So much pine needle, flowers, currants and ripe plums on the nose. Medium-bodied with fine and polished tannins. Linear and very tight with a clarity and energy. Vivid is the word. From biodynamically grown grapes with Demeter certification. Drink or hold.

La Ronciere Licanten Cabernet Sauvignon is made from 85% Cabernet Sauvignon, 8% Syrah, 7% Cabernet Franc.

 Intense aromas of black fruits, notes of dark chocolate, and roasted coffee. The palate is round with polished, juicy tannins and a finish that leaves a lasting impression.

Hand-harvested and field-sorted. An additional sorting occurs at the winery before the grapes are fermented in temperature-controlled micro-fermentation tanks. Aged in French oak for 10-12 months. : Diverse soils derived from metamorphic rock. This has a pretty fragrance of violets, green peppercorns, salted olives, blackcurrants and black raspberries. Creamy, salted dark chocolate and praline to follow. Medium-to full-bodied with fine-grained tannins. Delicious and superbly balanced. 50% cabernet franc, 47% cabernet sauvignon and 3% petit verdot.

The 2019 Red Blend Estate comes all from the To Kalon Vineyard and is close to an even split of Cabernet Franc and Cabernet Sauvignon. It's a clear step up over the base Red Blend and offers terrific, full-bodied aromas and flavors of darker fruits, dark chocolate, violets, and a kiss of spring flowers. With silky tannins, terrific balance, and outstanding length, it's going to evolve for 15 years or so.

Rutherford Ranch Reserve Cabernet Sauvignon

Rich and vibrant with classic Rutherford Cabernet tannins, dark cherry mingled with toasty oak, sweet oak and sweet sage lingering on the palate.

The base for our Reserve Cabernet is from the world-renowned Rutherford appellation, which is home to our Abela and Franklin estate vineyards. Perfect climatic conditions and the region’s deep, loamy, well-drained soils produce dark, intensely flavored Cabernet Sauvignon grapes. This Reserve Cabernet Sauvignon is a beautiful complement to ribeye steak, rack of lamb or mushroom risotto.

A flint and gunpowder nose leads to bold graphite, blueberry and tobacco flavors in this full-bodied wine that is laced with a high level of fine-grained tannins. This wine is meant for aging, being so tightly packed with fruits and minerals and having the structure to keep it fresh while more complex flavors develop over time. Best from 2028–2038.

In 1992 the Hill-Smith family counted themselves amongst those fortunate enough to own a vineyard upon the famous Coonawarra terra rossa soil over limestone. Experimentation, innovation, minimalist intervention and small batch winemaking has resulted in The Menzies’ reputation as a wine of longevity, elegance and structure.

Situated in the heart of Coonawarra’s terra rossa strip, The Menzies Estate vineyard lies on a flat plain, approximately 70km from the coast. Given the terrain and influence of the cooling Bonney upwelling, Coonawarra is an ideal location to grow premium Cabernet Sauvignon. Our soil is red sandy loam over limestone, which is classic Cabernet Sauvignon country. The grapes for The Menzies 2017 are from vines planted in 1994 and 1996. Bunches are usually small with small berries, giving concentration via an ideal skin to juice ratio favouring the making of fullbodied reds.

Experimentation, innovation, minimalist intervention, and small batch winemaking has resulted in The Menzies' reputation as a wine of longevity, elegance, and structure. 

Aromas of fresh rosemary, mulberry, violets and exotic spices. Take a sip and you will feel the poise and tension for which great Cabernet is renowned. A wine of great complexity with flavors of blackcurrant, bitter chocolate, and mulberries, wrapped in divine tannins and a lovely sweet, dark fruit finish. With decanting in its youth, it is enjoyable as an elegant full-bodied red wine.

The 2017 The Menzies Cabernet Sauvignon is looking good next to the 2016 tasted beside it. It is fresh and vibrant, with layers of complexing dark earth characters, with cigar box, black olive brine, cassis, bramble, milk chocolate and cracked black pepper. This is very good, and it has what I am coming to recognize as a "Yalumba red character": dried herbs, particularly oregano. The juicy splay of fruit through the finish is a highlight.

Far Niente Napa Valley Cabernet Sauvignon is made from 88% Cabernet Sauvignon, 6.5% Merlot, 2.5% Malbec, 2.5% Petit Verdot, 0.5% Cabernet Franc.

Very precisely polished and focused wine with aromas of black cherries, blue berries and violets followed by green bell pepper, black ink and gravel. Underlying umami notes, too. Full-bodied, firm yet finely grained juicy tannins with bright acidity that balances out the palate. Beautifully integrated toasty notes and baking spices on the mid-palate and in the finish. Flourishing and artful wine that will age gracefully.

The estate Cabernet Sauvignon is grown primarily along the southwest ridge of the vineyard. Heritage School Missiaens Hillside Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

A steep, rocky site with red volcanic soils results in our most structured and concentrated wine. Planted in 1998 using 110R rootstock and clone 337 Cabernet Sauvignon our Hillside Vineyard produces wines as breathtaking as the views from its slopes. These tiny, dark blue berries ripen near the end of September thanks to cool afternoon temperatures allowing for increased hang time and developed flavors.

Milk chocolate, crème de cassis and tobacco give this massive wine the depth you come to expect with Napa cabs, but it is all Sonoma County, all from our magnificent little private valley which sees sun all day! Jersey Boys Vineyard (Kevin Kinsella is the largest individual investor in the hit Broadway show "Jersey Boys")

Jersey Boys is a six-acre vineyard that was replanted in 2008 with four different clones of Cabernet Sauvignon, handpicked by winemaker Thomas Rivers Brown.

“While it was the third consecutive year marked by limited rainfall, the 2014 vintage offered a perfectly temperate growing season characterized by long, moderate days and cool, clear nights. We began the year with warm spring conditions that gave way to an early budbreak and the consistent, dry weather afforded an optimal fruit set of small berries with incredible concentration. Crop yields were down a bit from 2013, but the quality was magnificent. It was a textbook growing season, every winemaker’s dream.”

This wine and its siblings will do a lot to establish Dry Creek as more than another viticulture area better known for Zinfandel than Cabernet Sauvignon. This is a killer Cabernet Sauvignon with dazzling fruit levels and loads of loamy soil notes intermixed with black raspberry, blueberry and blackcurrant. The superripe and pure fruit hits the palate with a full-bodied crescendo. The 2019 Heart of the Hill Cabernet Sauvignon is perhaps our most sophisticated bottling yet from this superlative site.   The color is an impenetrable purple/black with almost no rim variation.  The aromas are exotic and dusty: wild strawberries, black raspberries, dark chocolate, sandalwood, fennel and fresh violets explode in the glass.  On the palate, the wine is dynamic with incredible precision and finesse, managing vibrancy alongside terrific structure.  The tannins are fine and ripe, supporting deep flavors of currant, blueberries, black plum, fresh herbs and spice that broaden through a long, rich finish. Classy and age-worthy, this will continue to grow in the cellar over the next 15+ years.

  We know great wines are made in the vineyard. Vintage after vintage we work with our growers and vineyard managers on the best practices to yield the highest quality grapes we can for that given season. We share common goals, a work ethic, and meticulous attention to detail that increases our chances of success substantially. Whether it's pruning, thinning, changing the canopy, or varying the vine nutrition, we work side by side to get the best results.

  Harvest decisions are made by the ripeness of fruit, sensory analysis, and the weather. From year to year decisions are driven by both flavor and physical maturity. We are looking for the moment where the flavors and balance of the grape hit true phenolic ripeness. Our team did over 6,000 miles to and from the vineyards in Steve’s truck during harvest as we sampled 2-3 times per week to ensure our picking decisions were spot on. From bud break to the barrel and finally, to bottle our goal is to stay true to our ideologies. Exacting winemaking, cellar, and lab practices drive our goals of making the best wine we can.

  The art and science of winemaking is a continuous learning adventure. The true balance of winemaking is achieved when science and art collide creating a bottle of wine well worth drinking. That’s what excites us as a team. All of our flagship wines are made from only the best barrels that we painstaking select over several months. Once this is done, we begin the blending process, all double-blind, until months later we select each wine that we believe reflects the character and quality of the site and vintage.

WALT Wines Blue Jay Pinot Noir is made from 100 percent Pinot Noir.
