This methode traditionnelle sparkling wine is aged for minimum 18-24 months in cave before disgorging. The dosage is 12 g/l residual sugar and the wine is aged for minimum 3 months after disgorging .

Grand Veneur Chateauneuf du Pape Blanc Le Miocene is made from 60% Clairette, 40% Roussanne

Pale yellow colour with hints of green, aromas of white flowers (may blossom, honeysuckle).
The palate is pleasantly balanced between liveliness and roundness, which brings out characteristics of dried apricot, honey and elderberry. A Châteauneuf du Pape white displaying a great finesse.

Best between 1 and 8 years.

Soil type Coming from the single vineyard named “La Fontaine”, the plot is facing north.It is made of clay-sand and limestone. Thanks to the northern orientation, it is always very well aired. This sector allow the Roussane and Clairette to mature in great conditions without losing freshness, which we believe is key point. Winemaking & ageing Whole-bunch pressing. Vinification in stainless-steel tanks. Fermentation temperature controlled at 15°C.

"The classic white from this estate is the 2021 Châteauneuf Du Pape Le Miocene Blanc, and it shines in the vintage. Based on 60% Clairette and 40% Roussanne, it has a lighter gold hue as well as textbook aromatics of citrus, pears, and minty herbs. I love its balance, it’s medium-bodied, has the vintage’s fresher style, and outstanding length. It should evolve gracefully, and while the safe bet is to enjoy bottles over the coming 2-4 years, I wouldn’t be surprised to see this evolve for well over a decade."

Grand Veneur Chateauneuf-du-Pape Rouge Les Origines is made from 50% Grenache, 30% Mourvedre and 20% Syrah

Matured in vats (grenache) and in oak casks (syrah and mourvèdre).

Deep and brilliant, purple-red colour. An exciting nose with aromas of black fruit (blackcurrant, cherry) spices and vanilla. This great aromatic complexity is found on the palate : the spices and ripe fruit appear with an elegant woodiness and harmonious tannins. The finish has good aromatic length and introduces a touch of liquorice and pepper.

A terrific Châteauneuf du Pape with great concentration and finesse.

Best between 2 and 20 years. Best to decant if young (less than 5 years old).

Soil type Extreme north of Châteauneuf du Pape. This plateau is made with a high quantity of red clay mixed with rocks. It is located in the lieux dits of "Champauvins" and "Coudoulet". A small lane of rocks going through the rocky plateaux has been decided to be the AOC limit in 1936. Here, soils are made of red clay and rocks (pebbled stones of quartz). The quantity of rocks can be amazing as they can completely cover the soil. In summer and during the day, the rocks temperature will increase to 55°C. This accumulated heat will be get back to the vines during nights. Day after day, this unique phenomenon allow the grapes to reach a perfect maturity and produce a unique wine.

 Heritage School Julies Creekside Cabernet Sauvingon is made from 100 percent Cabernet Sauvignon.

The Cabernet Sauvignon Julie’s Creekside Vineyard is an impressive, opaque purple colored wine that is super-concentrated and extracted with relatively sweet tannins, a touch of chocolate and espresso, a full-bodied mouthfeel and pure, dark, primordial fruits. This is a big, masculine, concentrated wine set for long-term aging. Saying that, it has a certain accessibility, but won’t hit its prime for at least another 8-10 years and keep 25-30.

Michel Magnien Morey-Saint-Denis Climats D'Or 2020

Domaine Michel Magnien has evolved into a Burgundy producer of a singular style and philosophy from cellars located in the village of Morey-Saint-Denis. In 1993, Frédéric Magnien persuaded his father Michel to begin domaine bottling. The domaine is now certified biodynamic by Demeter and the wines are produced without the use of new oak. 

The domaine’s 45 acres are spread across the villages of Morey-Saint-Denis, Gevrey-Chambertin, Chambolle-Musigny, and Vosne Romanée, with holdings in several premier cru and grand cru vineyards. These include the grand crus Clos de la Roche, Clos Saint-Denis, and Charmes-Chambertin. Frédéric Magnien maintains an average vine age of 50 years. 

Morey-Saint-Denis 1er Cru "Climats d'Or" is a blend of five premier crus in the village of Morey-Saint-Denis: Cheseaux, Charrières, Clos Baulet, Chaffots, Monts Luisants. The wine was fermented with indigenous yeasts in stainless steel tanks followed by several months aging in half terracota amphora & half used pièce. Around 20% whole clusters were included in the cuvée.  

Morey-Saint-Denis 1er Cru "Climats d'Or" combines the structure of Gevrey-Chambertin with the perfume of Chambolle-Musigny. This wine shows fresh red berries on the nose with notes of violets, spice, and earth. Old vines and heavier soils give this wine weight and richness on the palate.

Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.

Piron Morgon Cote du Py 2021

Dominique Piron Morgon Cote du Py is made from 100 percent Gamay.

The Morgon Cru is based in the heart of Northern Beaujolais. Côte du Py is the heart of Morgon, a little hill of very old blue stone rocks - the oldest soils of Beaujolais (around 430 millions years old), with a typical blue color.
Côte du Py has been known for centuries for being the best terroir of the village, producing long lived wines with strong structure and flavors.

Wines of the Côte du Py are very dark, profound and dense. Classic aromas of red berries, cherry, kirsh. Fruity, structured and mineral in the mouth with graphite flavors and spicy notes of black and white pepper. Wine can age up to 10 years.

Hand picked grapes are sorted manually and destemmed for 50 to 70%. Fermentation starts in concrete tanks and lasts for 18-25 days with remontages and pigeages. Then after pressurage starts the aging, for 2/3 in concrete tanks, and 1/3 in recent French oak barrels with batonages on fine lies only. After 10 month we do the blending, keeping only the best cuvees and best barrels, and do the bottling.

Pairs well with red meat like beef, duck and game (Hare, Dear, Wild Pork,…), cheses.

The olfactory impact is of considerable aromatic intensity: it expands with notes of small, fully ripe red fruits, accompanied by clear balsamic and Mediterranean hints. It develops in a balanced fusion between the broad minerality and the fine and enveloping tannins. Everything is found in the long final persistence that foreshadows a long life ahead.

Goes well with game, as e.g. local preparations of wild boar, roast, braised and stewed red meats, and medium aged cheese.

The 2019 Bolgheri Superiore Grattamacco (a blend of 65% Cabernet Sauvignon, 20% Merlot and 15% Sangiovese) is a real beauty and shows very nicely today based on advancing vine age alone. Cabernet Sauvignon and Syrah vines show great results after seven years, whereas Merlot and Sangiovese vines need a few more years before they start to show that extra degree of complexity, the winemaking team tells me. This is a complete and beautifully balanced wine that shows soft extraction and especially sweet tannins. It fermented in truncated conical oak vats and finished in barrique for 18 months.

Very nice effervescence, fine bubbles - A nose spawn with notes of mature fruits such as quince and yellow fruits jelly. Aromas of biscuits and honey at the end of the palate, which remains supple, well structured, and with a beautiful length.

Roland Champion Champagne Blanc de Blancs NV is aged for minimum 30 months (the minimum for NV is 15 months). This cuvee is made from 100% Chardonnay and is produced from the free run juice only. The current release is the result of the blend of the 2005, the 2006 and the 2007 vintage.
Fresh and delicate, its fine bubbles and wide range of aromas will be perfect as an aperitif. This Champagne will also match very well with seafood and shellfish.

The House of Trouillard has incredible holdings on the Côtes de Blancs. The vineyard's rating average 94-95, just one of the reasons the Blanc de Blancs has such incredible raciness and elegance. It is a Cuvée of eleven different Crus in the Reims Mountain, the Côtes de Blancs and the Sézannaise region and is the specialty of the house.


Trouillard Blanc de Blancs Brut NV is made of 100% Chardonnay with a green-gold color, characteristic of Chardonnay, and with fine persistent bubbles. This wine has an aroma that jumps out of the glass and is very inviting. On the nose there are seductive scents of warm almond croissant and honey, lightened by some floral notes. Crisp and refreshing in the mouth and lively with a very refined fruitiness and a touch of smokiness typical of wines from the Côtes des Blancs. The elegance and subtlety of the Chardonnay are to be especially appreciated as an aperitif, and nicely accompanies shellfish and fish. 
It has become the favorite of those who know Champagne Trouillard.

Xavier Vignon Chateauneuf du Pape Rouge 2020

Xavier Vignon Chateauneuf du Pape Rouge is made from 65% Grenache, 20% Mourvèdre and 15% Syrah.

A clear and very expressive nose with notes of black fruits, spices and licorice. The mouth reveals tanins that are already supple with a great balance.
The finish is long, on black fruits, licorice and a slight salinity.

Xavier Vignon Chateauneuf du Pape Rouge is made from grilled rib of beef, roasted duck with figs, boar stew.

Xavier Vignon Chateauneuf du Pape XV Rouge 2018

Xavier Vignon Chateauneuf du Pape XV Rouge is made from 50% Grenache, 45% Mourvèdre and 5% Syrah. From 100 year old vines. 

It shows a bit of toasty oak up front but balances that with ample black cherry fruit and soft, dusty tannins. Long and harmonious on the finish, it should drink well on release in 2019 and for a decade or more after that.

Pairs with beef with mustard sauce - Pork tenderloin with winter vegetables - Roasted duck - Malaysian pork chop and spice tea.

Review:

Checking in as equal parts Syrah and Mourvèdre, the 2018 Châteauneuf Du Pape XV will certainly be an outstanding wine. It sports a deep purple color as well as lots of black and blue fruits, leafy herbs, cracked pepper, and a touch of minerality. Medium to full-bodied, it has good balance, terrific purity, and outstanding length.

Xavier Vignon Cotes du Rhone Rouge Cuvee Vieilles Vignes Organic 2019

Xavier Vignon Cotes du Rhone Rouge Cuvee Vieilles Vignes Organic is made from 50% Grenache, 40% Mourvèdre, 5% Syrah and 5% Cinsault.

The diversity of terroirs used in this blend allows this wine to combine freshness and balance.

We used Clay and limestone plots located on the hillside where old Grenache naturally express roasted hints. We could obtain in this wine empyreumatical hints without the use of barrels. These plots particular soils and orientation allowed grapes to reach an optimal level of ripeness while conserving a good acidity level.

We also integrated grapes coming from plots located on red rocky clay soils also named “garrigues”. These big red stone are restituting heat coming from the sun at night and bring power and structure to the wine.
Also the blend features vines coming from sandy clays, which are light and rather fresh soils: this allowed the wine to maintain a freshness and vivacity.

Bouquet of cassis, blueberries, lavender, cured meats, and graphite. It's deep, rich, medium to full-bodied, and has a great finish. The Mourvèdre keeps this tight and fresh.

Pairs with grilled beef rib - Veal Columbo - Pork ribs slightly spiced
