Thorn Clarke Shotfire Quartage is made from 58% Cabernet Sauvignon, 16% Cabernet Franc, 16% Merlot, 10% Petit Verdot.

The fruit was harvested at night. Fermentation was carried out in a variety of small capacity fermenters. After pressing the parcels were filled to French oak (12 months) for maturation. The wine was racked after six months and the parcels were blended to form the final wine.

The Shotfire range honors a family pioneer who worked the Barossa goldfields in the late 1800's. He had the hazardous job of being a 'Shotfirer'; one who handled the explosives to be used in finding that rich vein of gold.

Thorn Clarke William Randell Shiraz is made from 100 percent Shiraz

The William Randell range of wines were created in honor of our family ancestor - the esteemed pioneer William Richard Randell (1824 - 1911). The wines are sourced solely from grapes grown on our estate vineyards. Wines in this range are only made in exceptional vintages.

Deep red with inky purple hues. This classic Barossa style shows rich blackberry, licorice, spice plum and smoky oak on the nose. The palate is dense with ripe mulberry and berry compote and generous supporting oak. The tannins are savory and long with spicy refined finish

Following harvest the fruit was crushed into a variety of small fermenters (4 to 6T in capacity). Fermentation was carried out at a warm temperature (25-28 degrees ). The ferments were manually pumped over to provide good control of tannin extraction. Each fermenter was treated as a separate parcel of wine and once dry was filled to American oak (40% new). Following malolactic fermentation the wines were racked and returned to the same oak. Parcels remained in barrel for an average of 18 months prior to blending. Only the best barrels from the multiple parcels were used to make the final blend. Once blended the wine was prepared for bottling.

Torbreck Runrig Shiraz - Viognier is made from 98% Shiraz, 2% Viognier.

RunRig often draws comparison with the beautifully fragrant and tautly structured wines from the steep slopes of the Northern Rhône Valley’s Appellation of Côte Rôtie. Shiraz from old dry grown Barossa vineyards is blended with Viognier, complementing the strengths and complexities of these individual parcels of fruit, whilst giving the resulting wine a further dimension.

The Highland clans used a ‘RunRig’ system to distribute land amongst their clansmen in a series of widely dispersed holdings. The emphasis was not on any one farm but rather the communal element of the whole. Shiraz from old dry grown vineyards is blended with Viognier, complementing the strengths and complexities of these individual parcels of fruit, whilst giving the resulting wine a further dimension.

Tasting the RunRig beside the Descendant is always a wise move, in order to gain some contextual understanding of how they are similar and, perhaps more importantly, how they differ. This 2020 RunRig was sourced from six different vineyards across Barossa (in Lyndoch, Rowland Flat, Moppa, Ebenezer, Light Pass and Greenock) and includes a 2% “dosage” (as winemaker Ian Hongell described it) of Viognier. Matured for 30 months in a combination of new French oak (50%) and second and third fill barrels, the wine rests on its lees for that time. The lower percentage of Viognier here is a seductive and effective thing, adding just enough slick and polish to make this the sybaritic wine that it is, but little enough to allow the grunt, grit and muscle of the Shiraz from all those glorious locations to shine through. Despite the very long time in oak, the wine is balanced and excellent, big in almost every possible way but with an undeniable sense of class and length of flavor. Executed with detail and precision, this wine is clearly defined in its expression of house style

Winemaking:  This wine is a classic Bordeaux blend of 78% Cabernet Sauvignon, 10% Malbec, 8% Merlot, 2% Cabernet Franc, 2% Petit Verdot.

.  The 2010 growing season was moderate, thus promoting slow ripening and full flavor development.  We hand-harvested and fermented each variety separately, then moved the wines to barrel, where they aged twelve months.  Once we determined our blend, we returned the wine to barrel for an additional twelve months, to 'marry' the varietals.  We used tight-grained French oak barrels (45% new) from coopers Taransaud, Vicard and Bossuet.

Winemaker Notes:

Complex, rich aromas foretell rich flavors of black currants, allspice and a hint of clove.  The wine is full bodied, with velvety texture, smooth tannins and an extensive finish.  Beautifully balanced, this Cabernet will age for ten more years.

Alcohol: 14.25 percent by volume

"Savory, dried red capsicum with cedar, cocoa powder and dried mushrooms on top of black cherries. Juicy and layered with some currants and savory earthy spices on the palate. Not quite deep, but a very elegant and savory expression of cabernet with a very long, subtle finish. A little sweet-sour, but quite refined and approachable, too. Drink now."

The House of Trouillard has incredible holdings on the Côtes de Blancs. The vineyard's rating average 94-95, just one of the reasons the Blanc de Blancs has such incredible raciness and elegance. It is a Cuvée of eleven different Crus in the Reims Mountain, the Côtes de Blancs and the Sézannaise region and is the specialty of the house.

Trouillard Blanc de Blancs Brut NV is made of 100% Chardonnay with a green-gold color, characteristic of Chardonnay, and with fine persistent bubbles. This wine has an aroma that jumps out of the glass and is very inviting. On the nose there are seductive scents of warm almond croissant and honey, lightened by some floral notes. Crisp and refreshing in the mouth and lively with a very refined fruitiness and a touch of smokiness typical of wines from the Côtes des Blancs. The elegance and subtlety of the Chardonnay are to be especially appreciated as an aperitif, and nicely accompanies shellfish and fish. 
It has become the favorite of those who know Champagne Trouillard.

This all Chardonnay Champagne is sourced from eleven different crus. It offers a fragrant bouquet of orchard fruit with hints of toasted grain and lemon zest.
