The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Opulent textures expand across the palate with flavors of red fruit, blueberry, and chocolate-covered raspberry. This inaugural Cabernet is meticulously handcrafted by Joe Wagner, a fifth-generation Napa Valley winemaker with an unwavering passion for farming grapes and producing luxury wines. Joe embarked on his wine journey in 2001 at the age of nineteen. His enthusiasm and innate winemaking talent became evident swiftly when he established his acclaimed single vineyard Pinot Noir label, Belle Glos. Joe later introduced Napa Valley Quilt, which rapidly ascended to the ranks of top 10 luxury wines in just five vintages. THREADCOUNT serves as an extension of the Quilt winemaking style, adapted for more laid-back occasions.
WINEMAKER NOTES
We produce Cabernet from a myriad of California's most renowned regions to make this one-of-a-kind, highly versatile and prestigious varietal. After de-stemming the berries, the grapes are cryo-extracted, followed by a brief cold soak to soften the skins and finally led into a chilled fermentation to maximize extraction over a long period, often 60 days on skins. During fermentation, punch-downs and pump-over techniques were performed in a combination of closed and open-top stainless-steel fermenters in order to extract every bit of color and tannin mother nature gave us. The wines are aged in 50% new French oak for between 12-16 months. After the wine underwent malolactic fermentation, it was racked every 6 months before the final blend was complete. This Cabernet is intended to be a full-force expression on the palate, with abundant forward fruit, spice, and breadth —making it a perfect match for hearty meals or a quiet evening by the fire.
TASTING NOTES
COLOR: Dark ruby red. AROMA: Complex aromas of black cherry, wild raspberry, plum and toasty oak. PALATE: Rich and full-bodied, with dark berry fruit, toasty oak, smooth tannins, and a finish that lingers just long enough to make you want another sip. Beautifully rounded with an elegantly smooth finish accompanied by smooth tannins. Crafted for immediate enjoyment, but structured enough to age gracefully over a few years.
FOOD PAIRING: Pepper crusted pork chop and fingerling potatoes, lamb skewers or a pan seared chicken.
Tua Rita Giusto di Notri is made from 60% Cabernet Sauvignon, 30% Merlot and 10% Cabernet Franc.
The word "Giusto" refers to the name of the Patron Saint of Suvereto (the hilltop Tuscan town where Tua Rita is located) and "Notri" is the name of the winery's exact location.
Giusto di Notri is a Bordeaux-inspired blend of 60% Cabernet Sauvignon, 30% Merlot and 10% Cabernet Franc, selectively harvested in September. After a gentle pressing, the juice and skins macerate for a lengthy period of 25-30 days to add concentration and depth to the final wine. The wine is then aged for 18-20 months in French oak barrels and refined six months in bottle before release.
Deep purple in color, Giusto di Notri offers abundant aromas of blackberry, plum and currants with underpinnings of coriander, violet and a touch of vanilla. Full-bodied, with ripe, fine tannins, and a silky texture, this is a stunning wine with great aging potential.
Ideal for barbecued ribs, steaks, grilled meats and medium-aged cheeses.

Clif Lede Cabernet Sauvignon Stags Leap is made from 82% Cabernet Sauvignon, 8% Merlot, 7% Cabernet Franc, 3% Petit Verdot.
Our Stags Leap District and Calistoga estate vineyards build the foundation of this wine with support from valued grower sites located in Oakville, Rutherford, and Howell Mountain. Composed of small batches from a variety of blocks of varying age, this wine represents a diverse range of carefully selected rootstocks and clones. Yields are maintained at sparse levels, with a focus on canopy management and vine balance. The resulting blend boasts a remarkable depth and complexity that is quintessential Napa Valley.
Grapes were picked in the darkness of the early morning hours. The freshly-harvested fruit immediately underwent rigorous selection by our three-tiered sorting process, which included our cutting-edge optical sorter. Whole berries were gently delivered by gravity to tank using our crane system, minimizing disruption of berry integrity. Cold soaks lasted approximately seven days, and fermentations were managed via a combination of délestage, pumpovers, and punchdowns. Extended maceration ranging from four to five weeks fine-tuned our tannin profiles, allowing us to perfect mouth feel and wine complexity. The wine was aged in French oak barrels, 48% of which were new, for twenty-one months.
Elegantly soft and lithe the 2021 coaxes the taster with warm dark chocolate and luscious black cherry aromas. More graphite, chocolate cake, crushed mulberries, and iron notes leap from the glass. The entry is filled with dark fruit flavors of cassis, blackberry, and blue berries and they’re all tinged with floral notes of jasmine and violets. The 2021 Titus Family Estate Reserve embodies the depth, concentration, and beauty of our Ehlers Lane vineyard with grace and elegance. A core of Blueberry, black currant, mulberry and warm coffee are rounded out with hints of lilac and maduro wrapped cigar. Inkiness in the glass gives the wine depth and length with rich finely knit tannins melting to chocolate pot de crème intensity. Lastly, the 2021 Cabernet Sauvignon Family Estate Reserve is based on 87% Cabernet Sauvignon, 9.5% Petit Verdot, and the rest Malbec. It's a touch more focused and linear compared to the Imperatus, but I love the purity and precision in its cr me de cassis, espresso, classy oak, and spicy, floral aromatics. Medium to full-bodied on the palate, with fine tannins and a seamless, layered mouthfeel, as well as ripe tannins, it's going to benefit from 2-3 years in the cellar and evolve for 15 years with ease.

Long Shadows Chester Kidder is made from 60% Cabernet Sauvignon, 25% Syrah and 15% Petit Verdot
Allen Shoup named this wine in honor of his mother, Elizabeth Chester, and his grandmother, Maggie Kidder. He selected Long Shadows' director of winemaking and viticulture, Gilles Nicault, to craft this New World blend of Cabernet Sauvignon, Syrah and other classic Bordeaux varieties.
Select Cabernet Sauvignon lots underwent an extended maceration of 40 days to produce supple yet firm tannins that stand up to 30 months of barrel aging in tight-grained French oak barrels (85% new). The extra time in barrel helped to integrate the fruit, enhance the mid-palate with an extra layer of complexity, and provide an appealing earthiness to the finish.
Review:
The Cabernet Sauvignon-dominated 2017 Chester Kidder is another more closed, reserved wine that's loaded with potential. Cassis, toasted spices, violets, and leafy herb notes give way to a rich, full-bodied red that has ripe, velvety tannins, a rounded, mouth-filling texture, and one heck of a great finish. Give bottles 3-5 years if you can and it should be very long lived.

Mordoree Tavel Rose Reine des Bois is made from 60% Grenache, 15% Clairette, 10% Syrah, 10% Cinsault, 5% Bourboulenc (biodynamically farmed on a rocky/sandy plateau over clay).
This wine comes from a parcel planted on a pebbled soil covered with stones, whose geology is typical of the grands crus from the Rhone Valley (a base made of marine molasse from the Miocene period covered with an alpine diluvium from the Villafranchian period). 100 % destemming, cold maceration during 48 h., pneumatic pressing, fermentation at 18° C.
To pair with: roasted and or spicy chicken, duck, goose, fish soup, white meat, seafood and a lot of fishes (tuna, John Dorry, red mulet, etc...).Quite all Asian cuisine. Dishes with garlic, dishes with tomatoes.
In the glass the wine is deeply colored pink, almost orange/salmon. Complex aromas of white flowers, raspberry, pomegranate, strawberry, minerals, and citrus rise from the glass. Palate is full-bodied and voluptuous yet retains elegance while delivering great fruit intensity balanced by minerals and citrus. Light tannins appear mid-palate and carry through to the finish, giving it serious structure. Fresh, complex, and very long on the finish. Overall, powerful, textured, and food-driven — a “serious” Tavel that can age 1–5 years. Best enjoyed from June/July 2026 onward.
