The Toso Estate
This one century old winery is now one of the most modern facilities in Italy, combining tradition with modern vinification techniques. The property measures 38, 000 square meters, of which 10,500 are dedicated to the vinification, the bottling and storing areas.
An early picking insures a higher acidity and a more floral bouquet. The grapes are crushed immediately to avoid any oxidation which might detract from the wine's aromas. The grapes are gently crushed and the juice is settled, centrifuged and filtered. The purified musts are placed in stainless steel tanks and held at near freezing temperatures which blocks completely any fermentation. This enables the producers to draw batches of fresh must whenever they decide to bottle. The batch of must is then inoculated with special yeast and fermented in an autoclave to retain the naturally produced carbon dioxide. The fermentation is stopped by a rapid chilling when the wine reaches the desired ratio of alcohol (standardly 7%) to residual sugar ( 3-5% ). The wine is then filtered, bottled and immediately shipped to ensure the freshest product possible.

Toso Vermouth di Torino Extra Dry is a Piedmontese traditional aperitif, with harmonious and delicate dry taste, obtained from a wise blend of white wine, sugar, alcohol and aromatic herbs infusion prepared according to the ancient Toso recipe. Serve well chilled. Best enjoyed as a cocktails base. Excellent for marinating and cooking.

Toso Fragolino Rosso Spago is an aromatized drink made of wine and strawberry with fine and fruity flavors. Serve cool at 8 C. Excellent as an aperitif, with desserts as well as for cocktails or simply on its own.

Schwarz The Schiller Shiraz is made from 100 percent Shiraz.
The Schiller Shiraz is a wine rich in both flavor and history. The 400 Shiraz vines planted by Carl August Otto Schiller in 1881 are something to be treasured. Earmarked for bulldozers in 2006, a last minute reprieve would see these Ancestor vines remain in the ground. The grapes are hand-picked from the sixth generation Schiller family vineyard at Hallett Valley in the Barossa. Jason first made this wine in 2008, and since then it has been his flagship wine.
Opens quickly to luxe fruits, black plum & fruits of the forest, building in layers of toasty smoked bacon, tobacco leaf and Mediterranean herbs with nuances of spice and earthy tones. A luxurious palate of old vine fruits, savory overtones and fine slippery tannins. A long harmonious finish.

Ptit Paysan Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 6% Petite Verdot, 3% Cabernet Pfeffer.
Oak: 11 months on lees in neutral barrels
The Cabernet Sauvignon is sourced from a vineyard at the foot of the Santa Cruz Mountains west of Morgan Hill, which grows in a mix of granitic and volcanic soils, and a 25-year-old vineyard east of Gilroy, which grows in deep, extremely sandy soils against the foothills of the Diablo Range. The Petite Verdot is sourced from the Paicines AVA and grows in rocky alluvial deposits above the Tres Piños Arroyo. All three vineyards experience the warm days and cold nights typical of the Central Coast, allowing these late ripening Bordeaux varieties to be picked at high acidity and moderate sugars.
Le P'tit Paysan offers intense blackberry, dark cherry aromas, chocolate, herbaceous and toasty notes on the palate. Medium-bodied, well-balanced with moderate and integrated tannins that give structure and liveliness to the wine.
Pairs well with steak, duck, game, hearty stews, ribs, and dark, rich sauces.
