Tempranillo is native to Spain and is used to create red wines that are typically blended with Grenache and Carinena varieties. The black grape comes from the Spanish word, temprano, meaning early, which refers to the fact that the variety ripens earlier than most red grapes in Spain. Tempranillo was grown in the 20th century to create jug wines in California and has been planted in the United States, South Africa, Turkey, Canada, Australia, and Argentine. Tempranillo grows well at high altitudes and produces deep, ruby colored wines that are aromatic with berry, tobacco, vanilla, plum, herbal, and leather notes. The grape variety was thought to be directly related to Pinot Noir and it was thought that Cistercian monks left cuttings of Pinot Noir at monasteries as they made a pilgrimage to Santiago de Compostela. However, there is no proof that the variety is related to Pinot Noir. Tempranillo grapes need to be grown in cool regions to produce a less acidic wine, however, to create sweet wines that are high in sugar, heat is required. The wine pairs well with steak, a bacon burger, crab, barbecue meats, and pizza with red peppers. Tempranillo also pairs well with veal parmigiana or haddock.

Pago de los Capellanes Reserva is made from 100% Tempranillo.
After carefully monitoring the vineyards, we determine the date of the harvest based on the maturity of the grapes. The varieties are collected and fermented separately in 20,000 litre tanks.
In 2007, production was just less than 5000 kg per hectare. This wine is prepared with Tempranillo 100% grapes from our vineyards.
The grapes are initially subjected to a six-day pre-fermentation cold maceration below 14ºC. They then undergo 30 days of alcoholic fermentation at a controlled temperature of 28ºC, after which the wine is removed from the tanks without pressing the grape skins. The malolactic fermentation is slow and relaxed at a temperature of 20 ºC for 28 days without the addition of bacteria.
The wine is aged for18 months in new French oak barrels and is decanted into new barrels every six months. At the end of this period, the wine is blended and bottled without undergoing any type of filtration, clarification or cold treatment.
Prepared with Tempranillo grapes (100%), this wine has a ruby red colour with very pure, intense garnet tones.
Its bouquet has fine complexity with tones of ripened fruit, especially cherries, blue berries and black currants, which are in harmony with tones of good wood, spices (vanilla and coconut) and a liquorice undertone.
In the mouth, this wine displays great balance, proving pleasing to the taste, sweet due to the maturity of its tannins and exuberant on account of its pleasant level of acidity.

The 2019 Ribera del Duero Reserva is also terrific, with gorgeous aromatics of black and blue fruits supported by Asian spices, lead pencils, cedarwood, and violets. It's beautifully textured, medium to full-bodied, has a concentrated, powerful mouthfeel, and ripe, integrated tannins.

All Tempranillo, the 2022 Ribera del Duero Tinto Joven has a deep purple hue as well as beautiful blue fruits, violets, graphite, and charcoal aromas and flavors. Along with medium to full-bodied richness, it has wonderful purity and precision, fine tannins, and a great finish. It's a stunning value.

Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.
Bottled in December 2019.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Intense, aged, but not sweet (deliciously not more than 45g/l). Fab with cheese or dark chocolate. The wines have to be a minimum of 10 years; this release is more than 25 years. Fragrant aromas of yellow peach and ripe melon are found on the nose, interspersed with bright citrus notes. These continue on the palate with notes of creamy vanilla and buttery nuances on the long finish. Rombauer's signature bright acidity is evident throughout each sip, balancing the softness of the midpalate.
Pairings for this wine include crab cakes, barley risotto, and strawberry shortcake.
