Bellevue Cotes de Bordeaux-Castillon Vieilles Vignes 2020 is 65% Merlot, 35% Cabernet Franc.
Average age of the vines is 40 years old.
The wine offers a rich and intense bouquet of blackcurrant, blackberry and strawberry.
It is smooth and full in the mouth with a velvety texture. Acidity combined with firm but well-integrated tannins are a fine supporting cast to the black fruit flavors at the end.

2015 Castillon Cotes de Bordeaux Cé Ma Cuvée Céline Lydoire focuses this wine on Bellevue's old Merlot plots, blending in Cabernet franc from southern exposures on gravelly soils. It's her top selection, treated to 18 months in new 400-liter oak barrels; she started making it at the behest of her French customers, who wanted a step up from her cool and refreshing Cuvée Tradition. This is just as cool, but more saturated in its distinctly Castillon fruit flavor—think wild strawberries and blueberries with an earthy mineral undercurrent. That silky fruit gains its supple impression from the new oak, which boosts the textural richness. As I thought about how to score this wine, I found myself writing, "If that were from California, I'd be all over it." Absolutely. But it's also got Castillon limestone clarity. And, it's $27. The Bellevue Estate
Chateau Bellevue was founded in 1998, with its oldest origins dating to the 1960's. The project is aided by Chateau Cheval Blanc's former enologist, Gilles Paquet. Reserve wines are produced when the vintage merits; most recently in 2000, 2001, 2004, 2005 and 2006. Production: 380 hectolitres (4,222 cases), 95% Claret Rouge and 5% Claret Rosé.
The Bellevue Vineyard
The 8.5 hectares (21 acres) of vineyards are 40 year old vines, planted to Merlot, Cabernet Franc, and Cabernet Sauvignon. Yield: 40 hectolitres/hectare. Hillside Clay and Limestone soil.

Meta: An abstraction from a well-known concept. Fruit sourced from Bethany and Marananga.
Dark, spicy and built for max expression. Built over a foundation of blackberry and red plums this is a punch, expressive Mataro of spice rubbed meat, tea smoke and beef jerky. All dark, brooding and masculine in its fragrance, the palate is expansive with punchy tannin and sweet cinnamon spice.
Coming from 2 different vineyards. Average age of the vines is 90 years old for the first parcel and 70 years old for the second parcel. Hand-picked, wild yeast, 72% whole bunch.
Minimal use of Oak, the majority is aged in tank in order to avoid oxydation.

Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.
Bottled in December 2019.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous.
