Cazaux Vacqueyras Cuvee des Templiers is a  blend of 50% Syrah, 50% Grenache.

The Syrah vines are situated on the sandy, grey clay slopes of Vacqueyras near the estate. They are facing east west, so the sun warms the grapes early in the morning allowing a considerable synthesis of sugars. The sandy soil is poor giving a reduced yield. The resulting wine is very fruity with strong persistent aromas of red fruits, spices and violets brought by the Syrah. Intense black cherry, blackberry, blueberry and cherry flavors. Explosive fruit tannins give the sweet, creamy flavors structure and focus, bright and uplifting on the finish.

Enjoy this wine when young with grilled beef and bearnaise sauce, lamb and thyme. After 7-10 years excellent with game meats.

Cazaux Vacqueyras Rouge Cuvee Saint Roch 70% Grenache, 25% Syrah and 5% Mourvedre. 

Deep color. Intense and persistent red fruits, such as strawberry and black cherry. Expressive and delicate at the same time. The finish is long and the tannins are quite round and well balanced.

Grapes are hand picked, destemmed 100% but not crushed. About 20 days fermentation according to vintage. Aged in stainless steel tanks for 12 months and an additional 12 months in enamel coated concrete tank. No fining, light filtration.

Enjoy this wine with meat cooked in red wine sauce (such as Boeuf Bourguignon).

This wine is the result of extraordinary weather conditions. The first cuvée was produced in 1992 when violent storms and floods affected the region (especially Vaison la Romaine). The following days were radiant and accompanied by Mistral winds. We could then continue to harvest or more precisely harvest what remained of a rotten crop - but a noble rotten crop!
Following our first involuntary test of 1992, we wanted to reproduce this wine but we had to wait until 1995 to isolate the parcels that were capable of producing this noble rot. Unfortunately, the "noble" phenomenon does not occur every year despite late harvests (October 15).

The resulting wine is offers aromas of small red berries (cherries, raspberries), liquorice, fig, honey, fruit brandy and plum. It is elegant, supple and smooth on the palate with a firm, generous and suave structure. A beautiful length on spices and cherry.

This Grenache nectar marries will with dishes such as pan-fried foie gras in honey and fig preserve, leg of lamb with preserved fruits accompanied by local cereal "epautre" or other sweet and sour dishes.

"Not yet bottled, the 2020 Vacqueyras Grenat Noble should also be outstanding. Based mostly on Grenache, but with a small amount of Mourvèdre, it has a Provençal bouquet of red and black fruits, dried garrigue, toasted nuts, and spice. Aligoté is a grape variety that adapts very well to different types of soils. The color is a pale gold yellow; this wine is clear and young. This a gourmet wine and surprising by his energy, offering acid and fruit hints.

Paired with grilled fish, asparagus, white meat in sauce.

Cellier du Chateau de la Chaume Bourgogne Chardonnay is 100% Chardonnay.

Clear yellow color.
Aromas of white flowers, honeysuckle, leme tree and dried fruits.
The palate is rich and balanced, with good acidity and nice minerality.
Good length to the finish, pair with fish in creamy sauce, white meats and fine cheeses.

Chaume Bourgogne Rouge Pinot Noir 2022 is made from 100% Pinot Noir.Color: bright ruby red

Bouquet: blackcurrant, raspberry and hints of blackberry
Bouche / Palate: smooth attack, balanced, fine tannins and smooth finish

Butterflied lamb, char-grilled steak, venison. Dishes like cassoulet or duck with olives if they're more rustic. Roast goose.

Cellier du Chateau de la Chaume Petit Chablis is made from 100 percent Chablis.

Bouquet: White flowers, honeysuckle, linden tree and dried fruits.
Palate: Very pleasant, balanced with tension and nice minerality

Drink as an Aperitif or pair with fish, shellfish.

Ceretto Barbaresco DOCG is made from 100 percent Nebbiolo. 

If we could sum this wine up in a single word, we wouldn’t hesitate to define it as “classic”. As tradition suggests, this Barbaresco is the fruit of the assembly of several parcels of land, coming from some of our most beautiful vineyards. The idea is that of naturally obtaining balance by harmonizing different expressions, often contrasting ones. The result is a liquid expression of a terroir, tempting and typical, a synopsis of one Langa, that of Barbaresco, which moves in the glass, alternating between structure and elegance.

Very aromatic with orange blossom, roses and iron. Medium-bodied with very fine tannins. Refined and beautiful. Drink now or hold.

Nine different Cabernet clones joined forces for the 2022 Signature, a wine designated in what the winery offers only in extraordinary vintages. The final blend of 82% Cabernet Sauvignon, includes Petit Verdot, Malbec, and Merlot in small quantities. Luscious, as expected, a bath of puréed black cherries and milk chocolate match with teeth-coating plum skin tannins. Charles Heidsieck Vintage Brut is made from 57% Pinot Noir, 43% Chardonnay.

A beautiful golden robe offers glints of green accentuated by a delicate, dynamic effervescence. The initial nose introduces intense toasted and smoky notes along with ripe fruit. When swirled in the glass, the nose takes on a heartier dimension with touches of apricot and vineyard peaches. The aromatic concentration, due to a heat wave of several weeks, is reminiscent of the summer sun. The attack is taut and decisive. the creamy texture, the crisp fruitiness and spiced notes of cinnamon, licorice and pepper are the hallmark of the House style.

Review:

Aged for eight years on the lees before disgorgement, the Champagne is deliciously toasty with acidity and fine dryness.

Disgorged in January of 2023, the 2013 Champagne Millésime Brut was the last vintage from the cellar master for Heidsieck prior to Cyril Brun. The 2013 Champagne Millésime Brut is a bright straw yellow color and is based on the crus of Les Mesnil, Avize, Averney, and Aÿ. It’s fresh with aromas of wet stones, fresh quince, and fresh jasmine flowers. It has a chalky and focused texture, with ripeness to balance it out, and a long, graceful finish. At this stage, it feels more forward with 57% Pinot Noir and the rest Chardonnay. A more mineral-tinged expression, it has a lot of charm and the promise of longevity over the coming two decades. Drink 2024-2044. It will be interesting to see how the Pinot shows itself over time. 8 grams per liter dosage.
