Toso Asti Spumante is made from Moscato grapes grown on hills in the South of Piedmont An early picking insures a higher acidity and a more floral bouquet. The grapes are crushed immediately to avoid any oxidation which might detract from the wine's aromas. The grapes are gently crushed and the juice is settled, centrifuged and filtered. The purified musts are placed in stainless steel tanks and held at near freezing temperatures which blocks completely any fermentation. This enables the producers to draw batches of fresh must whenever they decide to bottle. The batch of must is then inoculated with special yeast and fermented in an autoclave to retain the naturally produced carbon dioxide. The fermentation is stopped by a rapid chilling when the wine reaches the desired ratio of alcohol (standardly 7%) to residual sugar ( 3-5% ). The wine is then filtered, bottled and, at Toso, immediately shipped to ensure the freshest product possible.

Fresh, a floral bouquet, a sweet, fruity taste, Excellent as aperitif, best enjoyed with fruit, dried pastries and desserts in general.

THE LEGEND

Dispatched by Jan van Riebeek in search of the perfect place to grow provisions for the Dutch East India Company, Pieter Cruythoff stumbled upon a beautiful valley. But it was more than just the scenic beauty of this valley that had caught his eye; situated in the lee of the majestic Kasteelberg, the winters were mild, the summers were hot and the soil was uncommonly fertile. What's more, ships spotted from the lookout point on Kasteelberg were just a day away from Cape Town, and so were the wagons that went to meet them, laden with the treasures of  the Riebeek Valley.

 

TIMELESS JEWELS

While he humbly named the valley after his patron, Jan van Riebeek, we feel it is only fitting that our valley's most coveted treasure should carry the name of its founder. So, in honour of Pieter Cruythoff, this range of fine wine bears his name.

From the vibrant whites to the seductive reds, each one is a gem gently coaxed from the fertile soil of that same magical valley. Ironically, much of the valley's bounty still finds its way to Europe, and in particular to the Netherlands, the land of Cruythoff's birth. 

 

 

Pierre Olivier Brut Vin Mousseux NV

Pierre Olivier Brut Vin Mousseux NV is made from 100% Airen.

A value sparkling brut, made with Airen grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.

The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.

Charles Duret Cremant de Bourgogne NV

Charles Duret Cremant de Bourgogne NV is made from 70% Pinot Noir, 30% Chardonnay

The appellation Crémant de Bourgogne Contrôlée was created by a decree on the 17th October, 1975. The very important base wine for Crémant comes from pre-selected vines within the Burgundy region. There is a very strict hand sorting of the grapes before they are de-stemmed and pressed before vinification.  The second fermentation takes place in the bottle. Made in the traditional method of bottle fermentation over a minimum of 9 months before de-gorging, dosage de départ  and the final cork being inserted.
The grape varietals are 70% Pinot Noir, 30% Chardonnay. Delicate, long-lasting bubbles are proof of this traditional, bottle fermented, quality sparkling white burgundy wine.  Fresh, fruity flavors with a hint of hazelnuts on the finish.
This Crémant is delicious served as an apéritif or with food, in particular with dishes which have creamy wine sauces. 
It is the perfect wine for receptions.

"The non-vintage Charles Duret Crémant de Bourgogne is composed of 70 percent pinot noir and 30 percent chardonnay grapes. Made in the venerable champagne method — or méthode traditionelle — this delicate, taut and paradoxically creamy sparkling wine offers uplifting aromas of biscuits and hazelnuts and enticing meadowy scents. It’s fashioned in a light, tight, satisfyingly effervescent manner, with a sense of lovely well-knit tone and presence. Flavors of toast and lime zest lead to a slightly spicy, limestone-etched finish. Very Good+ and Great Value at about $20."

 

Maipe Sparkling Brut NV

Maipe Sparkling Extra Brut is made with 50% Pinot Noir 50% Chardonnay Age of the Vineyard: 10 years Irrigation method: drip irrigation Yield: 9800 kg. per ha. Type of Harvest Manual Skin Maceration: Pinot Noir has been pressed in whole clusters, for more delicate aromas and finer mouth. Chardonnay is pressed with no skin maceration. Fermentation with selected yeasts at 14C- 18C Sparkling Method: short Charmat with no lees contact, for freshness and fruitiness. Malolactic Fermentation No Alcohol 11,90% PH 3.20 Total Acidity: 6.7 g/l Residual Sugar: 8 g/l

Tasting Notes: pale yellow with golden hints. Very fine and persistent bubble. Citric nose with creamy tropical fruit. Very fresh and balanced in the mouth with great persistence and citric ending. Pairing suggestions: a versatile wine, good on its own or paired with any food

Cave Carod Clairette de Die

Cave Carod Clairette de Die is made from 75% Muscat Petits Grains and 25% Clairette. Clairette de Die is produced with the ancestral dioise method. 
The grapes are rapidly pressed after the harvest and then placed in vats at low temperatures (replicating the process used by the Voconces in ancient times who kept the jars in the icy waters of their local rivers). The half-fermented must is bottled and fermentation continues in the bottle, giving a naturally sparkling wine. Disgorging occurs at least six months after bottling, while the wine still contains sugar and has reached an alcohol content of 7 to 9 %.

This is a sparkling wine with very fine bubbles, light in alcohol (8°), and containing residual sugar (incomplete fermentation). Clairette de Die has been known since ancient times (dates back to 77 A.D.). Clairette brings delicacy and lightness to the wine whereas Muscat gives its typical sweet flavor. The wine displays intense aromas, a refreshing balance of fruit and acidity with peach, orange and white flowers flavors.
This is an ideal wine for all desserts and ice creams, and is very interesting with foie gras. It is especially suitable for daytime meetings and cocktail parties.  A great breakfast wine!
Wine to be consumed young, to conserve the full fruity and floral flavors.  To be stored flat in a cool room away from light.

Wolfberger Cremant d Alsace Brut

Wolfberger Cremant d Alsace Brut NV is made with 90 % Pinot Blanc, 10% Pinot Auxerrois.

The production of sparkling wine was already known in Alsace in the early 1900's. The Appellation d’Origine Contrôlée (A.O.C.) Crémant d’Alsace began with an official decree in August 1976.
 
Pale golden color. Fine, persistent bubbles. Floral nose with a hint of spiciness, gentle fruitiness (peach, apricot), and lovely balance. Fruity and lively in the palate, it has a clean and crisp finish. This wine will suit any special occasion.

Finca Sobreno Ildefonso Toro 2014

Finca Sobreno Ildefonso Toro  is made from 100% Tinta de Toro
Very Old Vines (Minimum 80 years of age)
Aged in 100% new French Oak Barrels for 18 months + 12 months in the bottle

The wine is produced in very limited quantity from the estate's oldest vineyards (80 years old vines) and is fermented in 2,000-liter open-top fermentation vats. Our winemaker punches down the cap by hand three times a day using the traditional pigeage method to ensure optimal extraction.

The name of the wine is the surname of the San Ildefonso family, father Roberto and daughter Paloma, and represents the apex of their winemaking tradition.

Tasting notes
Deep cherry color.
Very expressive, elegant and complex with ripe fruit, mineral notes, sweet spices, chocolate aromas and intense toasts.
Powerful, tasty, round and very smooth. We find again black berries, mineral notes, chocolates with roasted aromas. Very long after taste.

Soil types:
The soil is formed by sediments of sand, clay and limestone, which produce a dark lime-bearing topsoil, with fine and coarse sands.
This year we had low rain falls getting very healthy bunches. Besides, cool nights and not very hot days at the end of the cycle were excellent for a complete ripening of the grapes, full of nuances.

Winemaking and aging
The fruit is manually selected and picked in small cases. After destemming the grapes are stored in 2.000 liter open fermenter tanks and cold maceration at 8ºC during 8 days. Three times a day the cap of the skins is submerged manually (pigeage) and after the alcoholic fermentation is finished at a controlled temperature, the wine is macerated until the wine maker determines the appropriate extraction polyphenols. The malolactic fermentation is carried out in new French oak barrels. The wine was aged in new French oak barrels for 16 months, followed by another 12 months minimum in the bottle.
