Hallet Sauternes is made from 100% Sémillon.
With delicate aromas of honey, citrus, crystallized fruit and acacia, it makes a good match not only for desserts, but also for foie gras, roasted meats and blue cheeses.
It makes a delicious aperitif when served chilled.

The Gravas Estate
Chateau Gravas was founded in 1789 and has been in the Bernard family for five generations. It is currently owned by Michel and Florence Bernard.
The name "Gravas" comes from "graves", a gravelly soil that perfectly suits the production of Sauternes wines.
The estate is superbly located in Barsac between Chateau Coutet, Chateau Climens and Chateau Doisy-Daene. The total production is 2,000 cases/year.
The Gravas Vineyard
There are 8 hectares (19.8 acres) of vineyard for the production of Sauternes. The soil is a mix of clay, sand and limestone. The 60 year-old vines are harvested by hand: the grapes are picked in successive passes. The wine is aged in both French and American oak barrels. There are 5 villages in Sauternes: Preignac, Barsac, Fargues, Beaumes and Sauternes.
My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!
Paradigm Cabernet Sauvignon is made from 96% Cabernet Sauvignon, 3% Merlot , 1% Petit Verdot
Review:
"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Charles Smith Sixto Uncovered Chardonnay is made from 100 percent Chardonnay.
Not from here, this wine is otherworldly. Apricot, stone, pippin apple, sea breeze, and wildflowers mingle to create this compelling beauty. Sit down and take your time with this wine, to savor the incredible structure, with a long and lingering presence of toasted almonds, apple blossom, and flint. A wonderful journey!.
Review:
What a pretty nose. Lemon peel, fresh white flowers, lavender, crushed sage and wet stone. Medium-to full-bodied with carrying acidity. Extremely articulate and graceful on the palate with bright citrus and a dried-floral note. Impressive depth and length. Salty and tangy on the finish with vibrancy. Drink or hold.
