Winemaker Notes
This Bordeaux style blend was left on the vine to mature to its peak before it was hand harvested and hand sorted. It underwent a cold maceration for 5 days before fermentation. Extended skin contact rounds out the palate and integrates the rich tannins. Finally, it aged in French oak barrels for 18 months prior to bottling for a round and smooth finish.

This wine is made from 100% estate-grown fruit. Our vines are sheltered in the foothills of Carter’s Mountain in the Monticello American Viticultural Area (AVA).

The story of Robert Mondavi Winery begins here, with the To Kalon Reserve. This tier represents the pinnacle of the wines produced by the winery. The 2021 vintage offers fresh black fruit with dark chocolate, dried herbs, and hints of vanilla and violet. Flavors of black plum and blackberry with red fruit and a hint of graphite on the finish. Elegant and plush with sweet, beautifully integrated tannins and a lengthy finish.

2021 Robert Mondavi The Reserve To Kalon Vineyard Cabernet Sauvignon is a beautifully crafted wine with impressive intensity, depth, and a balanced structure that carries the day. From the To Kalon Vineyard in Oakville, the portion owned by Constellation, comes this blend of 94% Cabernet Sauvignon, 3% Cabernet Franc, and 3% Petit Verdot. Pure blackberry fruit, cassis, graphite, and violet aromas leap from the glass, nuanced by fragrant, toasty new cedar wood. Full-bodied, framed by an array of plush dark black fruit notes, currants, crème de cassis, and polished tannins that are firm and elongated, with ironstone mineral accents. Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet.
Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.
Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.
Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. The finished wine was aged 22 months in 90% new Vicard French oak barrels (Randy's cooper of choice at Dunn Vineyards as well).

La Jota Howell Mountain Cabernet Sauvignon is made from 87.5% Cabernet Sauvignon, 4.5% Malbec, 3% Cabernet Franc, 3% Merlot, 2% Petit Verdot. The 2019 Cabernet is exceptionally expressive after a few minutes in the glass. Blackberry, plum, tobacco and anis seamlessly integrate on the palate. The wine is framed by broad tannins and the finish carried by a beautifully balanced acidity.
Review:
The 2019 Cabernet Sauvignon is another superb wine from La Jota. Rich and explosive, the 2019 possesses tremendous density and plenty of mountain power. A rush of black cherry, blackberry, licorice, spice and menthol builds into the huge finish. This is a fabulous vintage for the La Jota Cabernet.
