The Château de la Chaume is located in Corgoloin in Côtes de Nuits. He is surrounded by a park of 10 Ha full of beautiful trees.
Our wines are vinifyied in the cellar of the Château de la Chaume. Cellier du Château de la Chaume was created in 1993. We pay attention to the winegrowers that we choose for our wines. We strive to work with winegrowers corresponding to our values, that is to say, the excellence of wines.
The cellars were completely redesigned and modernized with a stainless steel wine storehouse, which welcome the greatest wines and in particular, the red and white wine from the Côte d’Or.

Aligoté is a grape variety that adapts very well to different types of soils. The color is a pale gold yellow; this wine is clear and young. This a gourmet wine and surprising by his energy, offering acid and fruit hints.
Paired with grilled fish, asparagus, white meat in sauce.

Butterflied lamb, char-grilled steak, venison. Dishes like cassoulet or duck with olives if they're more rustic. Roast goose.

Color: Pale yellow
Bouquet: White flowers, honeysuckle, linden tree and dried fruits.
Palate: Very pleasant, balanced with tension and nice minerality

Chaume Chablis is made from 100% Chardonnay.
Light yellow color. The wine displays aromas of white flowers, honeysuckle, linden, citrus as well as white and dried fruits.
In the mouth, the wine is well balanced with tension and a nice classic minerality found in Chablis.

This is a single vineyard, from the parcel "El Nogal" located in the town of Mambrilla de Castrejon grown at 850 meters above sea level. (2750 feet).
A hillside of tinto fino vines red in the village of Mambrilla, a short distance from the winery. Uninterrupted views of the Duero, the wind stirring the airy branches of the large walnut tree that guards the vineyard. A place with a special gift. Its sandy, stony soils, a feeling of harmony and a special microclimate: everything seems to enhance the talent of its surroundings.
We have been vinifying the evocative grapes of this plot for the past few years to produce an endlessly charming wine. Overwhelming, powerful and exquisite. With a vitalising force.
Review:
This California Cabernet Sauvignon has rich flavors with a hint of black currant and cherry. The tannins are soft, leading to a smooth finish with a hint of oaked vanilla and a touch of eucalyptus/mint freshness.
100% California AVA Cabernet Sauvignon.

Picked at premium ripeness. Fermented in static tanks with pump-overs three times per day.
