Profundo began during the era of “assemblages” in Argentina; wines from various grapes combined in different proportions, achieving a singular, complete wine with great definition.

The Malbec, the Cabernet Sauvignon, Merlot & Syrah come from Lujan de Cuyo vineyards 3,100 feet above sea level. Planted 6,500 plants per hectare.

Alejandro Bulgheroni Lithology Beckstoffer Dr. Crane Vineyard Cabernet Sauvignon  99% Cabernet Sauvignon, 1% Cabernet Franc.

Here the Cabernet comes to us typically flawless, and the wines are as such. There is blue fruit, blueberries, black plums, blackberries, and cassis to the aromas, as well as stones, mineral, chocolate, fresh tobacco, and subtle herbs. It is incredibly full-bodied, but at the same time effortlessly drinkable, with ultra-smooth tannins and a positive, long, upturned finish. 70-75% new French oak is the norm for us with Dr. Crane, and those flavors are absorbed to become a vanillin complexity, sweetness, and length. An unbelievable wine.

You don’t see many Cabernet Franc-dominated wines from this site, but the 2019 Cabernet Franc Lithology Beckstoffer Dr. Crane Vineyard is certainly impressive. Offering more herbal, chocolate, gravelly earth, and espresso aromas and flavors, it has full-bodied richness and, as expected, is a powerful, opulent expression of this noble variety. The blend is 83% Cabernet Franc and 17% Cabernet Sauvignon, aged 20 months in 80% new French oak. It will benefit from short-term bottle age and drink nicely for 20 years.

Avennia Sestina Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 17% Merlot, 6% Cabernet Franc.

The story of this wine - The Sestina is an ancient form of poetry from Medieval France. Just as a modern poet can fill this form with new expressions, Avennia uses the traditional Bordeaux blend to express Washington. Sestina is their vision for an old vine, complex blend where all of the components complement each other. This wine is designed for the cellar, so the emphasis is on structure, balance, and complexity.

Winemaker Tasting Notes - “Good deep ruby/garnet color, with aromas of black cherry, fresh black currant, dark mocha, cigar box, and graphite. The palate is lively and dense with mountain berries, mocha, vanilla honey, damp earth, and wildflowers. The finish shows a distinct chalky minerality and beautiful tension. Castello di Bossi Gran Selezione is made from 100% Sangiovese.

Gran Selezione is the newest quality designation to have been added to the DOCG classification system in Chianti Classico. Gran Selezione takes quality controls a step further than Riserva-- which previously occupied the top tier-- by banning the use of any purchased, or non-estate-grown fruit, in the inclusion of a wine labeled Gran Selezione. This coupled with longer aging requirements (30 months minimum) and minimum levels of alcohol set to 13% designates a band of wines from Chianti Classico producers representative of the appellation's highest quality potential with often limited availability.

There’s purity to the cherry, strawberry, rose, mineral and herb aromas and flavors in this solidly built red, which shows excellent balance and length. The muscular finish begs for more time for the beautiful fruit to assimilate. Best from 2025 through 2042.

Our 2016 Napa Valley Cabernet is a classically built wine typical of this wonderful Napa vintage: deep fruit, enveloping texture, mineral freshness and long supple structure. It’s a harmonious interweaving of four distinct vineyards that intricately balances power and finesse.

With its exceptional farming and rocky volcanic soil, Meteor Vineyard is one of the finest sites in Coombsville. Its fruit dominates the blend and ensures both intensity and delicacy, with soaring aromatics followed by succulent dark fruit. 

True Dog Knoll serves as a new focal point in this vintage, its world-renowned west Oakville deep gravel soils bringing deep texture and mineral focus. 

Layering in a small amount of Petit Verdot from our Roach Estate in St. Helena provides an element of blue fruit and refinement that balances beautifully with the darker brooding power of Ballard Vineyard’s mountaintop muscle and structure.

With its harmonious layers and textures, this wine reminds me of the 2012 Napa Valley vintage. Dark, inky and opaque, it presents aromas of plum, violets and graphite. Beautiful fruit cascades almost immediately to more savory flavors: crushed rock dustiness, cocoa and cedar. A good, firm mineral spine runs through to the long, bittersweet finish. Ever-evolving in the glass, this wine is poised now and will age beautifully over the next 10+ years.

A ripe, friendly style, with a creamy-textured core of cassis and cherry preserve flavors underscored by anise and apple wood notes that stay nicely

melded with the fruit on the finish. There’s a lingering cast iron note keeping this grounded.

La Ronciere Licanten Cabernet Sauvignon is made from 85% Cabernet Sauvignon, 8% Syrah, 7% Cabernet Franc.

Hand-harvested and field-sorted. Morlet Family Vineyards Mon Chevalier Cabernet Sauvignon is made from 94% Cabernet Sauvignon 6% Cabernet Franc .

Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Dark red with a hue of purple. The 2017 'Mon Chevalier' is rich, deep and unctuous, with all the character that makes wines from this site so exciting. Graphite, inky blue/purplish fruit, spice and lavender infuse the 2017 with tremendous complexity. In the glass, the 2017 is savory, rich and expansive, not to mention hugely appealing.

 Nickel & Nickel DeCarle Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Polished and approachable, the 2018 vintage offers an alluring floral-berry perfume and pops of dark, wild berry and clove flavors. There’s serious volume on the palate, supported by firm tannins and dusty-earth accents that are hallmarks of the Rutherford Bench. The 2018 growing season kicked off in late February and eased into a mild spring that gave us extended flowering and uniform clusters throughout the vineyard. Pine Ridge Napa Valley Cabernet Sauvignon is made from 80% Cabernet Sauvignon, 8% Merlot, 7% Petite Sirah, 5% Malbec.

While admiring the cranberry red hue, forward fruit aromatics of black cherry and cassis begin to make your mouth water before the first sip! On the palate, juicy notes of blueberry compote and cherry cordial meld seamlessly with hints of cinnamon and cream soda. The wine methodically transitions from the bright, round entry through the viscous midpalate and onto a broad-shouldered finish. This is where hints of clove, graham cracker and toasted marshmallow are juxtaposed with those of dark roast coffee and Bing cherry. Siegel Gran Reserva Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 
Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occuring at 27-29 degrees C to better extract polyphenols from the wine. Post-fermentative maceration for 2 to 3 weeks. Once the wine has been blended it is smoothly clarified. Aged in French oak barrels for 10 to 12 months.

The grapes for the Gran Reserva wines are the product of a careful selection of Siegel's best vineyards in the Colchagua Valley, harvested by hand, and revealing a strong expression of the land.

The wine displays a deep purple-red hue with a cranberry halo. Aromas of cassis, cinnamon, citrus oil, roasted meat, and lilac swell from the glass.

Coming from the Winfield Vineyard in Calistoga, the 2016 Cabernet Sauvignon is another brilliant wine from the hands of winemaker Thomas Rivers Brown. This deep purple-colored effort boasts tons of blueberry and jammy blackberry fruits as well a medium to full-bodied, concentrated, yet elegant style on the palate. It has the purity of fruit that’s the hallmark of the vintage, ripe, sweet tannins, and no hard edges, and is already hard to resist.
