Located in the foothills of the Andes where the influence of the Andean winds result in an elegant Cabernet Sauvignon with great concentration of ripe red fruits, cassis and chocolate, and a balanced, richly structured, and long finish.

An intense violet color. Smells of cassis and is complemented with notes of mature red fruit and chocolate. A round and elegant wine with an excellent final persistence.

After carefully determining the moment for the harvest, the grapes are harvested by hand and later de-stemmed and marinated in cold temperatures for 5-6 days. Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Siegel Special Reserve Cabernet Sauvignon has been aged for 12 months in french oak barrels, lending it structure and complexity. Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C to better extract polyphenols from the wine. Post-fermentative maceration for 2 to 3 weeks. Then part of the wine is decanted into barrels for 10-12 months. The rest of the wine finishes its malolactic fermentation in stainless-steel tanks. Once the wine has been blended it is smoothly clarified.

Siegel Gran Reserva Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.

Siegel Reserve Red Blend 1234 is made from 50% Syrah, 30% Carmenère, 10% Cabernet Franc and 10% Petit Verdot.

Deep ruby color. Intense aromas of black fruits, white pepper, spices and a hint of clove. The blend of four varieties gives a complex, deep wine with juicy tannins, good volume and very balanced.

Pre-fermenting cold maceration for five days, alcoholic fermentation at 26-28 C to obtain color and structure. Post fermentation maceration of two to three weeks according wine tasting and then the wine is separated from the skins. The wine ends its malolactic fermentation in tank. Our 2018 Snake Oil was handpicked, sorted, and fermented naturally, then aged for 24 months in 75% new French oak barrels and 25% once-used French oak barrels.

HARVEST NOTES 

The early half of 2018 brought us moderate temperature allowing for a long growing season.   We had a majority of our rainfall in February followed by a mild Spring.  Then summer brought consistent temperatures with little heat spikes.  This weather allowed for longer hang time and for the fruit to ripen at a slower rate.  The 2018 harvest at our estate began in late August and resulted in exceptional quality.

Miso Tahini Bacon

Dark an brooding in the glass, our 2019 Hommage Cabernet Sauvignon is bursting with ripe plums, black cherries and notes of cassis. On the palate the black fruits linger and mix with a hint of crushed cassia bark and toasted oak and are surrounded by strong, balanced tannins and notes of espresso and dark chocolate. This wine is bold and sensuous with a silky texture and lengthy finish.

Our Tenma Vineyard is located in the foothills of Mount St. Helena northeast of the town of Calistoga. These 40 acres of rugged land are part of an alluvial fan spilling out from the Palisades Mountains in the northeast corner of the Napa Valley. The rocky terrain here is well-drained with a very sparse topsoil which is a perfect combination for growing world-class Cabernet Sauvignon when combined with the climate of Napa Valley. The low grape yields of these old vines result in highly concentrated wines with an elegance and complexity rarely seen, even within the famous Napa Valley. DAOU Vineyards Reserve Cabernet Sauvignon is made from  77% Cabernet Sauvignon, 23% Petit Verdot.

The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Inglenook Cabernet Sauvignon Napa Valley is made from 95% Cabernet Sauvignon, 3.5% Cabernet Franc, 1% Merlot, 0.5% Petit Verdot.

A wine of considerable charm, energy and finesse, 2018 Cabernet Sauvignon is opaque ruby red in color, and opens with aromas of ripe cassis, blackberry, espresso and cedar. Although powerful below the surface, the wine is extremely focused and well-balanced, with silky tannins, ample freshness, and vibrant structure, that lead to a crescendo in the lengthy, polished finish.

Full-bodied with lots of layered fruit and round, creamy tannins. The palate shows lovely ripe-berry character with chocolate and hazelnut and a long, flavorful finish. Hints of black truffles. Plenty going on here with a firm framework that gives the wine form and interest. Try it after 2022.

All the grapes come from their Cottage Lane Vineyard on the mid-slopes of the Helderberg. This vineyard is situated on the crest of a ridge (320m above sea level) so has aspects ranging from East through North to West. It is very exposed resulting in small vines with low yields. This has allowed them to make a relatively fine grained Cabernet, but the clay soils translate to a wine with power, tension and fresh acidity.

Rich crimson red color. The nose is a complex mix of savoury notes: crushed herbs, violets, sandalwood, leather and some lovely bright red fruit. The palate is fine and yet powerful. Lush spicy red fruit is complimented by blueberry and bramble notes. Powerful tight-knit tannin and a very linear acidity afford the wine a long succulent finish. Drink 2017-2030

All grapes used in producing their wines are grown on Keermont Vineyards. Small parcels of grapes are specifically selected according to ripeness, harvested by hand and vinified separately. This process is carried out gently and naturally in open top fermenters using traditional methods only. This wine spent 22 months maturing in 225 Litre French oak barrels before being bottled by hand without filtration. They produced just 3654 bottles. The wine was bottle matured in the Keermont cellar for a further 18 months before release.

The palate is medium-bodied with a softer opening than I expected. There’s mainly red fruit at play here, fleshy and generous, with a touch of pepperiness on the finish. Morlet Family Vineyards Mon Chevalier Cabernet Sauvignon is made from 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot .

Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.

Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

The 2018 Cabernet Sauvignon from Mt. Brave is fabulous. Inky, rich and explosive, the 2018 possesses tremendous depth and tons of personality. The brooding, backward wine is going to need quite a bit of time to unwind, but boy is it gorgeous.

The 2018 La Joie displays a brilliant violet core with a thin rim of bright ruby. Generous fruit-for- ward aromas of ripe black currant and black cherry are followed by earthy notes of fresh conifer, dried mushroom, black olive, dusty clay, anise and clove. The palate is rich and structured; possessing similar flavors of the nose, refined tannins, well-balanced acidity and a complex, luscious finish.

Blackberries, black mushrooms, violets, flowers, and dark tobacco. Black truffle, too. Full-bodied, yet in check and pretty. The fine tannins frame the wine perfectly. Really long and focused.
