Located in the foothills of the Andes where the influence of the Andean winds result in an elegant Cabernet Sauvignon with great concentration of ripe red fruits, cassis and chocolate, and a balanced, richly structured, and long finish.
An intense violet color. Smells of cassis and is complemented with notes of mature red fruit and chocolate. A round and elegant wine with an excellent final persistence.
After carefully determining the moment for the harvest, the grapes are harvested by hand and later de-stemmed and marinated in cold temperatures for 5-6 days. Alcoholic fermentation is between 26ºC and 29ºC during which daily reassembly is implemented according to taste.Post-fermentation infusion lasts for two or three weeks. Once the blend is made, the wine is gently clarified and stabilized in cool temperatures if necessary.

Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Cabernet Sauvignon has been aged for 12 months in french oak barrels, lending it structure and complexity. The wine is deep ruby red and presents aromas of Cassis, red fruits, black pepper, black cherries, tabacco, cinnamon and chocolate. On the palate it is highly concentrated with juicy notes of red fruits and spices.
Serve with red meat, braised stews, grilles pork and flavorful cheeses.
Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C to better extract polyphenols from the wine. Post-fermentative maceration for 2 to 3 weeks. Then part of the wine is decanted into barrels for 10-12 months. The rest of the wine finishes its malolactic fermentation in stainless-steel tanks. Once the wine has been blended it is smoothly clarified.
The unique volcanic soil composition of this site is exhibited in this Cabernet’s mineral texture and intensely structured palate. This latest release from the exceptional 2018 vintage presents a deep purple rim surrounding an opaque garnet core with an abundance of aromas emerging from bakers’ chocolate and dark cherry to crème de cassis to tapenade. Both graceful and bold on the palate, the broad tannins are balanced by pulsing acidity that brings tension and freshness throughout. Siegel Reserve Red Blend 1234 is made from 50% Syrah, 30% Carmenère, 10% Cabernet Franc and 10% Petit Verdot.
Deep ruby color. Intense aromas of black fruits, white pepper, spices and a hint of clove. The blend of four varieties gives a complex, deep wine with juicy tannins, good volume and very balanced.
Pre-fermenting cold maceration for five days, alcoholic fermentation at 26-28 C to obtain color and structure. Post fermentation maceration of two to three weeks according wine tasting and then the wine is separated from the skins. The wine ends its malolactic fermentation in tank. Deep garnet-purple in color, the 2018 Cabernet Sauvignon Snake Oil needs a little swirling to reveal emerging notes of freshly crushed blackcurrants, blackberry pie and mulberries plus suggestions of tilled soil, cedar chest and Indian spices with a touch of roses. The full-bodied palate completely coats the mouth with opulent black fruit preserves and exotic spice layers, supported by velvety tannins and lovely freshness, finishing long and perfumed.

The 2018 Priest Ranch Snake Oil is all Cabernet Sauvignon, from a trio of hillside vineyards on the Somerston Estate. HARVEST NOTES
The early half of 2018 brought us moderate temperature allowing for a long growing season. We had a majority of our rainfall in February followed by a mild Spring. Then summer brought consistent temperatures with little heat spikes. This weather allowed for longer hang time and for the fruit to ripen at a slower rate. The 2018 harvest at our estate began in late August and resulted in exceptional quality.
It is hard to imagine with the Lithology range receiving 298 points out of 300 for the three single-vineyard wines, that there could possibly be a wine above them. But there is, and it is our Estate wine. Blended several times very intently by masters of their craft Philippe Melka and Michel Rolland, this is the ultimate expression of our house’s work. Positive, full-bodied, and quite powerful, there’s the expected crème de cassis and blackberry from St. Helena Cabernets, with mineral, herb, subtle tobacco and vanilla, plum skins, and pie crust, purple flowers, forest-conifer notes, and very fine tannic structure. It is a magnificent, and magnificently elegant expression of this house, and when asked recently, Monsieur Rolland stated plainly to me, “oh yes indeed – this is the best one, the best yet…”

Alejandro Bulgheroni Lithology Beckstoffer Las Piedras Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
From a St. Helena vineyard planted by early Napa settler Edward Bale more than 150 years ago, and later serving as the estate vineyard for the area’s first winery built by Henry Pellet in 1860, the Las Piedras site always gives us our prettiest wine. When placed next to Dr. Crane and To-Kalon wines, the Las Piedras show a certain elegance, with a very graceful entry and finely detailed complexity. We produce it with at least 75% new French oak, so there is a floral, spicy, and vanilla accent to the intense red and black fruits, cassis, and black cherry liqueur. What distinguishes this bottling is the beautifully fine tannins, delicate texture, and stunning purity. (Less than 100 cases made.)

DAOU Vineyards Reserve Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 23% Petit Verdot.
The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Volker Eisele Family Estate Cabernet Sauvignon is a blend of vineyard blocks from throughout the entire estate. The 2015 Volker Eisele Family Estate Cabernet Sauvignon is a brilliant garnet color in the glass. The nose is extroverted and effusive with bright red aromas of ripe cherries and plums, with a touch of peach and hint of anise and white pepper. In the mouth, the wine shows excellent oak integration, with prominent flavors of juicy huckleberries, milk chocolate, and sweet barrel spices. Our most quintessential Napa Valley Cabernet Sauvignon, exhibiting brilliant purity, profound depth of fruit, focused acidity and fine tannin structure. This is Rutherford in full flight as soaring black fruits push forth over subtle earth notes that all dazzle on an invigorating, lively palate structure. As Hightower Cellars' signature wine, Cabernet Sauvignon is a classic Red Mountain wine – bold and full of the flavors that make this region so special. As much as possible, Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. Lokoya Spring Mountain Cabernet Sauvignon is made from Napa Valley Cabernet Sauvignon.
Review:
The 2018 Cabernet Sauvignon Spring Mountain District is a monster of a mountain Cabernet that has a primordial bouquet of blackcurrants, smoked earth, chocolate, and graphite. While Spring Mountain wines tend to be more aromatic and complex right out of the gate, that’s not the case here, and this is going to need bottle age to round into form. Full-bodied on the palate, with a rich, concentrated mouthfeel, it has serious tannins, notable purity of fruit, and a great finish. With air, it picks up more and more classic Spring Mountain floral and exotic notes, and it’s flawlessly balanced, with gorgeous tannins and a great, great finish. This is a brilliant wine in the lineup and unquestionably one of the true gems from Spring Mountain in 2018. Give bottles 4-5 years and enjoy over the following 2-3 decades.

Corinne Perchaud Chablis Premier Cru Vaucoupin is 100 percent Chardonnay.
The vineyard The plots are on the Vaucoupin Chichée village. They are very steep and facing south, their average age is 40 years. The total area is 1.45 hectares. The vines are planted on soil Kimmeridgian marl consisting clay and limestone with dominant clay. Winemaking After a slight settling, the juice is put in to achieve its fermentation tank alcoholic and malolactic. It follows a long aging on lees to bring a maximum of complexity of aromas and flavors. If necessary, we make a collage to bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration is the filtration method most friendly to wine.
The wine will be bottled 16 months after harvest. The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed for the vineyards. The dry and sunny weather of the second half of August brought the grapes to maturity. The harvest began on September 2 under clement skies.
