Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.

The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.

Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Intense, aged, but not sweet (deliciously not more than 45g/l). Fab with cheese or dark chocolate. The wines have to be a minimum of 10 years; this release is more than 25 years. Pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse. 

Visual aspect: Straw yellow color with persistent mousse. 

Aromas: Fruity notes of delicious Golden apple and Kaiser pear with a pleasant citrus background. 
Mouthfeel: The wine is well balanced with a nice acidity and minerality, combined with freshness and complexity. 
The finish is long and very pleasant.

Area of origin: Valdobbiadene, Conegliano, Vittorio Veneto.

Roland Champion Champagne Cuvee Aramis Brut is made from 70% Pinot Meunier, 20% Pinot Noir and 10% Chardonnay.

Very nice effervescence, fine bubbles - A nose spawn with notes of mature fruits such as quince and yellow fruits jelly. Aromas of biscuits and honey at the end of the palate, which remains supple, well structured, and with a beautiful length.

Black grapes from Verneuil and Vandière in the Marne Valley, argilo-limestone soil. Chardonnay grapes from Chouilly, “Grand Cru” from the famous “Côtes des blancs”, limestone soil and subsoil.

Roland Champion Champagne Blanc de Blancs NV is aged for minimum 30 months (the minimum for NV is 15 months). This cuvee is made from 100% Chardonnay and is produced from the free run juice only. The current release is the result of the blend of the 2005, the 2006 and the 2007 vintage.
Fresh and delicate, its fine bubbles and wide range of aromas will be perfect as an aperitif. This Champagne will also match very well with seafood and shellfish.

This Junmai Daiginjo has a beautiful nose full of banana, melon and star anise. The all natural brewing process gives this sake a bright fresh palate of plum, lime and minerality with a clean dry finish. A very food friendly sake, and is thought to be best after the meal with a light, smooth, rich cow's milk cheese.

Thibaut-Janisson Blanc de Chardonnay is made from  100% Chardonnay

Winemaking Notes The grapes are handpicked in small baskets late August and are gently pressed as whole clusters. After a settling of 24 hours, the juice is inoculated with selected Champagne yeast and ferments in stainless steel tanks at low temperature. Once the fermentation is over, the wine ages on the fine lees until the spring of the following year. The blend is then put together and cold-stabilized prior to bottling. The bottling occurs in the spring when the cellar temperature is conducive to a second fermentation in the bottle. The now sparkling wine will age on the yeast for over 24 months. At disgorging, a small amount of dosage liquor is added in order to balance the natural acidity.

The depth of complexity is elegant and the intricate nuances of the terroir fill the nose and stimulate the palate. It’s full of youthful, bright and alert acidity.

Charmat method.

The wine is produced from grapes that grow in the highlands of the Mendoza River. Its second alcoholic fermentation with a prolonged contact with yeast brings complex aromas of stone fruits, such as white peach, and citrus aromas such as pink grapefruit and tropical pineapple. The palate reveals good acidity and freshness.
