Burgundy is a region in France that is located 100 kilometers from Paris, stretching another 360 kilometers to Lyon. The tiny vineyards are dotted along the narrow valley and divided into the Chablis, Cote d'Or (divided in Côte de Nuits and Cote de Beaune), and Cote Chalonnaise, Maconnais, and Beaujolais districts. The region has many different soil types and microclimates and has been identified into 400 separate classifications. The soils are predominately clay-limestone, limestone, and marl. The vineyards cover 25,000 hectares and are divided into 99 wine appellations that are made up of 5,200 wine growers. 85% of the vineyards are no larger than 10 hectares. 180 million bottles of wine are produced annually. The Pinot Noir grape produces 90% of the wine that is grown in the region. The most common white grape grown in the region is Chardonnay. The Cote d’Or is where Burgundy's most famous and most expensive wines are found, and is split into two parts: the Cote de Nuits, which starts just south of Dijon and extends to a few kilometers south of the town of Nuits-Saint-Georges, and the Cote de Beaune, which starts at Ladoix and ends at Dezize-les-Maranges. The region is 40 kilometers long, and in some places, less than 2 kilometers wide.

Boussey Volnay Premier Cru Les Taillepieds is made from 100 percent Pinot Noir.
The grapes for this Volnay Premier Cru Les Taillepieds are coming from the vineyard located in the middle of the coteau, halfway up the hill, with a very nice South sun exposure, allowing to reach an optimal ripeness every year.
The wine displays a nice ruby and garnet color. It boasts aromas of red and black fruit, fig, and violet.
It always has a lot of finesse and elegance, but also a great length to the finish, with juicy and round tannins.
Pair with frog legs with parsley and garlic, omelette, duck and cheese.
Slightly filtered before bottling.The wine is then aged in French Oak barrels for 12 months. (25% new barrels).

Aligoté is a grape variety that adapts very well to different types of soils. The color is a pale gold yellow; this wine is clear and young. This a gourmet wine and surprising by his energy, offering acid and fruit hints.
Paired with grilled fish, asparagus, white meat in sauce.

Clear yellow color.
Aromas of white flowers, honeysuckle, leme tree and dried fruits.

Chaume Bourgogne Rouge Pinot Noir 2022 is made from 100% Pinot Noir.Color: bright ruby red
Bouquet: blackcurrant, raspberry and hints of blackberry
Bouche / Palate: smooth attack, balanced, fine tannins and smooth finish
Butterflied lamb, char-grilled steak, venison. Dishes like cassoulet or duck with olives if they're more rustic. Roast goose.
Cellier du Chateau de la Chaume Petit Chablis is made from 100 percent Chablis.
Color: Pale yellow
Bouquet: White flowers, honeysuckle, linden tree and dried fruits.
Palate: Very pleasant, balanced with tension and nice minerality

Filippino Elio Barolo Riserva is made from 100 percent Nebbiolo.
This 100% Nebbiolo offers a fruity, floral and spicy bouquet of red roses, raspberry, cinnamon and cocoa. It is generous, enveloping and elegant in the mouth, yet intense and full-bodied.
The grapes undergo a soft crushing and destemming leading to a clear must. This must ferments in steel tanks at a controlled temperature of 26°C and macerates for 20-25 days. After racking, the wine undergoes a lengthy maturation in oak barrels, which is continued with a lengthy bottle-ageing. Bottle-ageing confers the wine’s final character, at which time the wine is sent to market and from there to consumer tables.
