Combing the best of both cooperage techniques, the combination of aging in stainless steel highlights the fruit while the aging in neutral French oak provides an added complexity to the wine.
Aged 60% in neutral premier French oak and 3% in new premier French Oak 37% stainless steel.Dropped by gravity straight to the press, the juice is pumped directly to barrel or tank and chilled, inoculated with Chardonnay 3079 yeast, primary fermentation started and finished, secondary fermentation started but completed to preferred taste, typically around 50% completion. Tamarack Ciel de Cheval Vineyard Reserve holds dark and chocolate nauces, spiced with pretty notes of allspice and clove, this wine is round and rich, bursting with ripe berries, combined with an earthy complexity and a velvety finish.
Cabernet Sauvignon makes up half of this blend, with the balance Cabernet Franc, Petit Verdot and Merlot
The wine spent 22 months on 75% new French oak with the remaining 25% second vintage French oak. Select barrels from the best forests of Taransaud, Boutes, Quintessance, and Vicard cooperages.
Tamarack Firehouse Red is 29% Cabernet Sauvignon, 22% Syrah, 22% Merlot, 11% Cabernet Franc, 5% Malbec, 3% Sangiovese, 2% Grenache, 2% Cinsault 1% Petit Verdot, 1% Counoise, 1% Mourvèdre and 1% Carmenere.
Deceptively sweet aromas of strawberries, raspberries and rose petals. The flavors are dark, rich, lusciously mouthwatering, with cherries, boysenberries, tart plum skins, hints of leather, sweet pipe tobacco, and coffee beans. The tannins are firm, but not a bit edgy and the finish lingers with just a touch of anise. A truly lovely vintage.
Jip Jip Rocks Chardonnay 2014 is made from 100 percent unoaked Chardonnay.
Light yellow with a pale straw hue. A classic nose of lemon, fresh stonefruit and melon. The palate is clean and fresh with mineral characters underpinning ripe pineapple and lime flavours. This wine will age beautifully over the next 4-5 years.
Winemaking report: Gentle pressing and free run juices create the base of this wine. Traditionally Jip Jip Rocks Chardonnay is a 2/3 blend fermented and matured in stainless steel and 1/3 fermented in stainless steel, which receives extended lees contact to add texture and complexity to the palate.
Rich pear, tropical pineapple and honeysuckle on the nose lead to tart red apple and pear with exceptional acidity and a luscious butterscotch finish.
The best of both worlds, this wine is barrel-fermented and aged in neutral French oak, to highlight the fruit and add complexity.

The Tamarack Cellars Vineyard
Grapes are purchased throughout the Columbia Valley and are crushed, fermented and blended in a small winery located in a World War II firehouse complex at the Walla Walla airport.
Long Shadows Pirouette Meritage is made from 58% Cabernet Sauvignon, 20% Merlot, 13% Malbec.
Philippe Melka, named one of the top nine winemakers in the world by Robert Parker, used small lots from Washington State's finest vineyards to craft this enticing red blend.
A variety of fermentation methods were used to enhance complexity and richness in this classic Bordeaux blend. Hand-harvested Cabernet was fermented in 400L French oak barrels that were gently rolled throughout fermentation to integrate the oak with refined, dark fruit flavors and give the wine its silky mouthfeel. All other varieties were fermented in traditional stainless steel tanks, with select lots enjoying longer skin contact to enhance the wine's dark color and mid-palate. The finished wine was aged 22 months in French oak barrels (75% new) before bottling unfiltered and unfined.
Review:
"The 2018 Pirouette checks in as 68% Cabernet Sauvignon, 22% Merlot, and 10% Petit Verdot aged 22 months in 85% new French oak. Deep purple-hued, it's a young, unevolved yet incredibly promising red with smoking good notes of ripe black and blue fruits as well as tobacco, graphite, and chocolate. Dense, full-bodied, and concentrated on the palate, it needs 3-5 years of bottle age but has the depth, balance, and class to evolve for 15-20 years or more."

"The 2018 Red Wine Pirouette blends 68% Cabernet Sauvignon with 22% Stone Tree Vineyard Merlot, and 10% Dionysus Vineyard Petit Verdot. The wine was aged 22 months in 85% new French oak prior to bottling. Aromatically beautiful, you are greeted to black rose petals and blackberry compote tones that mingle with wintergreen and chocolate covered espresso bean accents. Deep and concentrated in the mouth, with fantastic flavor density and tension, this finishes long with black fruits, loamy soils and minerals. Enjoy this texturally-beautiful Left Bank inspired Washington wine over the next twenty years to come. - Owen Bargreen"
