The Ferme Blanche Estate
Founded in 1714 by the Paret family. Cassis is the first A.O.C. white wine of Provence, established in 1936. One might say Cassis is a viticulture outpost, only 410 acres in size. Cassis historically has been expensive for a number of reasons:

because of its size, it has not attracted the negociants and, therefore, has no price supports.

there has always been a strong local market, especially in the area of the French Riviera and the restaurants in Cassis. Consequently, the wine is never cheap, but always delicious.

The Ferme Blanche Vineyard
80% of the land is on slopes. The soil is a chalk and clay mixed. The family produces 70% white wine.

Chateau Arnauds des Bordeaux Rouge is made from 100% Merlot.
The wine shows a deep red purple color and intense aromas of black fruits (blackcurrant, black cherry) with hints of liquorice. Very fruity and well-balanced. It is powerful and well structured in the mouth with round and silky tannins, ripe flavors of black fruits. Strong and a slightly spicy finish.
Grapes are coming from 30 year old vines planted on gravelly soils.
The land benefits from sun exposure, warmth and humidity that are strong assets for the vine culture.
The wine pairs well with game meat and beef on the grill.
Beliere Bugey-Cerdon is made from 95% Gamay, 5% Poulsard (a local grape from Jura).
Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation.
This is also wonderful served with chocolate cake!

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Bernardins Muscat de Beaumes de Venise Hommage is made from 75% Muscat petits grains blancs, 25% Muscat petits grains noirs.
The wine shows a golden hue with orangy highlights. Endearing nose of grape, orange peel and a honeyed accent. Mild at point of entry, spendid aromatic intensity, sultana, candied orange, rose petal and refined spice. Our Muscat de Beaumes de Venise has a great age ability.
For every vintage of our Muscat de Beaumes de Venise, the grapes are picked by hand. We press them straightaway to ferment the juice without skins. We don’t add any yeasts and keep the alcoholic fermentation in check by temperature control. Vin Doux Naturel winemaking involves stopping fermentation to preserve the grapes’ natural sweetness. During vinification, we watch the vats day and night and add 95% grape spirit just at the right moment. At this stage, the wine’s final balance is at stake. For the Hommage, we blend different vintages, aged in stain steel vats, to create the complexity of a long lasting wine.
The Hommage is a versatile companion to many deserts. Most expressive with dry biscuits and dry fruits, it retains all its character served with a fruit tart, puff paestry and chocolate or coffe desserts. To appreciate as well with duck breasts and figs. Served with a roquefort or a silton, it is marvellous. Simply as an aperitif with some dry fruit or grilled almonds. It's also a good compagnion for a classy cigars.

2019 was the first vintage under the new ownership, a very good year with mild weather and a quiet harvest when they picked the grapes with no stress. The 2019 Emilio Rojo is a blend of all the grapes in the organically and biodynamically farmed (but not certified) vineyard—Treixadura, Godello, Albariño, Torrontés, Loureira, Caíño Blanco, Lado, etc. The grapes were picked in two passes and fermented with indigenous yeasts in stainless steel followed by 14 months in tank. It's 12.5% alcohol and has a pH of 3.42 and 6.9 grams of tartaric acid per liter (acidity). This might be released in November 2022, after almost two years in bottle. It has a strong herbal strike on the nose, spicy and nuanced, elegant and harmonious. It has great balance and a brilliant texture with fine granularity and a long, tasty, almost salty finish. 2,190 bottles and 300 magnums produced. It was bottled in December 2020. They produced less as they moved to organic viticulture, and unfortunately, there will be even less wine from 2020.

Domaine de Beaurenard Chateauneuf-du-Pape Blanc is made from Clairette blanche & Rose, Grenache Blanc & Gris, Bourboulenc, Roussanne, Picpoul and Picardan.
Gold bright green color. Expressive nose with pear and stone fruits aromas (peach, apricot) with jasmine and roasted almonds notes. The mouth is smooth and fleshy like stone fruit we can smell, with a long a nice finish.

Bright golden yellow, silver reflections. Delicate herbal spices, a hint of chamomile and mandarin zest, pears and blossom honey are underneath. Juicy, elegant, white peach, delicate honeydew melon, mineral and harmonious, fine fruit sweetness, good ripening potential.

Continuum Red Blend 2017 MAGNUM is made from 64% Cabernet Sauvignon, 18% Cabernet Franc, 9% Petit Verdot, 9% Merlot
2017 was a vintage of extremes, with abundant rain in the winter months and record-breaking heat waves during the growing season. A testament in resiliency, the wine bears the hallmarks of the elevation and terroir at Sage Mountain Vineyard, showcasing exquisite vibrancy, many layers of flavor, ferrous minerality and fragrant wild herb notes. 2017 Continuum shows freshness, hinting at rose petal on the nose with cacao, black cherry and plum giving way to a plush, silky mid palate. Fine tannins of crushed stone and subtle undertones of tapenade are present through a beautifully persistent finish.

A blend of 64% Cabernet Sauvignon, 18% Cabernet Franc, 9% Petit Verdot and 9% Merlot, the deep garnet-purple 2017 Proprietary Red soars out of the glass with notions of baked blueberries, plum preserves and blackcurrant cordial, backed up by nuances of chocolate mint, wild sage, violets and pencil shavings, plus an earthy hint of Chinese five spice.
