Winery: Ferme Blanche

The Ferme Blanche Estate
Founded in 1714 by the Paret family. Cassis is the first A.O.C. white wine of Provence, established in 1936. One might say Cassis is a viticulture outpost, only 410 acres in size. Cassis historically has been expensive for a number of reasons:

  • because of its size, it has not attracted the negociants and, therefore, has no price supports.

  • there has always been a strong local market, especially in the area of the French Riviera and the restaurants in Cassis. Consequently, the wine is never cheap, but always delicious.

"The largest estate in Cassis; the Paret family continues the traditional reputation of Cassis for fresh white wines." - Anthony Dias Blue's pocket guide to wine 2006

The Ferme Blanche Vineyard
80% of the land is on slopes. The soil is a chalk and clay mixed. The family produces 70% white wine.

Lambrusco Amabile Bruscus San Valentino Red is 100% Lambrusco from grapes grown in the province of Modena and Reggio Emilia.
Traditional vinification methods combined with modern technology to produce wines of guaranteed quality. After the grapes are pressed, they are transferred to fermentation tanks where the must is racked off in an average of 70 hours. The wine then completes its first rapid fermentation process and passes to the slower fermentation phase, during which time it is racked off several times to improve its clarity. The wine is placed in an autoclave at strictly controlled temperatures wherein it undergoes a second fermentation. This is known as the Charmat Method. The temperature is controlled for full development of the bouquet and for the lively and natural sparkle so characteristic of this wine.

This is an extremely ripe and bold style of Pinot Noir, showing kirsch, cola, root beer and anise on the nose. The powerful extraction extends to the sip as well, where black cherry, pie crust and vanilla bean flavors sit atop a thick mouthfeel, with a touch of prune on the finish.

The Grade Cellar Kingly Project Cabernet Sauvignon 2018

The Grade Cellar Kingly Project Cabernet Sauvignon is made from Napa Valley Cabernet Sauvignon.

"This is a noble expression of Cabernet Sauvignon"  in full regalia, with decadent aromas and a mouthfeel viscous and sleek. "This vintage of the Kingly Project Cabernet Sauvignon enters the scene"  -- Thomas Rivers Brown

Review:

The 2018 Cabernet Sauvignon Kingly Vineyard is endowed with tremendous richness and concentration. It emerges from the best spots within Block 5, which is a bit more protected from the elements. The 2018 is a bit closed today, but it has a lot of promise. Time in the glass brings out layers of inky dark fruit and the savory, minerally notes that are such signatures. This potent Calistoga Cabernet needs time to shine, but it is impressive today just the same.

Delicious with grilled red meat such as venison or lamb and most cheeses.

Review:

"The tannic, full-bodied 2018 Hermitage Les Dionnieres boasts ebullient aromas of blueberries and boysenberries, leavened by hints of peppery herbs, black tea and star anise. Expansive on the palate but structured and dusty, with a lingering finish of salted licorice and blackberry pastilles, it ideally needs a few years to settle down, but it should then drink well for more than a decade. - Joe Czerwinski"
