannins yield a weighty, velvety texture integrated with a limestone minerality and subtle oak. A lengthy finish leaves lingering impressions of blackberry, plum and espresso with a touch of white pepper. A wine of immense staying power that will evolve favorably for many years to come.
