Baron Aime Cremant de Bourgogne Brut is made from 40% Chardonnay, 30% Pinot Noir, 30% Aligote.
Light yellow with bright reflections. The nose is fresh and lemony with subtle floral aromas, apple and citrus fruits. The mouth is fresh, delicate, tight and precise with fine bubbles that stimulate the palate nicely.
A delicious aperitif and a great match with shellfish.

Baron Aime Cremant de Bourgogne Brut Rose NV is made from 85% Pinot Noir & 15% Chardonnay.
Light pink color with coppery shades. The citrus notes blend subtly with aromas of strawberry, forming a fresh and delicate bouquet. The palate is lively, with notes of grapefruit and fresh bread. Together they form a rich, fresh and vibrant wine.

Beliere Bugey-Cerdon is made from 95% Gamay, 5% Poulsard (a local grape from Jura).
Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation.
This is also wonderful served with chocolate cake!

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Each vintage, we will bottle only the most compelling and nuanced expression of pinot noir from a single selected vineyard and release it as a limited bottling.
Tasting Notes
Beautiful golden hue with enticing aromas of honeyed almond, vanilla custard, ripe pear, and hints of lemon zest. On the palate, lush notes of apricot, crisp green apple, and a touch of toasted hazelnut come forward. This wine has a well-balanced mouthfeel that dances on the palate with bright, lively acidity and subtle minerality, offering a stunning
expression of a coastal driven Chardonnay.

Ruffino Romitorio di Santedame Chianti Classico Gran Selezione DOCG is made from 90% Sangiovese, 10% Colorino.
Romitorio di Santedame, a limited-production Gran Selezione from Castellina in Chianti, pays homage to a rich history while embracing a bright future. It originates from a single vineyard within the Chianti Classico's "golden basin" (Conca d'Oro) and is crafted from an exclusive blend of Sangiovese and Colorino. The latter is a native Tuscan grape variety that was nearly extinct but has experienced a revival through dedicated research and promotion efforts.
Fruity aromas typical of Sangiovese, including black cherry and ripe plum, with violet and complex chocolate and black pepper notes. The palate offers sweet tobacco and balsamic hints, while its balanced structure with refined tannins and lively acidity makes it suitable for extended aging.
Review:
You feel the oak here, suggesting vanilla and clove character, but it’s very well complemented by the dark fruit, ranging from blackberries to mulberries to dark cherries. Full-bodied, dense and decadent with a regal structure and muscular tannin backbone. The acidity cuts nicely through on the long finish and provides freshness. Drink from 2024.

Avennia Valery Red Blend is made from 88% Merlot and 12% Cabernet Franc
Valery is named for the patron saint of wine in the St. Emilion region that inspired it.
We started with old vine Merlot from a stony block in the heart of the Yakima Valley and added complex, aromatic Cabernet Franc from the Horse Heaven Hills. The result is a balanced, complex wine with the elegance and ethereal perfume that this blend of two of Washington’s best varietals are known for.
The nose on this wine is very perfumed, almost exotic with notes of fresh violets, red plum, winter mint, fresh herbs and crushed limestone qualities. The palate is poised and balanced, with red fruits and mocha powder encapsulated in limestone. The finish lingers delicately, with the Cabernet Franc asserting a light tobacco and herb note, giving depth. A compelling wine that will continue to unwind for 7-10 years in the cellar.

"This Merlot dominant blend is made in the style of Bordeaux's Right Bank. Still, it offers a brilliant complexity sourced from two of Washington's most important sites, with old-vine Merlot that comes from a rocky section of Boushey Vineyard and Cabernet Franc from the Horse Heaven Hills standard bearer Champoux Vineyard. The resulting wine is dazzling, complex and refined. Elegance in the floral tones of dark violets and dried lavender mingle with smoky clove and a savoury saline pique. The palate offers intensity, rich red fruits, savoury dried anise and hints of wild desert sage. There's a core of dark chocolate and a streak of pencil lead into the finish."
