The grapes are soft pressed and the free run juice is placed in stainless steel. There is a brief maceration period of 4 hours. Specially selected yeast are added and fermentation is controlled at 20° C. When the desired atmospheric pressure is reached (usually 1 month) the wine is bottled.

Review:
"Pale straw color. Bright, attractive aromas and flavors of roasted lemons and kiwis, green nectarine, nougat, and grass with a soft, vibrant, spritzy, dry-yet-fruity medium body and a tingling, complex, medium-length spiced clementine and delicate herbal honey finish with silky, crunchy, fruit tannins and no oak. "Shimmering garnet. Aromas of cherry, blueberry, candied flowers, tobacco and coconut pick up a smoky overtone with air. Smooth and fleshy on the palate, offering ripe red and blue fruit, mocha, cola and spicecake qualities that tighten up on the back half. Finishes long and supple with repeating spiciness, even tannins and a lingering suggestion of red berry preserves. Garnet-purple colour. Rich and expressive nose, fruity with notes of spices, smoke and vanilla. On the palate, this wine is supple, round, well balanced, with good acidity, a nice fruitiness and nice notes of leather and cedar. Long elegant finish.
Review:
The 2010 Batailley repeated its magnificent showing when poured at the chateau. It has a detailed bouquet of blackberry and cedar, quite backward and seemingly having advanced lite since | tasted in in April 2016. The palate remains full of tension and brimming with energy, delivering classic cedar and tobacco notes toward the persistent finish. Batailley can produce wines that live many decades, and this is clearly one of them. Tasted at the property. Drink 2020-2050

Long Shadows Pirouette Meritage is made from 58% Cabernet Sauvignon, 20% Merlot, 13% Malbec.
Philippe Melka, named one of the top nine winemakers in the world by Robert Parker, used small lots from Washington State's finest vineyards to craft this enticing red blend.
A variety of fermentation methods were used to enhance complexity and richness in this classic Bordeaux blend. Hand-harvested Cabernet was fermented in 400L French oak barrels that were gently rolled throughout fermentation to integrate the oak with refined, dark fruit flavors and give the wine its silky mouthfeel. All other varieties were fermented in traditional stainless steel tanks, with select lots enjoying longer skin contact to enhance the wine's dark color and mid-palate. The finished wine was aged 22 months in French oak barrels (75% new) before bottling unfiltered and unfined.
Review:
"The 2018 Pirouette checks in as 68% Cabernet Sauvignon, 22% Merlot, and 10% Petit Verdot aged 22 months in 85% new French oak. Deep purple-hued, it's a young, unevolved yet incredibly promising red with smoking good notes of ripe black and blue fruits as well as tobacco, graphite, and chocolate. Dense, full-bodied, and concentrated on the palate, it needs 3-5 years of bottle age but has the depth, balance, and class to evolve for 15-20 years or more."

The wine was aged 22 months in 85% new French oak prior to bottling. Aromatically beautiful, you are greeted to black rose petals and blackberry compote tones that mingle with wintergreen and chocolate covered espresso bean accents. Deep and concentrated in the mouth, with fantastic flavor density and tension, this finishes long with black fruits, loamy soils and minerals. Thorn Clarke Terra Barossa Shiraz is made from 100 percent Shiraz
Deep purple red. Aromas of ripe plums, cherries and earth with subtle notes of vanilla and cloves. The aromas follow through onto the palate with a fruit focus, subtle oak notes and soft, rounded tannins. The wine walks the line between medium and full bodied with a plush mouthfeel.
The grapes are crushed and de-stemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Cooling is used to ensure ferment temperatures remain in the 22-25 degree celcius range which will allow the fruit to display maximum fruit expression. Pressing then occurs approximately seven days after crushing and the wine is then put into predominately American oak to mature.
