Philippe Melka, named one of the top nine winemakers in the world by Robert Parker, used small lots from Washington State's finest vineyards to craft this enticing red blend.
Like the last several growing seasons, 2016 was another hot year that required extra care in the vineyards. Building on the success of our canopy managment program over the last few vintages, we worked with growers throughout the season to encourage growth of the canes and outside foliage to protect against the sun while opening up the fruit zone for even maturation. Warm temperatures in the fall hastened ripening, but the Columbia Valley's cool autumn nights protected the grapes' acidity, yielding bright, vibrant wines that will drink well in their youth but also promise to bring enjoyement to those who cellar.
A variety of fermentation methods were used to enhance complexity and richness in this classic Bordeaux blend. Hand-harvested Cabernet was fermented in 400L French oak barrels that were gently rolled throughout fermentation to integrate the oak with refined, dark fruit flavors and give the wine its silky mouthfeel. All other varieties were fermented in traditional stainless steel tanks, with select lots enjoying longer skin contact to enhance the wine's dark color and mid-palate. The finished wine was aged 22 months in French oak barrels (75% new) before bottling unfiltered and unfined.

Dense, full-bodied, and concentrated on the palate, it needs 3-5 years of bottle age but has the depth, balance, and class to evolve for 15-20 years or more."

Allen Shoup named this wine in honor of his mother, Elizabeth Chester, and his grandmother, Maggie Kidder. He selected Long Shadows' director of winemaking and viticulture, Gilles Nicault, to craft this New World blend of Cabernet Sauvignon, Syrah and other classic Bordeaux varieties.
Select Cabernet Sauvignon lots underwent an extended maceration of 40 days to produce supple yet firm tannins that stand up to 30 months of barrel aging in tight-grained French oak barrels (85% new). The extra time in barrel helped to integrate the fruit, enhance the mid-palate with an extra layer of complexity, and provide an appealing earthiness to the finish.
Review:
The Cabernet Sauvignon-dominated 2017 Chester Kidder is another more closed, reserved wine that's loaded with potential. Cassis, toasted spices, violets, and leafy herb notes give way to a rich, full-bodied red that has ripe, velvety tannins, a rounded, mouth-filling texture, and one heck of a great finish. Give bottles 3-5 years if you can and it should be very long lived.

It's another brilliant wine from this team and has vibrant plum and darker, almost blue fruits as well as spicy oak, chocolate, graphite, and scorched earth aromas and flavors. Balanced and medium to full-bodied, with a terrific sense of freshness as well as building tannins, it's going to benefit from 2-4 years of bottle age and have two decades of longevity.

Long Shadows Cymbal Sauvignon Blanc is made from 100% Sauvignon Blanc.
Tasting notes: Wonderfully vibrant and aromatic, with notes of lemongrass, passion fruit and a hint of honeysuckle. Flavors of mango, fresh herbs and white peach, come together seamlessly across a textured palate and lengthy finish.
Over the years, Gilles and Allen have experimented with small quantities of uniquely styled wines for their personal and family enjoyment. A few of these wines became too good not to share with their “extended family”, including the Cymbal Sauvignon Blanc.
Sauvignon Blanc from three distinct vineyards combined to give this wine its wonderful vibrancy and complex flavor profile. Gamache Vineyard (planted in 1985) is located on a gently sloping hillside in close proximity to the Columbia River. The site benefits from the cooling effect of the river to give the wine fresh acidity. Boushey Vineyard also contributes liveliness and lemongrass character. Bacchus Vineyard Sauvignon Blanc (planted in 1972) is a warmer site, producing a riper style wine that provides a distinct passion fruit character to the
finished blend.

Winemaking: Pirouette is a wine made in the vineyards. Philippe works with growers to keep yields below three tons per acres. At harvest, grapes are picked at perfect ripeness, and then sorted by hand at the winery. Only the highest quality clusters are retained for fermentation on the skins for up to 40 days, producing optimal color and tannin extraction. This wine was aged 22 months in 75% new oak with a selection of barrels from Taransaud, St. Martin and Ermitage.
Vintage: The 2005 Pirouette is a wine that reflects the power and structure of an exceptional vintage. While spring temperatures were mild, growing conditions were nearly perfect throughout the summer and fall. Mid-June temperatures were warm, and the heat persisted throughout July and August. Temperatures cooled just enough in September to ripen the grapes completely without rushing physiological maturity resulting in a finished wine with great intensity and ripe, focused flavor.
Tasting Notes: This rich, deeply colored wine offers a broad spectrum of complex aromas including leather and black cherry interwoven with hints of spice, earth and a subtle note of licorice. Supple yet firm tannins on the entry turn rich on the mid-palate to provide a lush mouthfeel across a lengthy finish.
"This is substantial, textural and complex. The toasty new oak flavors are more than matched by rich layers of berries, cassis and black cherries. It glides into a seductive midpalate, adding flavors of dusty cocoa, espresso liquer and toasted grain. It would show quite well against California Meritage-style wines costing twice as much."

Sweet on entry, then dense and bright in the middle, with lovely purity to its dark fruit flavors. In its fruit component, this one reminded me of a Napa Valley wine. Finishes with powerful, youthfully tough tannins and noteworthy freshness."

Located in the world-renowned Oakville appellation, in the heart of the Napa Valley, our Cabernet Sauvignon and Cabernet Franc vines benefit from the gravelly and loamy Bale soil derived from an alluvial fan in this warm yet temperate climate. Handcrafted using classical winemaking techniques, this wine is dedicated to Dr. Richard Johnson and Dr. Nancy Hampel who have always demonstrated their kindness of heart. It is ‘Heart of the Valley’ or ‘Cœur de Vallée.’
Deep garnet-purple in color, the ‘Cœur de Vallée’ is characterized by a striking bouquet of lavender and violets over a core of sweet red berries, crème de cassis, Chambord liqueur, blackcurrants and licorice, and compelling notes of mocha, espresso, chocolate and forest floor. Medium to full-bodied with an impressive fine-grained texture, this powerful yet refined Cabernet Sauvignon is expressive from start to finish, boasting a background freshness that supports the intense black fruit layers. The wine displays an extraordinary concentration, richness, finesse and purity while possessing silky and polished tannins leading to an elegant lift on the long, lush finish. The 2016 Cabernet Sauvignon Coeur de Vallée comes all from Beckstoffer’s portion of the To Kalon Vineyard and it’s a thrill a minute, offering awesome notes of blue fruits, chocolate, incense, candied violets, and high-class cigar tobacco. As seamless and elegant as they come, yet also opulent and sexy, this remarkable Cabernet Sauvignon could come from nowhere else in the world. Drink it over the coming 2-3 decades.

This is the last vintage when this wine will come exclusively from Beckstoffer’s To Kalon vineyard. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. Full-bodied and laden with densely packed, muscular fruit, it has a rock-solid frame of ripe, grainy tannins and seamless freshness, finishing very long with those To Kalon spices lingering with fantastic persistence. 250 cases produced, to be released in the fall of 2019.

Babylons Peak Chenin Blanc is made from 100 percent Chenin Blanc.
Babylon's Peak winery, situated on the highest weathered granite slopes of the Paardeberg Mountain, is privately owned by the Basson family who has passed down the tradition, passion and art of winemaking over four generations. Predominantly low-yield dryland bushvines are selected to produce these excellent wines with distinctive character.
The Chenin Blanc grapes were picked from very old dryland bushvine vineyards. The vineyard grows on weathered granite soils, contributing to the flavor of the grapes and mineral character of the wine. Production is limited to 5 tons/ha.
The grapes were harvest by hand at 22.1°B. The grapes were destalked and lightly crushed. Only the first 450 litres free-run juice per ton were fermented in stainless steel tanks at a cold temperature (10-12°C) for 21 days. The wines was left on the fermentation lees until bottling.
