The 2021 Domaine Joseph Voillot Volnay Les Champans Premier Cru is from the domain’s largest premier cru holding, 4.2 acres whose vines date from 1934, 1971, and 1985. Champans is down-slope in the premier cru band, and its wine typically has more fruit and power than other Voillot Volnays.

‘The 2021 Volnay Les Champans Ter Cru has much more brightness and delineation than the Fremiets this year, with red cherries, wild strawberries and ust a touch of iodine and sous-bois. This is nicely focused. The palate is medium-bodied with sappy red fruit, fine structure, pliant tannins and a harmonious finish. Not the most complex Champans encountered from this address, yet it has class.

The 2021 les Champans is also a simply stunning example of this fine premier cru vineyard. The beautifully elegant nose wafts from the glass in a blend of red and black plums, cherries, spit-roasted quail, a complex base of soil, woodsmoke, coffee bean and a deft touch of vanillin oak. On the palate the wine is pure, full-bodied and shows off superb depth at the core, great soil signature, ripe, fine-grained tannins and a long, nascently complex and very promising finish. This is a touch more reserved on the palate than the Fremiets and will take a bit longer to blossom, but it is going to be stellar. 2034-2085.

This venerable fifth-generation domaine has holdings in the top vineyards of both Volnay and Pommard. Joseph Voillot's son-in-law, Jean Pierre Charlot, is now the managing director; he worked closely with Joseph from 1980 until Joseph’s retirement in 1995.
For many years, Jean Pierre was a professor at the Lycée Viticole in Beaune, where he taught several of Burgundy’s rising stars. He’s a meticulous man, and what interests him is handling the challenging years when the vineyard work, triage at harvest, and careful cellar practices really pay off. It’s immediately evident when tasting through the domaine’s range that these are true “vins de terroir” (thus the judicious use of new oak), and each wine at every level reflects its origin. Anyone who wants to grasp the essence of Volnay and Pommard needs to look no further than Domaine Joseph Voillot.

We make a strict selection for this bottling, one of our flagship wines, so that only three acres of its nine total comprise this bottling; the balance forms the core of Highland Divide. This structure is buffered by a deep core of fruit extract, the product of the ripe grape skins themselves, and the essence of the wine. Each vintage can age for many years, and it gradually deepens into a woodsy, truffley, and enveloping wine with grand scale complexity while never relinquishing its inherent brightness.
The wine’s aromas and flavors are akin to black cherry, boysenberry, hibiscus, anise, moss, and juniper. The palate is simultaneously bright yet dark, with mineral drive, violet floral lift, and bay laurel freshness. Tannins and acidity fuse to lengthen these flavors, and the wine finishes with dried herbs and orange zest lift. Great aging potential. Drink between 2025 and 2034 and decant for an hour in its youth to hasten the development.

Medium to deep ruby-purple in color, the 2022 Pinot Noir Estate Vineyard comes barreling out with bold notes of fresh blackberries and black cherries opening out to suggestions of anise, garrigue, and lilacs. The medium-bodied palate reveals impactful black berry flavors with wonderfully spicy accents supported by grainy tannins and great tension, finishing long with a minerally lift. The 2021 Pinot Noir Goldrock Estate is a deep, saturated ruby. Fresh aromas of wet rocks, black raspberry, and pressed flowers lift from the glass, with a touch of spice. Medium to full-bodied, it has good structure, with fresh acidity and notes of crunchy red cherry and fresh pine, as well as fine tannins. Its perfume lasts right through to its clean, lifted finish. This is a lovely wine to drink 2025-2040.

At the bottom of the slope in the heart of Volnay, this plot lies on clay-sand soil.
Volnay is located on the steep sloping hill of Chaignot in the Côte de Beaune, where the southeast facing vines have been valued for centuries. These vineyards have been valued and exploited for centuries. Long before the French Revolution, the harvests of Volnay went to the Knights of Malta, the Abbeys of Saint-Andoche d’Autun and Maizières, or to the Dukes of Bourgogne and their successors, the Kings of France.
Volnay has a reputation for being among the most delicate, feminine of the Bourgogne wines. Limestone soil dominates the area, with deeper, gravelly soils at the foot of the slope, where Chavy Chouet’s vines are located.
This Volnay is full of character; broad and fruity. Smooth and elegant tannins make it a feminine wine, marked by aromas of black berries and leather.
The Domaine Joseph Voillot Volnay Les Fremiets Premier Cru is from a parcel that is up-slope, and the wine is very calcaire, or limestony; you literally taste the stone in this elegant, intensely perfumed wine. Pair with veal filet mignon, squab, beef steak and roast duckling.

Domaine Jean Grivot Nuits-Saint-Georges Premier Cru Aux Boudots is made from 100 percent Pinot Noir.
Domaine Jean Grivot is among the great names in Burgundian wine. Étienne Grivot and his wife Marielle took over from Étienne’s father Jean Grivot in 1987. The vineyards are densely planted and farmed organically “sans certification” while the aim in the cellar is for balance and clear expression of terroir.
Jean Grivot’s 38.3 acres spread across 22 appellations with vineyards in the communes of Vosne-Romanée, Vougeot, Chambolle-Musigny, and Nuits-Saint-Georges. Besides the three grand crus, there are 8 premier crus including the much lauded Les Beaux Monts and Suchots in Vosne-Romanée. The grapes are completely de-stemmed and fermentation is spontaneous.
Nuits-Saint-Georges Aux Boudots 1er cru lies in the “Zone Vosnoise” or northern end of Nuits-Saint-Georges just below Les Damodes. It borders Vosne-Romanée Aux Malconsorts 1er just to its north. Its position slightly lower on the slope with deep soil full of pebbles results in a richer and fuller wine.
The grapes are destemmed and maceration à froid usually lasts just a day or two. The alcoholic fermentation is spontaneous and malolactic fermentation occurs in barrel. Depending on the vintage, the proportion of new oak is around 30-60% for the premier crus.
The wine shows aromas and flavors of red berries, herbs, and purple flowers. The palate is rich with ripe fruit and medium weight with bright acidity and fine tannins. Aging in 30-60% new Burgundian pièce brings notes of vanilla, toast, and baking spices.
Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.

Aux Boudots, where Grivot has 0.85ha, is at the northern edge of Nuits, just over the border from Vosne-Romanée Malconsorts. They began to pick on the 3rd of September – Etienne specified that they are very particular that the tannins are ripe and do what they can to prolong the vegetative cycle. Still, the grapes were picked with an entirely correct pH of around 3.4.

The grapes for this Volnay Premier Cru Les Taillepieds are coming from the vineyard located in the middle of the coteau, halfway up the hill, with a very nice South sun exposure, allowing to reach an optimal ripeness every year.
The wine displays a nice ruby and garnet color. It boasts aromas of red and black fruit, fig, and violet.
It always has a lot of finesse and elegance, but also a great length to the finish, with juicy and round tannins.

This fine and sensual wine, with hints of blossom and roasted hazelnut, has a concentration that makes it discreet in its youth but powerful over time.

Jonive Chardonnay Russian River Valley is made from 100 percent Chardonnay.
2021 Jonive Russian River Estate Chardonnay: Harvested the night of September 20th with the two clones kept separate. The clone 95 was pressed into tank where it was chilled, settled and racked, then allowed to ferment naturally for 12 days when it then went to barrel. The primary and secondary fermentations lasted in barrel until April 20th, some seven months. The wine remained on its original lees until just prior to bottling. The clone 17/Robert Young chardonnay was pressed into tank and allowed to brown naturally before a natural fermentation occurred. This lasted for 15 days before going to barrel where it finished the last 12 days of primary fermentation and six weeks of secondary fermentation and it too rested on its original lees until just prior to bottling.
The wine has a typical straw color and complex aromas of lemongrass, nutmeg, Meyer lemon and a touch of passionfruit. It has an enveloping mouthfeel that is at once tart and linear as well as rich and expansive, a very unusual and beguiling combination of textures and mouthfeel. The browning of the clone 17 enables the wine to be rich, but at a lower alcohol (13.3%) and the clone 95 contributes beautifully fresh acidity. The pallet shows jasmine, honeydew melon, tarragon and lemongrass with a nice kiss of high-quality French oak. The extended lees contact gives the wine amazing length, energy and vitality.

The blend is beautiful and effusively aromatic. Lemon cream and white flowers mark the aromatic profile, and the palate, crafted with plenty of lees contact, shows a creamy texture of lemon and orange oils. Savoury notes of sorrel and lemongrass mark the lengthy finish. The new French oak kisses this wine just a touch with a note of Madagascar vanilla on the finish.
