The Domaine Thierry Mortet Estate
The Domaine was officially created in 1992, when Thierry’s father retired and his estate was divided between his two sons. Thierry studied enology and viticulture in Beaune before joining his parents and brother and working at the Domaine
Thierry uses Burgundy barrels from Rousseau et Toutan, one third new each year. Annually, the estate bottles 1,100 cases. Thierry strives for fruit and finesse in his wines. Generally his top wines age well for 10-15 years.
The Domaine Thierry Mortet Vineyard
Thierry started in 1992 with a 4 hectare vineyard. It now measure 7 hectares (17.5 acres) and produces 85% red wine and 15% white wine. The vineyards spread over four villages: Gevrey-Chambertin, Chambolle-Musigny, Couchey and Daix (west of Dijon).
Thierry Mortet uses classic winemaking techniques: pre-fermentation maceration for 3 or 4 days, total fermentation time of 2 weeks. The grapes are harvested by hand, are sorted and are 100% de-stemmed. The result is expressive, full-bodied, generous, pure wines.
Starting with the 2010 vintage, the Estate is now certified Organic !

Florence Cholet Bourgogne Blanc Cote d'Or is made from 100 percent Chardonnay.
Full, well-balanced and round. Persistent, with beautiful minerality due to the wine terroir.
Filet of Sole as well as chicken with crawfish is creamy sauce (Poularde aux Ecrevisses).
Vineyards are located in the commune of Puligny Montrachet and Meursault.

The grapes for Bourgogne Blanc Chardonnay Vieilles Vignes are grown on a parcel located within the city of Meursault.
The wine displays a refreshing nose of lime, citrus fruits, flint, honey and a touch of dried fruit. The palate is full of flavors, with honeysuckle, citrus and some salinity with an excellent balance between acidity and roundness.
Pair with cheese, seafood, nems, Spanish tapas and apple tart.
Royet Bourgogne Rouge Hautes Cotes de Beaune is made from 100 percent Pinot Noir.

G.D. Vajra Barolo Ravera is made from 100 percent Nebbiolo.
The Barolo Ravera shows a striking balance of all tones. Red and dark fruits on the nose are interlaced with mineral hints and the iron tones which are such a signature of Ravera. The wine has brilliant drinkability, with a layered, ample mid palate and a racy finish.
Review:
Seamlessly stitched together, the G.D. Vajra 2018 Barolo Ravera reveals tight layering and smooth texture. Fruit comes from an amphitheater of vines with Tortoniana epoch sandstone clay that is typical of parts of Barolo and Novello. What stands out here is the mineral character of the wine. It frames a dark core of plum, dark cherry and soft spice.

Clear and deep ruby in color, lightening at the rim, with light staining in the glassand moderately thick tears. Medium intensity on the nose with rich red plum, blackberry jam, cocoa powder, and savory tea leaf. A vein of earthy minerality brings complexity to juicy fruit and autumn spice. Oak lends warm vanilla, caramel, and allspice. Dry and full-bodied with intense, youthful red fruit on the palate. Bing cherry and blackberry notes are layered with leather, espresso, and nutmeg, and the long finish is accented with well-integrated tannin and an element of acidity that keeps the wine from being heavy.
The bold fruit and spice character of this 2022 Reserve Cabernet Sauvignon would pair perfectly with balsamic braised beef with creamy parmesan polenta, or an earthy, complex dish such as eggplant moussaka.
Review:
Here is a big, powerful Cabernet that pushes the envelope. The 2022 vintage was another drought year, and Paso Robles experienced late season heat waves. Made from 100% Cabernet that was aged for 21 months in French oak, 50% of it new, it clocks in at 15.5 % alcohol. However, when tasted blind, it offers an aroma of ultra-ripe black berries, chocolate, and spices that by the final swirl is absolutely gorgeous. Full-bodied with very juicy black fruit flavors and spice backed up by toasty oak, it all holds together seamlessly thanks to integrated tannins. The finish ends on a light toasty oak note. The real challenge is to pair it with a comparably robust main course.
