Castelmaure Corbieres Vin-Gris (Rose) is made from 80% Grenache, 10% Carignan, 10% Cinsault.
Pale pink rose color, a classic gris de gris wine with salmon hues.

Castelmaure Grande Cuvee Corbieres Rouge is made from 50% Grenache (30 year old) and 50% Syrah (30 year old).. 

In the early 1990’s, Castelmaure began experimenting with a Prestige Cuvée of Corbières.  This wine has become known as “Grande Cuvée” and is made with the help of the winemaking team of Tardieu-Laurent.

Vinification: destemming, pneumatic press, end of fermentation at 25 degrees C; two racking; aging in tank then in 220 Liter Bordeaux barrels for 10-12 months. Egg fining, slight filtration..

Deep and intense color, powerful aromas of dark berry fruit, prune and coffee nuances, and a persistent finish.

Vineyards: planted on 50% Schist and 50% limestone soils.

Castelmaure Col des Vents Corbieres is made from 50% Carignan, 30% Grenache, 15% Syrah and 5% Cinsault.

"Col des Vents" means "Windy Mountain Pass" as it is quite windy and located at the foothills of the Pyrenees mountains. 
Originally, the label was a replicate of a Max Savy's painting. 

Brambly berry, cherry and raspberry, spices, black pepper ... all are present in this authentic French country wine. There are also some aromas of Garrigue (Rosemary, thyme and lavender) giving a minty, herbal notes, that are quite refreshing as well.

Beliere Bugey-Cerdon  is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation. 
This is also wonderful served with chocolate cake! 
8% ABV.

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Sainte Victoire Cotes de Provence Rose is made with 50% Grenache, 30% Syrah, 20% Cinsault

Bright, crisp, fruity rosé from Provence.

Sainte Victoire became its own AOC within the AOC Cotes de Provence in 2005. It is more demanding in term of yields, vinification and quality than the general AOC Cotes de Provence. Green harvest and in the cellar, using a sorting table in order to keep only the best grapes for the macerations.

A natural match to enjoy with salad, chicken, grilled salmon, just simply with an hamburger or on his own, colder, during a warmer summer day.

Chavy-Chouet Bourgogne Blanc Femelottes is made form 100 percent Chardonnay.

This is a charming, rich, focused and delightful white. Medium-bodied with a smooth texture, the wine has a fresh backbone of acidity, clean apple and citrus flavors, and an excellent balance. A most refreshing quaff and one that is great value. A delicate, expressive wine of exceptional quality.

Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.

Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.

The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.

Average age of the vines: 70 years old.

Density of planting: 10,000 vines per hectare.

Very little intervention. Less pigeage (punch down of the cap) but some remontage (pump-over)

Chavy-Chouet Meursault Clos des Corvees de Citeaux is 100 percent Chardonnay

Aged in new oak barrels (Allier).

The Clos des Corvees de Citeau is a .96 hectare vineyard located in Meursault. It was part of the appellation of l'Ormeau; an old property of the Cistercian monks who made a two meter wall around the vines. The tall walls create a micro-climate that encourages early growth and ripening. 

Thanks to its clay rich soil, the vineyard produces a rich, opulent and luscious wine that can be enjoyed young. This is a powerful and elegant white Burgundy; expressive, fresh and fruity with intense and strong flavors.

Domaine Chavy Chouet Meursault Les Narvaux is made from 100% Chardonnay from extremely steep vineyards. 

Les Narvaux in Meursault sits at the top of the slope on a steep, shallow, limestone plot.
TW Tasting notes: A lively and balanced wine with aromas of white-fleshed fruit. It offers hints of toasted almond on the nose and is very long on the palate. Mineral and energetic, it will only open up fully after a few years in the cellar. In the top 5 of my top Meursault picks.

Chavy Chouet Puligny Montrachet Les Enseigneres is 100 percent Chardonnay

This fine and sensual wine, with hints of blossom and roasted hazelnut, has a concentration that makes it discreet in its youth but powerful over time. Located right next to Puligny-Montrachet, the plot of Les Charmes was planted in 1943 on a sandy clay-limestone soil that produces small, concentrated berries for an intense wine that is perfect for ageing.

Chavy-Chouet Meursault Les Vireuils is made from 100 percent Chardonnay.

The "Les Vireuils" parcel is located on the top of the hill above Meursault, right below the forest. 
It is slightly cooler parcel with a limestone soils with a higher presence of rocks. The wines coming from this parcel are always sharp with a vibrant acidity and a lot of freshness. 
Tasting notes: Concentrated, powerful, and lively, Les Vireuils has all the classic characteristics of the Meursault appellation. Its sophistication, structure, and assured elegance reflect the character of the soil.

It is a great match with fish in creamy sauce, cheese, white meats.

Chavy-Chouet Bourgogne Blanc Les Saussots is made from 100 percent Chardonnay. A medium yellow straw color in the glass. On the nose, you will find layers aromas of cured lemon and hints of coconut and mango. On the palate, the juice has clean flavor, fresh acidity, and excellent balance. Vanilla notes follow through to the slightly creamy finish.
