Perchaud Chablis 1er Cru Fourchaume is made from 100 percent Chardonnay

Made from 35 year old vines. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.
Pair with Scallops Jacques cream, roast veal with oyster mushrooms.
This is the south facing portion of the slope and very hot, heavy “Fourneaux” or “oven”. 25% barrel fermented.
The wine offers ripe nearly tropical fruit flavors laced with mineral, oak, honey, and good mouth feel.
Chartrons et Trebuchet Chablis 1er Cru Beauroy is a crisp and clean Chardonnay that offers a rich and intense bouquet of fresh citrus fruits and white flowers. The mouth is round, ample and powerful. The rich and rounded palate is expressive and voluptuous with a mineral character and good acidity. A long finish. Delicious.
Chartrons et Trebuchet Chablis 1er Cru Beauroy is a perfect match with cooked oysters or fish in sauce, white meats (veal, poultry), sushi, goat cheese, blue cheese and Comté.
Ecard Savigny Beaune Premier Cru Serpentieres is made from 100 percent Pinot Noir.
Elegant and concentrated wine filled with cherry and wild berry fruits. Spicy notes. Very good structure and acidity. This delicious Pinot Noir is a real treat. Excellent now, it can also reward cellaring for a few years.

Patricia Raquin Puligny Montrachet Premier Cru Garenne is made from 100 percent Chardonnay.
Chavy-Chouet Puligny Montrachet Permier Cru Les Champs Gain is made from 100 percent Chardonnay.
The wine is produced from 100% Chardonnay coming from the top of the hills of Puligny-Montrachet. The rocky soil of the steep slopes is rich in limestone.
Champs-Gain is a fine and subtle wine with fresh and lively citrus notes. Over time, it delicately reveals notes of very ripe yellow fruits.
The vineyard measures 0.3 hectare with a plenting density of 10,000 vines per hectare.
100% Chardonnay of 30 years of age.
Ageing in oak barrels for 12 months (20% new).
Corrine Perchaud Chablis Premier Cru Vaucoupin is 100 percent Chardonnay.
The vineyard The plots are on the Vaucoupin Chichée village. They are very steep and facing south, their average age is 40 years. The total area is 1.45 hectares. The vines are planted on soil Kimmeridgian marl consisting clay and limestone with dominant clay. Winemaking After a slight settling, the juice is put in to achieve its fermentation tank alcoholic and malolactic. It follows a long aging on lees to bring a maximum of complexity of aromas and flavors. If necessary, we make a collage to bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration is the filtration method most friendly to wine.
The wine will be bottled 16 months after harvest. The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed for the vineyards. The dry and sunny weather of the second half of August brought the grapes to maturity. The harvest began on September 2 under clement skies.

The Corinne Perchaud Estate
Corinne Perchaud and her husband Jean-Pierre Grossot began working in the Domaine in 1980, but the estate was originally founded in 1920. They are the third generation of winemakers at this family estate, located in the village of Fleys, in the heart of the Chablis appellation.

They farm 18 hectares (44.5 acres) of vines: 13 A.O.C. Chablis and 5 hectares Premier Cru. The wines are only tank fermented, except the Fourneaux that gets 25% barrel fermented wine added into the final blend. Chavy-Chouet Saint-Aubin Premier Cru Les Murgers des Dents de Chien is made from 100 percent Chardonnay.
The wine is produced from 30 year-old vines overlooking the grand crus of Puligny-Montrachet. The vines grow on limestone soils covered with white pebble stones.
The altitude and the poor soil result in a fine, subtle wine with bright acidity. It is a feminine wine that evolves slowly with floral and spicy notes before taking on greater density and revealing its power.

"The 2018 Saint-Aubin Les Murgers des Dents de Chiens 1er Cru comes from a parcel at the top of the hill that tends to ripen last out of all the domaine’s holdings. It has a taut, fresh, Puligny-like bouquet of citrus fruit, hazelnut, flecks of almond and a hint of patisserie in the background. The palate is saline on the entry, very intense and broody, with crushed stone and dewy Granny Smith apples on the persistent finish. This is superb. - Neal Martin"

Chavy-Chouet Cremant de Bourgogne is made from 7 year old Chardonnay grapes in Puligny-Montrachet.
18 months in barrels and on laths
It is a pure and elegant wine with balanced structure and a very low dosage. Intense aromas of citrus fruits, apple, apricot and white peaches, fine bubbles. Apple and Asian pear flavors, a round mouthfeel and a clean finish.
Pairs well with Cassoulet, Ceviche, Crab Soufflé.

The wine spent 22 months on 75% new French oak with the remaining 25% second vintage French oak. Select barrels from the best forests of Taransaud, Boutes, Quintessance, and Vicard cooperages.
A blend of Cabernet Sauvignon (60%), Cabernet Franc (30%) and Merlot, this wine seems a little green out of the gate, with aromas of herbs, cocoa, vanilla, black licorice, woodspice and black fruit. Tamarack Cellars’ 2011 Ciel du Cheval Vineyard Reserve is an outstanding blend of 42% Cabernet Sauvignon, 29% Merlot and 29% Cabernet Franc that spent 22 months (each variety is kept separate until 12 months after the harvest) in 50% new and 50% once-used French oak. Classically styled, with lots of smoke tobacco, licorice and blackcurrant aromas and flavors, it has everything in the right place, in the right proportions, and is incredibly enjoyable to drink. Michelet Courtaullt Chablis AOC is made from 100% Chardonnay, machine harvested at full maturity ; pneumatic press; fermentation in temperature controlledstainless steel tanks for 8-10 days; M.L (2 months after the harvest); aging on the lees until February; racking; fining if necessary; cold stabilization; filtration right before bottling in April.
