Combing the best of both cooperage techniques, the combination of aging in stainless steel highlights the fruit while the aging in neutral French oak provides an added complexity to the wine.
Aged 60% in neutral premier French oak and 3% in new premier French Oak 37% stainless steel.Dropped by gravity straight to the press, the juice is pumped directly to barrel or tank and chilled, inoculated with Chardonnay 3079 yeast, primary fermentation started and finished, secondary fermentation started but completed to preferred taste, typically around 50% completion. Tamarack Ciel de Cheval Vineyard Reserve holds dark and chocolate nauces, spiced with pretty notes of allspice and clove, this wine is round and rich, bursting with ripe berries, combined with an earthy complexity and a velvety finish.
Cabernet Sauvignon makes up half of this blend, with the balance Cabernet Franc, Petit Verdot and Merlot
The wine spent 22 months on 75% new French oak with the remaining 25% second vintage French oak. Select barrels from the best forests of Taransaud, Boutes, Quintessance, and Vicard cooperages.
Tamarack Firehouse Red is 29% Cabernet Sauvignon, 22% Syrah, 22% Merlot, 11% Cabernet Franc, 5% Malbec, 3% Sangiovese, 2% Grenache, 2% Cinsault 1% Petit Verdot, 1% Counoise, 1% Mourvèdre and 1% Carmenere.
Deceptively sweet aromas of strawberries, raspberries and rose petals. The flavors are dark, rich, lusciously mouthwatering, with cherries, boysenberries, tart plum skins, hints of leather, sweet pipe tobacco, and coffee beans. The tannins are firm, but not a bit edgy and the finish lingers with just a touch of anise. A truly lovely vintage.
All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.
Ancien Chardonnay Carneros is made from 100 percent Chardonnay.
Chardonnay Carneros owes its style, depth, and structure to intensely flavored, low yielding, heirloom clones growing in two Carneros vineyards: on the Napa side, the Toyon Farm and on the Sonoma side, the Sangiacomo Vella Ranch. Ancien Wines hand-selected the cuttings themselves, from older vineyards in the Carneros area. These cuttings are reputed to have origins tracing to Paul Masson who imported them from Burgundy in the early 1940’s, from Louis Latour's renowned Corton Charlemagne vineyard. These selections are often referred to as “Old Wente”or “Robert Young,”denoting the sourced mother blocks in the 1960s.
Notes of ripe apple and honeydew melon greet and are delicately perfumed by notes of freesia and citrus blossom. Brighter notes of lime and Meyer lemon match the refreshing acidity of this wine, balanced by a creamy palate and leading to a finish that will continue to lengthen in the coming months. A wonderfully textured and vibrant Chardonnay displaying the best of Carneros.
Chardonnay Carneros is guided toward a layered, complex, and expressive style that develops gracefully in the bottle and shows enticing minerality, vivacious fruit, length and structure. The watchword is balance. Grapes were pressed as whole clusters, settled and fermented entirely in French oak from four different coopers, chosen for their unique synergism and support of the fruit on the palate. One third of the barrels were new. A variety of yeasts were used, including native strains, and fermentation proceeded evenly and slowly, averaging a cool 55°F. The wine was aged on its yeast lees, which were stirred weekly through the spring.

Vinification: An uneventful season with excellent ripening conditions and cooling nights for great acid and hang time.
Dropped by gravity straight to the press, squeezed directly to barrel and chilled, inoculated with Chardonnay 3079 yeast, primary fermentation started and completed in barrel with secondary fermentation started but not completed, about 25% malic acid is left in the chardonnay. New and used premier French oak from Cadus, Damy, Dargaud & Jaegle, Francois Freres, Louis Latour and Sirugue.

High gloss metallic paint with a forged iron big-block under the hood - our 2018 Hillstone Vineyard is a real show car. Deeply fruited with hi-tone huckleberry from a prime hillside site in Rutherford, the wine has a thick powerband with crushed stone and coffee bean, retaining polish and precision straight through the tail pipes.
Review:
Lots of pure cassis and blueberry- like fruits as well as licorice, graphite, and crushed rock-like minerality, emerge from the 2018 Cabernet Sauvignon Hillstone Vineyard. It's a full-bodied, opulent, powerful Cabernet Sauvignon that doesn't pull any punches on the fruit or texture scale, yet has ripe, present tannins, a light, elegant texture, and a great finish. Give bottles an hour in a decanter if drinking any time soon, or better yet, hide bottles for 2-3 years. It's going to evolve for 15+ years in cold cellars.

Rinaldi Brachetto d' Acqui is made from 100% Brachetto d'Acqui
The skin gives the wine its particular scent and flavor.
Light ruby red color. The bouquet is musky and delicate with scents of ripe red fruit (strawberry, blackberry) and roses. Sweet and smooth flavors with lingering aromatic persistence. There is a good balance between the sweetness and the freshness, which makes this wine very pleasant.
The training system used is Guyot with a density of 2500-3000 vines per hectare. Manual harvest. Temperature controlled maceration for approximately seven days with mechanic plunging of the cap and pumping over to increase extraction of substances from the skins. This is the most important part of the vinification. Soft pressing.
