Winemaking Notes
Fruit was harvested in the cool of the night and gently pressed. The juice was fermented in French oak barrels (35% new, 65% aged). Various components underwent: a wild ferment, malolactic fermentation and extended lees contact to give the wine further complexity and flavour. Individual parcels were selected and blended, then filtered to produce this Chardonnay without compromising the purity of the fruit in both flavour and aroma.
Tasting Notes
Pale straw in colour. Concentrated citrus and white peach fruit flavours are complimented by delicate yeast and subtle spice aromas. The palate is clean and fresh with vibrant fruit flavours, mineral characters and a good lingering finish.

The Morambro Creek Estate
The property was founded in 1994 by the Bryson Family who first settled in the Padthaway region in 1955. In the early 1990's the Brysons decided to take the plunge and plant vines on the property. Initially their plan was to sell these grapes to the big wine producers but after a few vintages, the desire to see the fruits of their labour turned into their own wine, was just too great for them to resist. In 1998 they held onto a small selection of their fruits and sent it to the Cape Jaffa Winery to be made into wine. Morambro Creek was born, the name coming from the creek that meanders through the property.

The Morambro Creek Vineyards
They farm 420 acres, separated into two plots each of 210 acres, about 7-8 kilometers apart. The vines enjoy a cool Mediterranean climate with plentiful winter / spring rainfall and the limestone subsoil that provides the excellent drainage. The grapes varieties cultivated here are Chardonnay, Cabernet Sauvignon and Shiraz.
At Morambro Creek, their sole objective is to produce the best wines possible from their unique vineyard site. Planted on own rootstock and located in the Padthaway valley which is comprised of rich Terra Rosa soils their estate vineyard benefits from excellent sun exposure producing grapes of optimum flavor, color and tannin development. The warm summer days are moderated each evening by coastal winds that cool the vines and result in a longer ripening period. This extended period allows for the grape tannins and seed to fully ripen prior to being harvested, thus creating wines that are rich and supple on the palate.
Their pursuit of great wine can also be seen in the meticulous management of their vineyard. They strive for low crop yields and small grape bunches of intense flavor, and whilst they employ the latest technology in the vineyard to help them achieve vine balance and reduced vigor, they harvest when the fruit reaches full flavor development.

Winemaking Notes The grapes are handpicked in small baskets late August and are gently pressed as whole clusters. After a settling of 24 hours, the juice is inoculated with selected Champagne yeast and ferments in stainless steel tanks at low temperature. Once the fermentation is over, the wine ages on the fine lees until the spring of the following year. The blend is then put together and cold-stabilized prior to bottling. The bottling occurs in the spring when the cellar temperature is conducive to a second fermentation in the bottle. The now sparkling wine will age on the yeast for over 24 months. At disgorging, a small amount of dosage liquor is added in order to balance the natural acidity.

"This is what Padthaway Shiraz is all about with powerful, sweet flavours nicely tempered by some more savoury nuances – Shiraz with a kicker. Quite deeply coloured, it opens up with an array of red and black fruit pastille aromas topped by bay leaf and black pepper backed up by a decent dose of oak – French and American, adding vanilla bean and toasted coconut. It’s then quite chunky on the palate, delivering plenty in both the flavour and complexity department. The fruit is fleshy and generous while reasonable tannins are well integrated and provide a solid backbone to fruit and oak. Laird Chardonnay Cold Creek is 100% Chardonnay
Our Cold Creek Chardonnay is grown in the slightly cooler microclimate of the Sonoma side of the Los Carneros district to the west, where thick fog and cool marine winds protect its tender skins. Indigenous to the Burgundy region of France, Clones 15 and 95 at a 50:50 ratio exhibit an approachable style and luminous, golden color.
Tasting Notes: The appearance of golden straw leads you through an aromatic journey with notes of tropical fruits, sweet nectarine, melon, and vanilla. The 2021 Bella Union Napa Valley Cabernet possesses beautiful and intriguing aromas of dark plum, black cherry, hints of clove and barrel spice. The Mink Vineyard is located next door to the winery, in the Coombsville Viticultural Area of Napa Valley. Open to the same morning fogs and afternoon breezes that cool Carneros to the west, Coombsville is consistently one of the coolest pockets in Napa. Mink sits inside a small “bowl”, allowing cooler air to settle during the evenings, and making Mink’s mesoclimate a couple degrees cooler, even, than the surrounding hills. But the real secret to Mink’s explosive flavors, smooth, mouth-coating minerality, comes from the soil. Underneath is a layer of compressed volcanic ash, called tufa. The tufa drains the topsoil, storing moisture in its porous structure. The vines are able, with some work, to grow roots into the tufa layer, accessing moisture during the long, dry growing season.
The Mink Pinot Noir exhibits bright and refreshing notes of pomegranate, cherry, and fresh herbs. It gradually opens to deeper and darker berry fruit, blueberry and plum. This vintage is on the more structured side of the spectrum and will continue to evolve over time. Its enchanting mouthwatering minerality invite sip after sip together with bite after bite. A lively wine at release but it will continue to improve over the next 4 - 7 years and can age well beyond a decade as shown by its 20+ year track record.
