Winemakers Notes

Most of the blend is tipped into open-top fermentation tanks for preferment soak prior to the fermentation starting naturally with indigenous yeast, another portion is tank fermented with pump over, then a very small portion is kept as whole berries and sealed for carbonic maceration fermentation. Once the fermentations have finished, a partial micro-oxygenation is started which helps the wine to remain softer and rounder earlier.

This sweet white wine starts with Welch’s 100% USA grown grapes that go from vine to press within 8 hours. Through the hard work of their 700 growers, St. James Winery is able to craft this sweet and bright white wine with a beautifully smooth finish. Stella Aurea is a Chilean red made from 90% Cabernet Sauvignon, 7% Cabernet Franc and 3% Petit Verdot. 
Expressive and complex, berries and minty, balsamic tones.
Wide and dense palate with fine tannins and silky texture.

Hand harvested- Wine is aged at least 6 months in bottle,  with further aging potential of 15 years. 

All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.

Toso Asti Spumante is made with 100 percent Moscato d' Asti

Sweet, aromatic, fruity and floral sparkling wine, moderate in alcohol, with fine sparkle and long lasting perlage. Of yellow straw color, it is a fine and elegant wine, ideal to celebrate every joyful event.

Toso Asti Spumante is made from Moscato grapes grown on hills in the South of Piedmont An early picking insures a higher acidity and a more floral bouquet. The grapes are crushed immediately to avoid any oxidation which might detract from the wine's aromas. The grapes are gently crushed and the juice is settled, centrifuged and filtered. The purified musts are placed in stainless steel tanks and held at near freezing temperatures which blocks completely any fermentation. This enables the producers to draw batches of fresh must whenever they decide to bottle. The batch of must is then inoculated with special yeast and fermented in an autoclave to retain the naturally produced carbon dioxide. The fermentation is stopped by a rapid chilling when the wine reaches the desired ratio of alcohol (standardly 7%) to residual sugar ( 3-5% ). The wine is then filtered, bottled and, at Toso, immediately shipped to ensure the freshest product possible.

 Toso Fragolino Rosso Spago is an aromatized drink made of wine and strawberry with fine and fruity flavors. Serve cool at 8 C. Excellent as an aperitif, with desserts as well as for cocktails or simply on its own.

Rich aromas of honeycomb, baked apple and toasted bread. The palate is firm yet rich — a seamless expression of restraint and elegance. The silky texture extends through a lingering finish with hints of Mandarin orange peel and sweet Asian spice. This Chardonnay will continue to develop over the next five to seven years.

Trouillet Lebeau St. Veran Les Condemines is made from 100 percent Chardonnay.

The wine comes from 70-year-old vines that are ideally located on a south-facing slope in the village of Leynes, on a clay-limestone terroir. Aged 100% in Burgundy barrels, offering a fruity, powerful and charming wine. Beautiful expressive aromas of ripe yellow fruits. Rich, generous, full, crisp and well-balanced on the palate.

Villa Monti Chianti Superiore DOCG Organic is made from 90% Sangiovese, 5% Canaiolo and 5% Colorino.

Ruby red color, with delicious fruity and floral aromas, with a pleasant structure and tannic density, leading to a balanced and persistent finish.

The grapes are coming from Le Tire, Paradiso La Fonte parcels with good sun exposure that gives the wine a lot of roundness and juiciness.

Wimmer Gruner Veltliner is made from 100 percent Gruner Veltliner. 

Crisp lime flavors, white pepper and lentils, followed by a mouthful of mineral notes and gooseberry. A long lingering finish
