Product Description
Wine Production: 100% whole bunches undergo a natural yeast fermentation. The wine is then left on lees for a year, with just one handling into the blending tank before bottling. A small amount of Sulphur is added at this point. Wines are bottled without fining or filtration.
Tasting Notes: Spicy and stalky, it has the customary black and red berry notes of Cabernet with a perfumed freshness and medium body. Fine-grained tannins are tempered by the influence of some carbonic maceration in the ferment.

Timo Mayer grew up in Germany, where his family have been making wine for over 400 years. He moved to Australia and studied winemaking at Wagga Wagga, before working at De Bortoli and Gembrook in the Yarra Valley and establishing Mayer Wines in 2000. Having made his name with elegant, innovative Pinot Noir and Chardonnay, he’s recently started experimenting with varieties like Nebbiolo and Gamay, and continues to lead the charge for elegant, complex wines that reflect the Yarra Valley’s cool climate.
Location of Vineyard
Timo and his wife, Rhonda, planted a 2.4 hectare vineyard on a slope, which they named Bloody Hill ‘because it was bloody steep!’. Ideally located in the center of the Yarra Valley.

They believe that wines are made in the vineyard and therefore try to interfere with the natural winemaking process as little as possible. TASTING NOTES:
The 2022 Blue Eyed Boy is impressively deep in colour, displaying vibrant dark purple hues. Its aromatic profile is both intricate and inviting, with scents of blueberry, fresh plum, and subtle hints of mocha cream bursting from the glass. This wine is a balance of strength and finesse, delivering layers of lush, fresh berries and a touch of aniseed spice, culminating in a final note of creamy chocolate. With generous and dynamic layers, the wine allows the gentle tannins to craft a smooth and enduring finish, ensuring a truly memorable experience.
TECHNICAL NOTES:
The grapes were grown on the Coppermine Road, Gateway, Long Gully Road and Mollydooker Home vineyards in McLaren Vale, and Joppich vineyard in Langhorne Creek. Barrel fermented and matured in 100% American oak, using 54% new and 46% one year old barrels. The required Marquis Fruit Weight™ for the Family Series is 75% – 85%. The Actual Fruit Weight for 2022 Blue Eyed Boy is 79%.

Juicy and seamless, this is impressive for its generosity and plush texture, with kirsch, morello cherry and raspberry flavors at the core. Shows milk chocolate, vanilla crème anglaise, toasted cardamom, chicory and French press coffee notes on the finish. Drink now through 2037.

Hickinbotham Revivalist Merlot is made from 100 percent Merlot.
The Merlot for this red wine was sourced from vines planted in 1989 and 1976 at 220-245m altitude on a western facing aspect on the estate. During harvest, we hand-picked, de-stemmed, whole berry sorted, then 100% gently crushed. We then cold soaked, with native fermentation, and pumped over daily with a minimum of 21 days on skins. Basket pressed with light pressing included in free run, heavier pressings kept separate and not included, drained directly to barrel. The wine was racked and returned three times during maturation for 15 months, aged in fine-grain Bordeaux coopered barrels of which are approximately 25% new.

Deep ruby. Lush cherry-cola, blackberry and mocha qualities on the deeply perfumed nose, which is complemented by suggestions of candied rose and vanilla. In a round, generous style, offering sweet dark berry and fruitcake flavors that are supported by an undercurrent of juicy acidity. Pliant tannins frame an impressively long, sappy finish that strongly repeats the cherry and floral notes. 50% new French oak.

Apple notes carry through in the mouth over complex layers of crème caramel and butterscotch, all lifted with the bright energy of juicy acidity and savory oyster shell minerality. Green tint to the light yellow color. A very tight 2022 for this hot vintage, showing tension and focus. Medium- to full-bodied with super integrated tannins that show such length and intensity. It gives a beautiful nod to grand cru Burgundies of yesteryear. Love this. Drink or hold.

Technically from Green Valley of the Russian River Valley, the 2022 Chardonnay Ross Station Estate is a bright yellow green hue and comes from the Hudson Vineyard, which sits on pure Goldridge soils and includes some of the later ripening Calera clones. Aged 18 months in barrel, the wine has a Grand Cru-like richness and layered depth. In the glass, it shows off a wonderful bouquet of candied apple, honeysuckle, lemon oils, and almond. The palate is rounded, with a silky texture and great acidity that propels it through the palate to its long finish with notes of almond. This is an exceptional wine to drink over the next 10-12 years. 460 cases were produced. Drink: 2024-2036.

Chappellet's Pritchard Hill Cabernet Sauvignon has been, since the beginning of their winemaking career, the most sought after wine of their portfolio. The wine is truly a love letter to the winegrowing potential of Pritchard Hill. Dominus Estate is the Napa Valley property of Bordeaux producer Christian Moueix. The wine is bottled from the historic Napanook Vineyard. Located at the foothills of the Mayacamas, the vineyard was planted in 1838 and continues to evolve under the stewardship of Christian Moueix. The estate's Bordeaux varietals benefit from the Yountville microclimate where temperatures are moderated by cool breezes from the San Pablo Bay. The resulting wine is a uniquely refined expression of this special terroir. The 2023 vintage is seductive and deep with notes of cedar, oriental spices, wild berry, and cocoa, followed by a finely etched finish.

Avennia Arnaut Syrah is made of 100% Syrah
For our taste, no one grows finer Syrah in the state than Dick Boushey. We named this wine after the Provencal Troubadour Arnaut Daniel, who invented the Sestina poem form, thus creating a connection between our two flagship efforts.
"Deep, dark Syrah notes on the nose, with dark blackberry, blueberry reduction, grilled meat, crushed olive, black licorice, camphor, pen ink, and cracked black pepper. Boushey Vineyard is holy ground for Syrah in Washington. This is yet another wine that will inspire a vinous pilgrimage. Dried herb, smoked meat, iron, and dark fruit aromas lead to full-bodied, saturated, palate-staining dark fruit flavors. The intensity is off the charts – earthshaking, with wave upon wave of dark fruit flavors. There’s plenty of structure around it all. It sticks around for a long, slightly warm finish. Best enjoyed at a cool 62 degrees. Give it a long decant if drinking in the near term.

Our Touraine Sauvignon Blanc is crisp and refreshing, with rich, ripe lime and grapefruit aromas. Great elegance with a mineral style and, despite it all, a certain roundness.
Average age of the vines is 20 years. Part of this cuvee is made with 12 hours of skin maceration and another part from directly pressed grapes. The wine was lightly filtered before bottling to keep it stable.
Ideal for the aperitif, cooked fish such as smoked and grilled salmon, and of course with goat cheese.
