Product Description
Mordoree Tavel Rose Reine des Bois is made from 60% Grenache, 15% Clairette, 10% Syrah, 10% Cinsault, 5% Bourboulenc (biodynamically farmed on a rocky/sandy plateau over clay).
This wine comes from a parcel planted on a pebbled soil covered with stones, whose geology is typical of the grands crus from the Rhone Valley (a base made of marine molasse from the Miocene period covered with an alpine diluvium from the Villafranchian period). 100 % destemming, cold maceration during 48 h., pneumatic pressing, fermentation at 18° C.
To pair with: roasted and or spicy chicken, duck, goose, fish soup, white meat, seafood and a lot of fishes (tuna, John Dorry, red mulet, etc...).Quite all Asian cuisine. Dishes with garlic, dishes with tomatoes.
In the glass the wine is deeply colored pink, almost orange/salmon. Complex aromas of white flowers, raspberry, pomegranate, strawberry, minerals, and citrus rise from the glass. Palate is full-bodied and voluptuous yet retains elegance while delivering great fruit intensity balanced by minerals and citrus. Light tannins appear mid-palate and carry through to the finish, giving it serious structure. Fresh, complex, and very long on the finish. Overall, powerful, textured, and food-driven — a “serious” Tavel that can age 1–5 years. Best enjoyed from June/July 2026 onward.

The 2025 Tavel La Reine des Bois is a stunning effort, displaying a more perfumed and ethereal profile than its sibling cuvée, La Dame Rousse. Sourced from old vines rooted in sandy soils and galets roulés on the plateau de Vallongue, it unfurls from the glass with aromas of red berries, pomegranate, grapefruit and rose petals mingled with a delicate minty note. Full-bodied, dense and concentrated, it's layered and seamless, built around a fleshy core of ripe fruit framed by a fine, precise tannic structure. It's a serious, vinous rosé with genuine aging potential.

This is arguably the top estate in our Portfolio. Domaine de la Mordoree (woodcock), located in the town of Tavel, in the Southern Rhone Valley, is the most consistent producer of top quality wine in my entire selection. In 1986, the brothers Christophe and Fabrice Delorme decided to dedicate themselves to their passion for wine. They started their own estate with the objective to produce the best wines in each appellation while preserving the environment
The Mordoree Vineyard
The vineyard consists of 55 hectares (135 acres), on 38 different parcels, which provide with a rich, wide range of soils and climates. The soil is a mix of clay, chalk and sand with pebble stones. The improvements at the Domaine have been incredible: new pneumatic presses, new stainless steel vats, new destemmer, new vinification and aging plant, and aging in oak barrels for the top wines. All the grapes are raised by culture raisonnée which is very close to organic viticulture (intervention in the vineyard only when necessary). The yield is reduced in the vineyard by ébourgeonnage (de budding in spring) and vendanges vertes in summer (green harvesting). Oak aging for the top wines in special barrels like “jupille” for 10 months. No expense is spared at this Domaine to achieve quality.

The palate is beautifully balanced, showing layers of black fruit and chocolate-covered blueberry with underlying herbal, cedar and mineral complexity. Domaine de La Mordoree Cotes du Rhone Rosé is produced from organically and biodynamically farmed vineyards. This dry, crisp, light, salmon-colored offering exhibits fruity aromas of strawberry and raspberry, citrus fruits and floral notes. It is round, fresh and well-balanced in the mouth, with a long finish.

A blend of 80% Grenache, 10% Mourvedre, and the rest equal parts Syrah and Vaccarese, its deeper ruby/purple hue is followed by a brilliant perfume of blackberries, black raspberries, ground pepper, violets, and new saddle leather. Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.
The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Clarified with egg whites and bottled by gravity with natural cork stoppers.

From the vineyard of the same name, the 2021 Cuesta De Las Liebres is a knockout, from a hillside vineyard of terraced vines. Aged 24 months in French oak, the first year in new, the second in second-use, all fine-grained, and bottled in June 2024, the tannins are well-integrated and dusty, nearly chalky. It’s truly a beautiful expression of variety, vintage, and site, reaching perfection in its fine-tuned, full-bodied layers of rich cassis, oak spice, and even a touch of garrigue. There’s lovely acidity throughout that brightens the palate, with beguiling notes of violet that never fade away. Luigi Baudana is a small, historic estate in Serralunga d'Alba, farmed since 2009 by the Vaira family of G.D. Vajra, who kept the Baudana name and its old vines — including a parcel planted in 1960 — intact. Serralunga's calcareous, magnesium-rich soils give Barolo its most structured, long-lived expression, and the balanced 2022 vintage produced perfumed, firmly tannined Nebbiolo built for the cellar.

From a prized MGA in Serralunga d’Alba, the Luigi Baudana 2022 Barolo Baudana shows an etched, chiseled personality with a prominent mineral vein that comes across as rusty nail, accented by light fruit tones of dried cherry and cassis alongside notes of pressed rose and violet on the bouquet. The Baudana cru sits on compact, iron-rich soils in Serralunga d’Alba, which often translate into the firm structure and mineral tension evident in the glass. I like the tension and forward drive of this cutting wine, which leaves the palate clean and satisfying.
