Ibiza has a long history in wine-making dating back 2.500 years to the Phoenicians, who introduced the original Monastrell grapes on the island around 500 B.C.
Fast-forward to the 21st century, Ibizkus started producing wines under the Totem Wines brand name. Laurent Frésard, while completing his Masters in Wine Management, discovered a passion for wines created from the diverse Mediterranean soil and unique grape varieties. He joined the Ibizkus team in 2008 with the aim of creating great wines from ungrafted vines grown locally on the island.
By 2010, then Totem Wines became the second largest winery in Ibiza, with a global production of 30,000 bottles. Under the watchful eye of oenologist David Lorenzo, 5 years later Ibizkus has doubled its production to 60,000 bottles and is now offering red, rosé and white wines.
Our philosophy stands firm: creating balanced and elegant wines, derived from unique locations, fusing rare and indigenous grapes with expert knowledge, specialist techniques and a passion for wine-making.
Ibizkus Red Tierra Ibiza is made from 100% Monastrell (Mourvedre).
The combination of this genetically Ibicencan Mourvèdre, ungrafted vines, sandy soils and Mediterranean climate results in a juicy red wine with red fruit and violet aromas, a mineral and fresh character, ripe tannins and a long finish.
This 100% Mourvèdre is produced from 5 different parcels of a total surface area of 3.2 Ha planted on sandy soils very close to the sea. All parcels have been farmed ecologically for over 10 years. Ungrafted 60 to 90-year old vines. This results in a wine that is true to its variety while respecting local customs, with a special emphasis on the cultivation process.

Ibizkus White Tierra Ibiza is made from 90% Malvasia and 10% of other grape varietals (Macabeo, Muscat and Chardonnay).
With the Malvasia grape as the protagonist, Ibizkus white is an intense wine with its own personality. A straw yellow color with golden hus, it is medium-bodied, smooth, creamy and aromatic with citrus fruit, stone fruit and smoked fragrances. Silky on the palate with balanced acidity..
Vineyards on the west of the island bring density and fullness to the wine while the Cala Mastella vineyards add freshness.
Malvasia is grown on calcareous clay terraces in the San Mateo region and limestone rock slopes on a vineyard close to the sea at 180-metre altitude.

The 2016 Vigna Spuntali Brunello di Montalcino is the most brooding of the lineup from Val di Suga and is sourced from the southwest of the region on sandy soils. There are aromatics of black raspberry, licorice, menthol, sage, cinnamon, and iron-rich earth. Its Mediterranean influence is felt on the palate with ripe black cherry, dried herbs, and sun-baked earth. This is the fullest bodied and most savory of the Val di Suga lineup, with more roundness and grip. Its structure will benefit from cellaring for several years and will be great drinking over the next 20 years or more. 2026-2040.

The 2015 Vigna Spuntali Brunello di Montalcino is more introverted on first opening, with notes of black plum, licorice, dried Mediterranean herb, and sun-baked earth. On the palate, it offers a tart dried fruit character, with a building tannin structure that finishes with tomato leaf, and bitter herbs. The most rustic and burly of the wines in the lineup of the 2015 Val di Suga vintage, it will benefit from allowing some time in cellar to see how this matures and its tarriness develops. Plenty of spices and fresh herbs on the nose, such as dried rosemary and nutmeg, to match the underlying dried redcurrants and cranberries. Full-bodied with plenty of concentration, but still shows a very sturdy, tannin backbone and punchy acidity, to drive this through to a long finish. Drink in 2021.

Saumaize Michelin Macon Vergisson Sur Roche is made from 100 percent Chardonnay.
Harmonious, fresh and clean aromas of fresh apple, lemon, orange blossom, white flower. Pure, crisp, silky and fine texture. Ripe fruit flavors and good acidity.
