Winemaking

Winemaker's Notes

Explosively and exotically nuanced aromas of crème de cassis, Himalayan blackberry, black roses, dried violets, pencil shavings, crushed volcanic rock, and liquefied river minerals. While extremely dense and concentrated, this wine has a lot of grace and poise on the palate. The finish of inky deep black fruits, richly refined oak tones, and exotic floral notes, is utterly bewitching. Leave it for 5-7 years if you can or decant well before drinking. This is a 30-year wine in the making.

Lastly, and a wine that stopped me in my tracks, the 2021 Cabernet Sauvignon Block 47 might be the wine of the vintage. Revealing a dense purple hue as well as incredible aromatics of caramelized red and blue fruits, classy oak, lead pencil shavings, and a Latour-like sense of minerality, it hits the palate with full-bodied richness, building tannins, a stacked mid-palate, and a great, great finish. I love its balance and purity, but I suspect it’s going to demand bottle age.

Cassis, blackberry and cherry. White pepper, ground herbs and the strong floral perfume of crushed violets. Light and elegant, but structured with fresh acidity.

40% Whole bunch ferment in small open vats. 60% destemmed and fermented in a 5000 ltr wooden fermenter with gentle pigeage (punch down of the cap) throughout. Pressed in a traditonal wooden basket press and racked into a 3000 litre oak vat for 9 months.

"The 2017 Syrah comes from Elgin and Greyton and includes 40% whole-bunch fruit aged in 500- and 700-liter barrels (30% new). It has a gorgeous bouquet of raspberry, pomegranate, burning embers and crushed violet aromas that seem to give the olfactory senses a big hug. The palate is quite brilliantly balanced, the fine tannins framing vivid brambly red and black fruit laced with cracked black pepper, dessicated orange peel, clove and an undercurrent of garrigue that becomes more prominent on the persistent finish. Luis Canas Reserva Seleccion de la Familia Rioja is made from 85% Tempranillo and 15% Cabernet Sauvignon

The “family reserve” from one of Rioja Alavesa’s most enduring family-run wineries. Wines destined to be the Reserva de la Familia label are made from a selection of grapes from old vines, those which combine a series of characteristics such as good orientation and exposure to the sun, and a poor soil which ensures low yields.

This wine is one of very few Rioja wines to blend Cabernet Sauvignon with Tempranillo. Bodegas Luis Cañas was granted permission by the D.O.Ca. to plant this variety as an experiment in the early 1980s.

Tasting notes
A brilliant garnet color with cherry hints on the edges.
The nose offers a complex variety of aromas that combine to bring an intense and sophisticated wine. Initially we can find very ripe berry fruits, smoky notes, raisins and liquor. After a certain amount of aeration, the cinnamon and jam notes appear and, with a little more time, the roasted and spiced aromas are noticed more clearly.

The palate is full, with a good presence of tannins, although these are offset by the glycerine like character, resulting in a fleshy sensation. Long lasting and lingering finish.

Winemaking and aging:
The grapes were cold macerated for 72 hours upon arrival at the winery. They underwent fermentation at 26º C in sealed cement tanks under constant thermal control, with the must pumped over daily. With the paste devatted by gravity, spontaneous malolactic fermentation took place after 45 days.
The wine was aged for 20 months in 50% medium toasted American and 50% French oak barrels. The barrel ageing not only adds tannins from the wood, but stabilizes the wine naturally. After the final racking, it was clarified in tanks with a small amount of natural egg white, decanted after 30 days and bottled directly without any type of filtration. Because this wine’s evolutionary cycle is quite slow, only corks of the highest quality available were used to ensure that it could be prolonged for several years.

Including 15% Cabernet Sauvignon, the Tempranillo-dominated 2019 Rioja Reserva Selección de la Familia is a crème de la crème selection that was aged 20 months in oak. Its deep purple hue is followed by a sensational nose of ripe black and blue fruits, cedarwood, graphite, smoked tobacco, and chocolate. This carries to a full-bodied Rioja with a powerful, layered mouthfeel, ripe yet building tannins, and serious length on the finish.

Maysara Jamsheed Pinot Noir  is made of 100 percent Pinot Noir

According to ancient Persian legend, King Jamsheed was able to observe his entire realm by peering into his full wine goblet.

Beginning with a generous core of red-black fruits, the McMinnville AVA saunters over the palate with both bravado and grace. Blackberry and fresh cracked pepper entwine perfectly with matured and lengthy tannins on the finish. The depth of this unassuming bottling is always an adventure to mine. Some older prospectors hear tell of herbal notes… silver sage? rosemary?

Maysara Sparkling Pinot Noir Rose is made from 100 percent Rose. 

A stunning sparkling rosé made with 100% Pinot Noir grapes, that is balanced with high tension acidity and minerality. The fine bubbles keep the aromatics tight with a clean finish of dried cranberries, pomegranate, and wild strawberries.

Pair with soft cheeses, fried chicken, oysters, Mediterranean salads.

ER2 is characterized by the intensity that is the signature of the grand crus of the Côte des Blancs and by the complexity of its perpetual reserve. A delicate, slightly coppery, pink.

This second edition made up of 75% of Chardonnays of different ages benefits from the richness of the 2012 vintage and the perfect balance of the 2014 vintage that occupy a large place in the heart of an intensified perpetual reserve.

ER3 is the very essence of balance and delicacy – the intensity of Côte des Blancs grand crus and the complexity of its perpetual reserve are combined with immense finesse.

ER3 reveals an extremely delicate, blush pink hue. The nose is superb, with a beautifully complex and delicate aromatic palette that offers up aromas of white flowers, redcurrant, and wild strawberry, before unveiling slightly smoky notes. With a particularly fine and ethereal effervescence, the mouth is fresh and vibrant with superb white fruit and citrus evolving into more complex notes of candied fruit, soft spices, and toasted almonds. The finish is incredibly persistent, underpinned by a magnificent chalky minerality.

The wine is aged on lees in the dark in our cellars for three years.

Mordoree La Remise Mordoree Rose is made from  Marselan 35% (Marselan is a cross between Cabernet Sauvignon and Grenache) , Merlot 35%  Syrah 15%,  Grenache 15%.

Color : light rose
Aromas : flower : roses, fruits : strawberry, red currant and citrus
Palate : mouthful, rich.
Best to drink 2 years.

Pairs well with white meats, Asian cuisine and excellent as an aperitif.

Mordoree Tavel Rose Plume de Peintre is made from 60% Grenache, 20% Syrah, 20% Clairette.

Deep rosé color. Complex and intense aromas of red fruits. The palate is elegant and offers a great balanced acidity. The wine has a long lasting finish.  

Risotto with crayfish and asparagus, duck breast roasted with honey, poultry with morels. 

Review:

The ultra-premium, tiny-production 2023 Domaine De La Mordoree Tavel La Plume Du Peintre is based on 50% Grenache, 20% Syrah, and the balance equal parts Clairette and Cinsault, all of which was brought up in barrel. It pushes the boundaries of what rosé is and can be, getting closer to a light red than a traditional rosé, which may be where Tavel fits best anyway. It shows a translucent ruby hue and offers complex yet still reserved aromatics of red cherries, sappy garrigue, spicy nuances, and a touch of background oak that’s beautifully integrated. This carries to a medium-bodied, almost medium to full-bodied rosé with a pure, layered, elegant mouthfeel, integrated acidity, and flawless overall balance. Despite being raised entirely in wood, this is one of those rare high-end rosés that brings greater richness, depth, and complexity while still staying light in feel, balanced, clean, and crisp. It’s geared for gastronomy and is an incredibly classy rosé that should have another year or two of prime drinking.

Opus One is made from 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec .

The Opus One is remarkably elegant and bright offering sumptuous aromas of fresh red and blue fruit, baking spices and vanilla, and a delicate fragrance of spring florals. The initial bouquet is augmented by more nuanced notes of sage, rosemary, and black olive. Juicy flavors of black cherry, blackberry and cassis flood the palate and creamy, fine-grained tannins deliver a delightfully round structure. Harmonious and lively, the flavors linger to create an enduring finish with touches of dark chocolate and espresso.

Bringing a passion for excellence to everything he did, Robert Mondavi led a renaissance in California fine wine for over six decades. Among other accomplishments, he introduced temperature-controlled fermentation, French oak barrel aging, and high-density viticulture to a fledgling American wine industry. But life was not only wine for Robert Mondavi: he broadened the American cultural palate by marrying fine wine to food, music, and the arts. One of few Americans to have received the French medal of the Legion of Honor, Robert Mondavi showed extraordinary vision as co-founder of Opus One.

Review:

The purity of fruit is really something else here, with currants and fresh flowers, such as violets and roses. Flower stems as well. Fantastic length and structure to the wine, with tightness and focus. Wonderful fruit. Graceful. A blend of 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec. Try after 2028.

Ottella Lugana DOC Riserva Molceo is made from 100% Trebbiano di Lugana - 25-30 years old.

The wine is produced in the area of San Benedetto di Lugana in estate vineyards that are most suitable due to the high content of white clay.

COLOR • Golden, clear, intense.
NOSE • It immediately opens with fruity notes that are enchanting, penetrating and complex. Characterized by hints of citrus fruits, flowers and fine mineral and elegant notes.
PALATE • Complex and intense blend of mineral flavors; captivating, long, lively, both in the persistence and in the strength of the flavors, mingling with unmissable citrus sensation. A delicate evolution, fine flesh, perfect longevity.
Since 2009 it has won every year the TRE BICCHIERI GAMBERO ROSSO award.

The harvest and selection of the grapes are done strictly by hand, in small 17 kg crates.
PLANTING LAYOUT AND YIELD • Double bow Guyot, yield around 8,000 kg. of grapes per hectare, equivalent to 5,040 liters of wine or 63%.
HARVEST PERIOD • Harvest late in October.
FINING AND FERMENTATION • Delicate, soft pressing of the whole bunch for most of the production, the rest with gentle destemming by oscillation. Thereafter, a strict protocol of vinification: partial malolactic fermentation, fining for 16 months on the yeast and fine lees, which mostly takes place in stainless steel tanks (80%) and the rest in wooden tonneaux and barriques.

Stimulating with marine or freshwater fish, it also goes well with savory or fatty meat (goose or pork). Enjoyable with seasoned, herbal cheeses of various types and elaborate dishes.

This riserva Lugana opens with aromas of baked nectarine with an almond crumble, followed by wafting notes of pressed wildflowers and poached lemon peel. The palate is rich, showing a lime and tropical-fruit cream note topped with sea salt, but balanced by the electric acidity on the finish. Super tasty!

Elegant and delicate in its sensorial profile, it shows notes of rose petals, linden, geraniums, hawthorn and lime. Medium-full body, radiant and essential in taste, it shows grace and personality and a truly Mediterranean aftertasting. Nice and tasty, fresh and vibrant! One of the best Lugana tastings. Paradigm Cabernet Sauvignon is made from 90% Cabernet Sauvignon, 8% Merlot, 1% Petit Verdot, 1% Cabernet Franc

Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

The 2015 vintage produced delicious concentrated wines in smaller quantity than normal. This black raspberry colored Cabernet has lovely open aromatics of black cherry, berry, and plum layered with a perfect balance of new and used French Oak.

Pierre Olivier Sparkling Rose NV is a value sparkling rosé, made with Tempranillo grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
This wine is aromatized with a very little amount of Raspberry flavor, giving a nice mouthfeel, with an extra aromatic boost.

The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.

"Pale pink salmon. Just a touch off-dry, this is a very pleasant sparkler that reveals aromas of spicy red apple with a hint of cinnamon that carry through to the palate. Well made and exceedingly pleasant to drink."

Pike Road Shea Vineyard Pinot Noir is made from 100 percent Pinot Noir. 

Tasting Notes

Rich and complex, black cherry, confectionary strawberry and dusty rose waft up from the glass. An expressive palate follows with juicy black cherry and pomegranate alongside notes of tropical mango and coconut in a slightly gamey, smoky finish.

About Shea Vineyard

Shea Vineyard sits in the heart of the Yamhill-Carlton AVA and is farmed by our friends Dick & Deirdre Shea. This is arguably the most famous vineyard for Oregon Pinot Noir because of the many well-known wineries that make a Single Vineyard Shea wine, including our sister brand Elk Cove Vineyards and neighbors Ken Wright, Bergstrom, Penner-Ash and others. This balanced wine has one of my favorite aromas of all time—the caramel and brioche-like cookie scents of a Stroopwafel cookie. These divine scents are joined by red cherries and chalkboard dust. The 2021 Quilceda Creek Cabernet Sauvignon is a wine for the ages. Potent aromas jump out of the glass, showing framboise candy, black tea, and a strong classic note of sandalwood. - The head-turning 2022 Quilceda Creek ‘Columbia Valley’ Cabernet Sauvignon has 10% Mach One Vineyard fruit blended in, with the remainder coming from the famed Champoux Vineyard in the Horse Heaven Hills AVA. The nose is beyond alluring with toasted walnut and gorgeous purple rose petals that combine with boysenberry cordial, Turkish coffee and shades of dark licorice. The crazy complex aromatics bring you back to the glass for more enjoyment. Pillowy and opulent on the mouth, the seamless texture leads alongside outstanding weight and finesse. This is a perfect wine in a vintage that shows what can be accomplished in a slightly cooler year. Savor this remarkable achievement over the next twenty plus years to come.

Owen Bargreen 100 Point

Salette Floc Gascogne Blanc NV  is made from  1/3 of Armagnac and 2/3 Colombard fruit juice

 Intense fruity and floral aromas. Round, fresh and fruity in the mouth.  Almond, jasmine, roses, honey, black fruit and condiments are characteristic notes.

The alcohol percentage is between 16–18 % vol. After blending, the Floc is kept for 10 months in the cellar of the producer and must be approved by a committee of experts before it can be sold under the appellation Floc de Gascogne.

It is used as an aperitif most often, but also as a dessert drink. It should be consumed while cool, and is suberb on ice.
