Siegel Special Reserve Carmenere is made from 100 percent Carmenere.

Viña Siegel is a family operated winery with a well-established tradition and long history. For generations we have been dedicated to the art of crafting wines with strong identities. Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Carmenere has been aged for 12 months in French oak barrels. It has an intense violet-red color, with aromas of black fruits, spices, dark chocolate and dried figs. The palate is balanced and juicy with velvety tannins and a long finish.

Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C for a deeper colour and better structure. Smooth pump overs happen once a day at the winemaker’s discretion. Post-fermentative maceration for 2 weeks. Then the wine is separated from its lees and malolactic fermentation ensues. Once the wine has fermented it is smoothly clarified and cold stabilisation occurs when necessary.

It pairs well with spicy foods, pasta with mushrooms and roasts

Siegel Special Reserve Chardonnay is made from 100 percent Chardonnay.

This Chardonnay has a pale yellow color. On the nose is is complex with citrus and tropical fruit aromas balanced with notes from the oak aging. On the palate it has good acidity with a long finish.

VINIFICATION: Alcoholic fermentation occurs at 16-17 degrees C. When the alcoholic finishes part of the wine is kept on a pump-over program.

FINNING AND FILTRATION: Once the wine has been blended it is clarified and then undergoes cold stablisation and is later filtered through clay.

AGING: Aged in French oak barrels for 6 months.

Pairs well with fish like Tilapia, salmon and white meats.

Smith Woodhouse Vintage Port 1991 has been pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse. 

Sobrenatural Tinto Organic is amde from 80% Tannat and 20% Malbec from Chakana’s Finca Nuna vineyard, fermented with indigenous yeasts. Sobrenatural is a new line of certified biodymanic and no Sulphur added wines from Chakana’s Nuna vineyard.

Deep, dark fruit aromas. Firm tannins balanced by a juicy, soft texture, good acidity and length.

Pairs with empeñadas, pork chops, Chorizo, spicy food, grilled vegetables.

Fermented with native yeasts in concrete vats for 6 months (no epoxy sealing). No fining, no filtration, no additives. NO SULFITES ADDED.

Sylvestra Malbec  is made from 100% Malbec. 

Very attractive ruby red color with dark tones. Aromas of black fruits, cherries and raspberries, spicy notes of red pepper.
The palate is fresh, fruity and well-balanced, with sweet and ripe tannins.

All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.

This 100% Chardonnay blend is made from Tête de Cuvée, or first pressing of the grapes, considered superior in quality, with a high percentage of reserve wines for extra complexity, depth and richness, and a low added dosage to preserve purity and freshness. 

 

Thibaut-Janisson Virginia Fizz is made from 100 percent Chardonnay.

Virginia Fizz is a fun and festive sparkling wine, great for all life’s celebrations. It is cremant style made of 100% Chardonnay. Packed with apples and peach flavors, the wine has a very creamy and smooth texture. The myriad of tiny bubbles will tickle your taste buds.

Refreshing on its own, but perfect mixed as a cocktail!

Dense purple hues, with evocative aromas of black cherries, ripe plums, nectarines, boysenberry, wild bramble and exotic oak spice. The juicy and sweet-fruited palate entry, combined with crunchy tannins, lures one into a sense of overtness, yet the wine is sublimely elegant and poised. The complex layers of fruit is in perfect harmony with the oak, all bound together by a lively seam of acidity. The finish is pleasantly dry and savory, with lingering notes of Christmas cake and vanilla pod.

Pair with barbequed meats, especially venison and beef / bobotie / lamb curry / seared tuna / spicy Asian-styled cuisine / aromatic curries / duck with sweet plum sauce / beef or lamb burgers / pizza

Wolfberger Auxerrois  is made from 100% Auxerrois

Auxerrois blanc is thought to have originated in Lorraine, rather than near Auxerre in the Yonne. Recent DNA fingerprinting suggests that it is a cross between Gouais blanc and Pinot noir, the same ancestry as Chardonnay. The name Auxerrois blanc has actually been used as a synonym for Chardonnay in the Moselle region in France, which explains why there is also a longer name (Auxerrois Blanc de Laquenexy) for the grape variety.

This pale yellow Auxerrois Pinot Blanc shows an intense nose of fresh white fruits, rhubarb and spring flowers. Easy to drink and fresh on the palate, this wine ends on a fruity and crunchiness tast.

Alcoholic fermentation at 16°C followed by a short fermentation at 18°C allowing to keep some crispiness to the wine. 
Then the wine was aged on the fine lees for 6-7 months. No Oak. 
No Malo-Lactic fermentation. 
Right before bottling, the wine was filtered using a tangentiel filtration system.

Quiche, grilled fish, rhubarb pie, mixed salad, and also fresh sheep milk cheese.
