Pedro Ximénez is a white wine grape variety that is also known by the terms “Pedro Gimenez” or “PX.” This variety is cultivated in South America and is said to have been introduced in the Canary Islands before being transported to Germany. It is said that the variety was introduced to Jerez by a soldier names Pedro Ximenez, who served in the Navy of King Charles the Fifth. The “Pedro Gimenez” variety is the most planted grape in Argentina and is used to craft fortified wines in the region of Jerez. This variety however, is different from the variety grown in Spain. The grape type is grown in Australia for Apera wines and can be blended to craft dessert wines. It is also used in Chile, Spain and is grown sparsely in California. The Pedro Ximénez variety features small round berries that are thin-skinned. Pedro Ximenez in Argentina produces fruit earlier in the year and contains leaves with three lobes. Wine made from the Pedro Ximenez grape typically pairs well with sweet desserts, such as rice pudding, caramel, an ice cream sundae, or Asian black sticky rice. The wines crafted typically use a process of drying out the grapes until they are almost raisin-like, and then taking the juice through other fermentation and aging processes. The taste of Pedro Ximenez features figs, dried fruits, or toffee.

More expressive and open-knit, the 2019 Cabernet Sauvignon Beckstoffer To Kalon Vineyard sports a similar ruby/purple to go with an incredible array of black raspberry, cassis, flowery incense, orange blossom, smoked tobacco, and exotic spice. As are all To Kolans, it's incredibly perfumed and complex aromatically, and it's one of those wines that changes every time you come back to the glass. Full-bodied on the palate, it offers beautiful richness and depth, a light, graceful mouthfeel, silky tannins, and a heavenly finish. It's another magical wine from this talented winemaker that readers will absolutely love.

VINIFICATION: Alcoholic fermentation with maceration of the skins (25-30 days) at a controlled temperature and spontaneous malolactic fermentation, both in truncated cone-shaped Slavonian oak vats.
REFINEMENT: In Slavonian oak barrels from 10 to 32 hl for approx. 34-38 months; followed by bottle refinement of at least 6 months.

Review:
A jeweled ruby color, the 2019 Brunello Di Montalcino is forward with licorice spice on the nose and opens to notes of fresh black cherries, pine, and toasted rosemary. Medium to full-bodied, it offers wonderful energy from the start, with balanced, angular structure, ripe tannins, crunchy fresh acidity, and a long finish. Avery well styled Brunello, it will be in its prime in the coming 10-15 years.
