Cold soaked overnight. Inoculated with selected yeast. Fermentation temperature was between 24 -26 degrees Celsius. Regular pump-overs were given to enhance colour and flavour extraction. Different batches of wine matured with French oak staves and 2nd and 3rd fill barrels were all blended together to perfection.
Served at room temperature, this Cabernet Sauvignon pairs perfectly with red meat dishes, especially classic recipes like roasted leg of lam, grilled lamb chops and beef kebabs.

From a St. Helena vineyard planted by early Napa settler Edward Bale more than 150 years ago, and later serving as the estate vineyard for the area’s first winery built by Henry Pellet in 1860, the Las Piedras site always gives us our prettiest wine. When placed next to Dr. Crane and To-Kalon wines, the Las Piedras show a certain elegance, with a very graceful entry and finely detailed complexity. We produce it with at least 75% new French oak, so there is a floral, spicy, and vanilla accent to the intense red and black fruits, cassis, and black cherry liqueur. What distinguishes this bottling is the beautifully fine tannins, delicate texture, and stunning purity. (Less than 100 cases made.)

Blind Justice Beckstoffer To Kalon Vineyard Cabernet Sauvignon is made from 76% Cabernet Sauvignon and 24% Cabernet Franc.
The dream team does it again. Melka, Koschitzky and Sands have collaborated on a compelling Cabernet. The creamy mouthfeel is almost decadent, but there’s always a balance kept between opulence and energy. Wonderfully expressive in its aromas and flavors, it’s just swimming with dark cherry and plum on a bed of dried flowers and gravel with a hint of mint. Complex and impressive, as always.

It's concentrated and has beautiful mid-palate density, ripe yet building tannins, and a great finish. It's another undeniably delicious, hard-to-resist Cabernet Sauvignon from the talents of winemaker Thomas Rivers Brown. Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Dark red with a hue of purple. The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

Viña Siegel Single Vineyard Cabernet Sauvignon is the result of our family's continuous search for quality wines with personality which faithfully reflect the best of our terroir. This wine comes from selected grapes from our "Los Lingues" vineyard in Alto Colchagua.
Located in the foothills of the Andes where the influence of the Andean winds result in an elegant Cabernet Sauvignon with great concentration of ripe red fruits, cassis and chocolate, and a balanced, richly structured, and long finish.
An intense violet color. Smells of cassis and is complemented with notes of mature red fruit and chocolate. A round and elegant wine with an excellent final persistence.
After carefully determining the moment for the harvest, the grapes are harvested by hand and later de-stemmed and marinated in cold temperatures for 5-6 days. Alcoholic fermentation is between 26ºC and 29ºC during which daily reassembly is implemented according to taste.Post-fermentation infusion lasts for two or three weeks. Once the blend is made, the wine is gently clarified and stabilized in cool temperatures if necessary.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.
Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.
Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. This wine shows enough structure to be age-worth, yet soft and balanced enough to enjoy upon release. Flavors linger in this tasty, dense wine. Tastes like Oakville. -Heidi Barrett
Mordoree Chateauneuf-du-Pape La Reine des Bois is made from 80% Grenache, 10% Mourvèdre, and the rest equal parts Syrah and Vaccarèse .
This premium cuvee - whose name means "Queen of the Woods" - is from 65-year-old vines, planted on Villafranchian-era terrasses. Yield is 30 hl/ha.
Deep ruby red; opaque. Aromas of red fruits change to wooden touches of leather, black truffles and coffee. Fat, concentrated and full flavored with a very long liquoriced and fruity finish.

"The 2020 Châteauneuf Du Pape La Reine Des Bois is a bigger, richer, more structured wine, which is normal. A blend of 80% Grenache, 10% Mourvedre, and the rest equal parts Syrah and Vaccarese, its deeper ruby/purple hue is followed by a brilliant perfume of blackberries, black raspberries, ground pepper, violets, and new saddle leather. Medium to full-bodied and concentrated, with building tannins and great overall balance, it's another wine that shows the style of the vintage brilliantly. It has plenty of up-front charm, but this beauty will evolve nicely for 15-20 years."

Patz & Hall Sonoma Coast Chardonnay is made from 100 percent Chardonnay.
The 2019 offering is a collection of fifteen single-vineyard quality sites that could all be bottled as single source bottlings; six blocks of Dutton Ranch, three from Sanchietti Vineyard, Gap’s Crown Vineyard, Zio Tony Ranch, three of Parmelee-Hill, and Durell Vineyard. The wine has inviting aromas of spicy pear, marzipan, lemon drop candy, peach pie and pineapple. As a cool-climate Chardonnay, there’s a refreshing acidity on the finish giving the wine great poise, balance and energy.
